Magnum Régnié La Haute Ronze Red 2017
La Haute Ronze is one of two plots cultivated by Nicolas in the Régnié appellation; it is considered of very high quality, with deep clay soils that produce full-bodied wines. This 100% Gamay is obtained through semi-carbonic maceration and aged for approximately twenty months. It offers notes of leather, earth, and Mediterranean herbs (oregano, rosemary), through its red fruits.

The Carignans of this Côtes-Catalanes are 125 years old and grow at an altitude of 300 meters in a clay-limestone valley, surrounded by wild fig trees, cedars, olive trees, apricot trees, and buzzing beehives, all protected by a pine forest. Fermentation lasts two weeks in concrete vats, with whole bunches crushed by foot, followed by aging in vats. Cherry and spice, supple and elegant tannins: full-bodied and irresistible.

This wine is a blend of 40% Sauvignon Blanc (from twenty-seven-year-old vines) and 60% Chasan (a cross of Listan and Chardonnay; from forty-two-year-old vines) from sandy limestone soils near Carcassonne. The Sauvignon Blanc is directly pressed, and the Chasan macerates in the whole-bunch must for seventy days. It is aged for two years in vats. Notes of exotic fruits, dried banana, and curry: a rich aromatic palette perfect for blue cheeses, aged Comté, and Southeast Asian cuisine. Aging potential: twenty years.

Pierre-Joseph Blanc 2017, La Sorga
This négociant wine, a blend of Grenache Blanc and Sauvignon Blanc, comes from vines grown on Villafranchian limestone soils in Pézenas, in the Hérault Valley. The Grenache Blanc is pressed directly, and the whole bunches of Sauvignon Blanc are left to macerate in the must for forty days. Aging in vats lasts eleven months, giving it notes of pear, boxwood, and yellow peach. Its aging potential is ten years.
Rhum blanc 55° - 70cl
A unique taste, a true tasting white rum. The nose is powerful and extraordinarily fragrant. On the palate, it has great length with notes of white fruits. This white agricultural rum is made from a blend of blue and red cane juice. With little stirring, it retains the vegetal notes of its terroir of origin. A seven-month aging period in barrels gives it its finesse. Perfect for an exceptional ti-punch (lime, a hint of brown sugar, and an ice cube), it nevertheless deserves to be enjoyed on its own and without artifice.

The Longueteau distillery, located in Capesterre-Belle-Eau (Guadeloupe), is the oldest distillery on the island still in operation. It has the distinction of being entirely self-sufficient in sugar cane production, which it uses to obtain its magnificent terroir agricultural rums. Agricultural rum, we should point out, is made from pure sugar cane juice, unlike many other Caribbean rums, which are produced from cane molasses. It is a specialty of the French Antilles. The estate is currently in the hands of François Longueteau, a distiller since 1979. Production is, as it was originally, artisanal and traditional, but the sugarcane terroirs are developed using plot-by-plot methods—this is Longueteau's unique feature, the first distillery on the island to adopt this approach. Two varieties of sugarcane, blue cane and red cane, are cultivated, as well as fruits from the Guadeloupe region. Longueteau rums and the resulting preparations (punches, shrubberies, etc.) are fine, aromatic, deep, and fragrant.

The macabeus grapes that make up this vintage are forty years old and grow in a complex mixture of clay, silica, mica-rich schist, quartz, and gneiss. Michaël Georget pollinates the vineyard by introducing bees. The grapes are pressed directly, and aged for one year in old 400-liter barrels.

Made from an old Gaillac black grape variety reintroduced by the Plageoles family, this eau-de-vie is aromatic, full-bodied, and spicy. Very long-lasting and comforting, it is the most "vinous" of the eaux-de-vie from the Cazottes distillery. Try it as a grog with citrus fruits, or to macerate cherries and other red fruits or fresh grapes. If you need to use a grape eau-de-vie in cocktails, look no further. Alcohol content: 45%.
