Cartoixá vermell is another name for xarel·lo rosado, a traditional Catalan rosé grape variety brought up to date by Massimo and Antonella. This natural sparkling wine with its amber salmon color is obtained using the ancestral method, that is, refermentation in bottles and aging on lees for ten months. The harvest is done by hand and pressed directly; the must ferments in stainless steel vats with indigenous yeasts and temperature control between 15 and 18 °C. Dry and fruity, fragrant and aromatic, it evokes ripe white fruits and white flowers on the nose. Very lively and fresh on the palate. Serve it as an aperitif; it can then accompany you until dessert.

This plot was planted in 1925 and produces a deep, tannic wine, somewhat reminiscent of Nebbiolo, with a slightly less intense color than the estate's other reds.

Frank Cornelissen's grand cru is, as expected, a wine for aging. It reveals the remarkable depth of the Nerello Mascalese grape variety, from the Barbabecchi plot, planted with ungrafted, pre-phylloxera vines, more than a hundred years old, at an altitude of 910 meters on the slopes of Etna. Skin maceration takes place for sixty days on destemmed and lightly crushed grapes. No fining, no sulfites, light filtration before bottling. With a very dense texture, this red is more mineral than fruity (the fruit notes are candied: blackberry, prune, all roundness and melted tannins). Its depth and power are balanced by great freshness. Possibility of traces of volatile acidity, quickly disappearing with decanting.

Formerly called Contadino, Susucaru Red combines the characteristics of its former avatar: it is the entry-level red of Azienda Frank Cornelissen and the most accessible of its vintages. It is composed of Nerello Mascalese and a few other varieties grown on the estate: Malvasia, Moscadella, Catarratto. The grapes are destemmed, lightly crushed, and undergo approximately sixty days of skin maceration. It is the aromatic expression of Etna, a vintage produced and blended in the traditional way, mixing plots and grape varieties. The result is a wine with a rich and voluptuous nose, elegant and fluid, endowed with structure and a strong personality. Aging potential: ten years. Serving temperature: 14-15 °C. Open twenty minutes before tasting. Pairs with all summer dishes, from marinated red peppers to grilled lamb and antipasti.
