This Grenache comes from a plot planted between 1,300 and 1,368 meters above sea level on slate and schist soils. The destemmed harvest macerates in stainless steel vats. Alcoholic fermentation occurs spontaneously using indigenous yeasts present in the environment, without any additives. The fermentation temperature is not modified: the coolness of autumn nights is sufficient (the cellar is also at an altitude of 1,280 meters). Malolactic fermentation occurs naturally in barrels during aging in the underground cellar.

This generous Italian red is made from a blend composed mainly of Grechetto (a local variety related to Sangiovese), with the secondary grape varieties being Cannaiolo, Colorino, Ciliegiolo, and Vaiano, indigenous varieties planted in the vineyards on the volcanic soils of the Le Coste estate. Fermentation lasts about a month in French oak vats and chestnut vats. Rosso is then aged in Slovenian oak barrels. At first glance, a beautiful ruby color, a crisp and juicy palate, where we find notes of red and black fruits.

It rests for three months in vats on fine lees before bottling. This wine is crisp and aromatic, with a nose of ripe white fruits, melon, and wildflowers. Agile on the palate, fresh and straightforward, lemony and slightly saline, with a long finish tinged with a delicate bitterness typical of the estate. It will pair wonderfully with all seafood, especially bouillabaisses, bourrides, and fish soups. It will also accompany sushi, sashimi, ceviche, fresh oysters...

A rare and surprising wine, a rich, atypical and voluptuous blend, a superb natural sparkling wine for the table, an aperitif or a party. Full of fruit, freshness and tenderness, even if the years have given it some oxidative notes that bring spices to the whole. Drink chilled (15 °C) and pour directly into the glass where it will open up. A Bordeaux or tulip glass would be preferable to a flute, this wine needs movement.

This intense white seduces the eye with a slightly amber color, and the nose slides towards lovely citrus notes. On the palate, it feels like an orchard, between peach, quince, and apricot. Very light, it can be drunk alone or with a good accompaniment. With a venerable Sunday white meat, for example.

Azienda Frank Cornelissen's entry-level red is made from Nerello Mascalese and a few other varieties grown on the estate: Malvasia, Moscadella, Catarratto. The grapes are destemmed, lightly crushed, and undergo approximately sixty days of skin maceration. It is the aromatic expression of Etna, a vintage produced and blended in the traditional way, mixing plots and grape varieties. The result is a wine with a rich and voluptuous nose, elegant and fluid, with structure and a strong personality. Aging potential: ten years. Serving temperature: 14-15°C. La Familia is a blend of Cabernet Sauvignon, Cabernet Franc, and Syrah, one of the 800 vines planted by the Carmenet family between 1991 and 1998 by the winemakers at an altitude of 1,300 meters on schist and clay soils. The destemmed harvest macerates in stainless steel vats with manual punching. Aging in old barrels lasts approximately twenty-four months.
