Cloé Rosé 2017
Abbazia San Giorgio
Cloé is a Nerello Mascalese from the Sicilian estate Abbazia San Giorgio, planted on terraces. The grapes grow on volcanic soils poor in organic matter. Harvested at the end of September, they undergo a brief maceration, then are aged in stainless steel vats and chestnut barrels for 6 months. This is a rosé with character, boasting great freshness in addition to its floral aromas.

This single-variety Ciliegiolo comes from vines planted at an altitude of 450 meters on a west-facing plot of volcanic soil. The harvest is destemmed and macerated for approximately three weeks, with daily pumping over or punching down as needed. Aging is six months in chestnut barrels.

Pinot Noir Red 2021
Domaine Einhart
The deep, purplish color of this Pinot Noir from Domaine Einhart evokes black cherry: this is a velvety, ripe red, 100% Pinot Noir from the estate, with an intense, fragrant, and gently fruity aroma. The first nose is enhanced by aromas of black fruits (blackberry, blackcurrant, black cherry) with a hint of freshness blended into a light vanilla woodiness. The second nose is more open, with aromas of blood orange, bitter almond, and kirsch. On the palate, the small fruits are still present, supported by present but well-melted tannins, and lead to a velvety finish resting on a lovely freshness. Plenty of persistence and length. The Pinot Noirs from which it is made, aged around thirty years, grow on the muschelkalk (shell limestone) terroirs of Dittelsberg-Albermohn and are harvested by hand, then destemmed. Maceration, on indigenous yeasts, takes between ten and twelve days. Aging for one year on fine lees, in demi-muids, precedes bottling without filtration. From the vineyard to the cellar, this wine was made without any chemical additives or added sulfites. Decanting is recommended so that it fully expresses all its finesse and grace. The magnum format is only good for it, accentuating its velvety texture and depth.

Located in the northern part of the Alsatian vineyard, horizontally above Strasbourg, the Einhart estate is a ten-hectare family property whose vines are located on the hillsides that rise between the Alsace plain and the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, i.e. shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone). Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is a co-founder, Nicolas devotes his winemaking to protecting the land and biodiversity, making wine without inputs, refusing harmful phytosanitary products, and maintaining ecological refuge areas. His estate has been certified organic since 2011. Like Jean-Marc Dreyer [link], he is firmly focused on skin maceration and produces white maceration wines (orange wines) in addition to a Pinot Noir red. Entirely manual harvests, destemming of the grapes, light punching down, and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees, and the absence of filtration before bottling. The wines are pure grapes, lively, powerful, and tonic, and transcribe the minerality of the very beautiful terroirs of the Vosges foothills.

Jean-Yves Peron
In Savoie, not far from Lake Annecy, Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both with a focus on nature. His Mondeuse reds are magnificent, as are his whites made from old local grape varieties—Jacquère, Altesse, Bergeron, and Persan. He lives in Chevaline, but his current vineyard, three hectares of which have been biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further downstream in the Isère Valley.
Initially destined for a career in biochemistry, Jean-Yves quickly fell in love with the vine and trained as an oenologist in Bordeaux. He learned his trade as a winemaker with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. His trading business, which he began in 2011, allows him to buy the harvest from organic winemakers close to home, but also in Northern Italy: for him, it is a new dimension given to his work as a winemaker, allowing him to multiply the terroirs and to deepen his experiences in winemaking and aging. Jean-Yves Péron's winemaking follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The surrounding vegetation is very rich: it protects the vines and helps to strengthen them. The soils are grassed, mown and reworked with a pickaxe and winch. The harvest is entirely manual. Once vatted in whole bunches, the grapes, both red and white, undergo a semi-carbonic maceration that allows fresh fruit aromas to be extracted. This maceration time varies between five days and nine weeks depending on the vintage. The day before or two days before pressing, Jean-Yves performs foot-treading directly in the vat. After this fermentation, the musts are sent to barrels for aging on lees for twelve months in five hundred liter barrels of two or three wines (to limit the oaky sensation), followed by blending and resting in vats. No sulfites are added, or as little as possible, and the wines are neither fined nor filtered. Savoyard wine has long suffered from a somewhat flimsy image, not taken seriously enough. Yet, what treasures its soils with their varied pedology and its many ancient grape varieties produce! Jean-Yves Péron embodies the rebirth of this beautiful vineyard.
This 100% Mondeuse is the result of a blend of two plots: Le Pas de l’Ours and Côte Pelée. Tender and balanced with a peppery note, it is the result of two weeks of carbonic maceration before a year of barrel aging. It pairs very well with cured meats and mountain cuisine.

Canoupe Blanc 2022,
Danis dans la vigne
Canoupe is a white wine from Cahors made from organic and natural Colombard grapes, produced in Vin de France by Danis Bessières of Danis dans la vigne. It is a beautiful white from the Southwest of France with very advanced maturity. It is part of the "Esprit du lieu" range of single-plot cuvées vinified by Danis. Its name expresses the vigor and vitality of the estate's Colombards: "plant spears that reach for the sky." At the beginning of summer, the vine rises into vigorous foliage, like a canopy, hence the name Canoupe.
Vinification
Canoupe is not a white wine like the others. This single-plot cuvée was vinified with particular attention to the ripeness of the grapes, which is very advanced. Botrytis plays an important role, particularly in the color, which is sustained despite the direct pressing. A little controlled oxidation is also present.
Tasting
The style of Canoupe is intermediate, between freshness and maturity, with ripe aromas, candied citrus fruits, honeysuckle, spices: cardamom, cinnamon, Christmas spices. The color tends towards orange and the aromas are similar. Candied, jammy, with a touch of oxidation. A complex and powerful wine that is best reserved for the table and gastronomy rather than as an aperitif.

Under the name Danis dans la vigne, Danis Bessières vinifies organic grapes from the family estate, the Domaine de l'Antenet, which was the first organic vineyard in Cahors in the early 1980s.
Organic and natural since 1983
Danis respects the principles established in the vineyard and cellar by his grandfather and then his father: making wines without additives, organic and natural, from the grape varieties of the terroir while respecting the environment. It was in 1983 that his grandfather obtained the organic label Lemaire-Boucher, followed by Nature & Progrès and then the organic labels AB and Eurofeuille. Danis Bessières continues in this vein.
Malbec, but not only
Malbec reigns supreme in the Cadurcian region, but Danis also uses Cabernets, Jurançon Noir, Merlot, and recently created grape varieties, as well as Cabernet Sauvignon, Cabernet Franc, and Colombard as single-varietals. These experiments allow him to moderate the density and opacity of the main grape variety.
Terre des Anonymes Blanc 2015, Domaine La Sorga
This 100% Colombard white wine comes from the basalt sandy soils of the Hérault Valley, in Adissan. The grapes are vinified in whole bunches for forty-five days, then macerated for eleven months in vats. Its mango notes give it a real affinity with Asian cuisine and seafood such as scallops, cuttlefish, or squid. Its aging potential is ten years.

From one of the finest climates in Volnay, this premier cru red wine is opulent, balanced, and dense. It offers abundant notes of red and black fruits, including a full, ripe, and flavorful cherry. This is a voluptuous wine to be enjoyed at special occasions. Its velvety structure is fine and delicate, soaring into notes of airy lightness. The Lurets plot, in the Volnay AOC, produced this Pinot Noir. Its steep, west-southeast-facing terroir is located between 230 and 280 meters above sea level. The soils are primarily composed of pink limestone supported by white schist pebbles. The grapes macerate in whole bunches for two weeks in open wooden fermenters. The aging is about a year in old and new oak barrels.
