The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular plowing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Red or white, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and coveted wines, which sometimes need to be waited for.
This robust great wine for laying down, which can be waited for some time before drinking and which will age magnificently, comes from vines around forty years old. On the nose, strawberry, candied fruit, spices. The twelve-month aging is done mainly in barrels, a third of which are new oak.

This pure Nerello Mascalese comes from a partially ungrafted vine, approximately seventy years old, on the Campo Re plot, in the far west of the valley, at an altitude of 735 meters. The soil is particularly deep, and ripeness is difficult to achieve during wet years. The grapes are destemmed and lightly crushed; skin-contact fermentation lasts about sixty days. No fining, filtration before bottling. The wines are deep, elegant, and tannic. Compared to other vintages from this estate, they are somewhat similar to Nebbiolo.

This Munjebel is a bouquet of wild red fruits, pure classic Nerello Mascalese, rich and aromatic, carrying all the crunch of ripe fruit, with a Pinot Noir edge and a brilliant translucent color. It comes from several plots, including those from which the azienda's greatest vintages come (Zottorinoto, Feudo di Mezzo-Porcaria, Pontale Palino), and from vines specially dedicated to this vintage: Rampante, Piano Daini, and Crasà. Among Frank Cornelissen's vintages, it best represents the typicality of the northern valley of Etna.

This magnificent organic and natural magnum red Burgundy wine is produced by Frédéric Cossard. Made entirely from Pinot Noir (a Pinot Fin variety), it is produced in the Morey-Saint-Denis appellation and comes from the "Les Champs de la Vigne" vineyard.
Vinification
The vines grow on a clay-limestone plot and are around sixty years old. They are made from Pinot Fin grapes, an ancient strain of Pinot Noir that is increasingly rare in Burgundy. The harvest macerates in whole bunches and the wine is aged in barrels for at least a year.
Tasting
Typical of the Morey-Saint-Denis climate, this Champs de la Vigne is a powerful and complex wine, offering notes of violet and red fruits. It offers opulent fruit and remarkable minerality. Great elegance and finesse, silky and satiny with a lovely earthy and mineral nuance. The magnum format accentuates its velvety texture and depth. It will be a pleasure to pair it with duck breast, grilled meats, beef, charcuterie and cured meats.

It is a complex and delicate red wine with aromas of raspberry, candied strawberry, and violet, with a hint of undergrowth, licorice, and cocoa. A floral finish reminiscent of red rose. Supple and deep, with very fine tannins, this is an all-Pinot Noir from the Chambolle-Musigny Appellation d'Origine Contrôlée. The plot called Les Herbues is located between 250 and 300 meters above sea level.
