Vinification
Les Vignes Blanches is a climat in the Mercurey appellation with clay-limestone soil. Frédéric Cossard vinified and aged it in qvevri (Georgian-style buried jars), which gives it a patina, rounds it out, and accentuates its velvety texture and depth. It is aged for one year.
Tasting
Fresh, wild, and intense, this Mercurey "Les Vignes Blanches" is a pleasure to drink with abandon. Morello cherries, black fruits, cherry, raspberry, complexity on the nose, giving way to floral then mineral and roasted notes. On the palate, there is plenty of fruit, sap, breadth, and density, with silky, melted tannins of great finesse, completely devoid of harshness. Long, fruity, and distinguished finish. Between viticulture and trade
Frédéric Cossard created the domaine de Chassorney in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own trading house and buys organic grapes from the greatest climates of Burgundy, but also from Jura, Languedoc and elsewhere.
A solid commitment to nature
At Frédéric Cossard, the work of the soil and the vines is done naturally: plowing by horse, biodynamics, no chemical fertilizers or weedkillers. Frédéric Cossard poursuit son exploration d’une Bourgogne affranchie des dogmes, en conjuguant naturel, précision et poésie. Installé depuis plus de vingt ans, il vinifie sans intrants, sans levures de laboratoire, et sans aucune chimie, aussi bien dans les vignes que dans son chai. Son travail ne revendique aucun label, mais s’impose par sa cohérence et son intégrité.
Un Morey-Saint-Denis de pure expression
La cuvée Les Champs de la Vigne provient de parcelles situées sur les sols argilo-calcaires typiques du village de Morey-Saint-Denis. Le Pinot Noir, ici en sélection de pinot fin, révèle un profil plus élancé et ciselé, marqué par une belle énergie. Le choix de l’amphore pour l’élevage, durant un an, libère toute la pureté aromatique du cépage et du terroir, sans maquillage boisé.
Macération douce, texture vibrante
Les raisins sont encuvés en grappes entières pour une macération de trois semaines. Ce procédé doux permet d’extraire les arômes et la structure sans brutalité. Frédéric Cossard est une figure incontournable du vin naturel en Bourgogne. Depuis ses débuts, il repousse les limites de l’expression bourguignonne en s’affranchissant des codes classiques. À la fois vigneron, éleveur de vins et fin observateur du vivant, il travaille sans label, mais avec une rigueur absolue : aucune chimie de synthèse, ni dans les vignes ni au chai, et une vinification sans intrant, en levures indigènes bien sûr.
Un Nuits-Saint-Georges élevé dans la terre
Cette cuvée provient du climat Les Damodes, sur les hauteurs nord de Nuits-Saint-Georges, à la frontière de Vosne-Romanée. Le Pinot Noir y trouve un terrain d’expression unique, sur sols argilo-calcaires, donnant des vins à la fois structurés et élégants. Ici, Frédéric choisit l’amphore comme contenant d’élevage : un an dans la porosité naturelle de la terre cuite, pour un vin d’une pureté et d’une franchise saisissantes.
Vinification vivante, matière vibrante
Les grappes entières ont macéré pendant trois semaines, sans remontage mécanique, afin de conserver toute la finesse aromatique du fruit. Le vin, non collé, non filtré, présente une robe brillante, un nez floral et épicé, avec une touche de rose séchée, et une bouche soyeuse, tendue par une trame fraîche et précise. Les tanins sont fondus, la finale saline et persistante.
À table : fraîcheur et caractère
Ce Nuits-Saint-Georges nature se mariera à merveille avec une cuisine de caractère : viandes blanches, plats épicés, ou un veau mijoté. Il est conseillé de le servir à 14–16°C, sans carafage, pour préserver sa tension naturelle. Un vin de garde, assurément, qu’on pourra oublier une décennie en cave sans crainte.

Gevrey-Chambertin, version originelle
Les Genevrières, climat peu médiatisé du finage de Gevrey-Chambertin, livre ici une lecture inédite du Pinot Noir. Sur ces sols argilo-calcaires, les vignes expriment un fruit dense mais contenu, encadré par une structure fine et précise. Frédéric choisit ici l’élevage en amphore, pendant un an, pour préserver la fraîcheur et le toucher soyeux du vin, sans l’influence du bois.
Infusion délicate, texture veloutée
Les raisins, en grappes entières, ont macéré trois semaines pour une extraction douce, privilégiant l’élégance à la puissance. Le résultat est un vin fluide, velouté, au nez pur de fruits rouges mûrs, d’épices légères et de pierre froide. En bouche, une belle matière s’étire sur une trame fraîche et salivante. Une version lumineuse et digeste d’un terroir souvent associé à la puissance.

With Albermohn 2023, Domaine Einhart offers us a more ambitious, deeper vision of Alsatian Pinot Noir. Coming from a remarkable plot, cultivated organically on a clay-limestone terroir, this red wine is vinified with extreme care, with a short but precise maceration, then aged slowly in tuns to preserve the purity of the fruit while gaining structure.
This 2023 already displays beautiful aromatic density and impressive length on the palate, while maintaining the fresh and elegant structure typical of the estate's reds. Albermohn is aimed at lovers of structured Pinots, but without excess oak or extraction: here, it's all about balance and harmony.
Elegance, substance and aromatic complexity
The intense ruby color suggests a wine of character. The nose is subtle yet profound, with aromas of ripe strawberry, stewed raspberry, a hint of pepper, and a lovely note of fresh almond that adds complexity. On the palate, the body is ample and velvety, with fine, melted tannins, supported by a beautiful acidity that lengthens the finish.

A crisp and thirst-quenching natural sparkling wine
Domaine Einhart's Pet Nat White 2023 is a cuvée full of vitality, carefully crafted according to the principles of the ancestral method. Composed of a unique blend of Gewurztraminer and Pinot Noir, this natural sparkling wine (or "Pet Nat") is the result of a destemmed maceration of several days for each grape variety, before blending. Bottling took place during fermentation, followed by 7 months of resting on slats to obtain a fine and natural effervescence.

Borgonon Granate Red 2006,
Borgoñón Granate is an organic and natural red wine from Andalusia made from Pinot Noir. Classified as Vino de Mesa (table wine), it is vinified by Cortijo Barranco Oscuro. As its name suggests, it draws inspiration from Burgundy. This 2006, which has had time to reflect, is one of the best vintages of this cuvée.
Vinification
This wine comes from Pinot Noir vines planted at an altitude of 1,280 meters on schist soils. The wine is aged for one year in old barrels.
Tasting
Borgoñón Granate is a beautifully atypical wine that displays remarkable density while being relatively clear and not very concentrated (a reference to Burgundy). Intense red fruits, cherries, melted and velvety tannins, and a long and seductive smoky finish. It ages well. Manuel Valenzuela cultivates the highest vines in the world (1,368 meters), in Andalusia, on the Sierra Contraviesa. Barranco oscuro means "dark valley," a reminder of the original site of the property, which was moved at the end of the 19th century after the phylloxera crisis. In 1979, the estate was taken over by Manuel, who decided to use natural methods in preference to those of modern oenology.
A drop of 1,400 meters
At first, he bought grapes, but his goal was to replant vines. Currently, the twelve hectares of Cortijo Barranco Oscuro extend over a drop of almost 1,400 meters. On a poor, dry, schistose terroir, two localities concentrate the plots: Cerro Las Monjas at the very top and Hoyo y Cerro de Las Gayumbas lower down, near the winery buildings.
High-altitude wines
Strong thermal contrasts explain the freshness of the wines, produced without the addition of exogenous yeasts and without inputs in the vineyard or cellar. Although the estate is not certified organic due to the disillusionment that fraud in this area has brought Manuel, his estate is a member of the Spanish Association of Natural Wine Producers. His wines are straightforward and clean, without compromise: they give joy through the seriousness of the work that was necessary to produce them.

Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked as a wine broker for some time before creating the Domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his home, the soil and vines are worked as naturally as possible: regular horse-drawn ploughing, no addition of chemical fertilizers or weedkillers. The vines are cared for according to biodynamic principles: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Reds or whites, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.
