This organic and natural Mauzac Rose Eau-de-vie ("drop") from the Gaillac region bears the Nature & Progrès and Eurofeuille labels. Mauzac rose is a traditional grape variety from the Gaillac vineyard that forms the basis of this organic, chemical-free spirit, produced by Laurent Cazottes and with an alcohol content of 45%.
Production
To obtain this drop of Mauzac rose, the fully ripe organic grapes are raisined (dried), destemmed by hand, then pressed and subjected to natural fermentation, without the addition of sulfites, which the Cazottes distillery leaves unfinished in order to retain residual sugar. They are then slowly distilled to preserve the fruity concentration in the mouth.
Tasting
Crystalline, luminous color; delicate and supple mouthfeel. Elegant aromatic profile, retaining all the natural taste of organic Mauzac rose: notes of pear, apricot, grapefruit, apple and sage. As fruity as it is floral, this drop of pink Mauzac from the Cazottes distillery excels in baking: try it to replace the rum in a baba. Production secrets
First of all, the integrity of the fruit and the vine, cultivated in certified organic (Eurofeuille and Nature & Progrès labels) and biodynamically, then careful care given to their maceration at perfect maturity in the estate's organic eau-de-vie, and finally a precise and light dosage of sugar.
The Cazottes touch
"Liqueur does not mean sweet," Laurent likes to say. The particularity of Cazottes liqueurs and eaux-de-vie is their fidelity to the raw material: it is the whole fruit that we have in our mouths, with all its nuances and its deliciousness. They are low in alcohol and low in sugar: they are exceptional nectars.

The stems, calyxes, seeds, and even the smallest scab of the estate's Williams pears, harvested when overripe, are removed to preserve the fruit's flavor. Fermentation takes place for six weeks before distillation. You will never have tasted such an intense pear brandy, so faithful to the original fruit. It is the quintessence of the pear. Alcohol content: 45%.
This brandy highlights the full aromatic richness of the Williams pear. The nose is precise and bright, carried by notes of fresh fruit and juicy flesh. The palate is clean, long and delicate, with a great sensation of purity.
Made from an old Gaillac black grape variety reintroduced by the Plageoles family, this eau-de-vie is aromatic, full-bodied, and spicy. Very long-lasting and comforting, it is the most "vinous" of the eaux-de-vie from the Cazottes distillery. Try it as a grog with citrus fruits, or to macerate cherries and other red fruits or fresh grapes. If you need to use a grape eau-de-vie in cocktails, look no further. Alcohol content: 45%.

Grande Pestilence Red 2017
To make this blend of Cinsault and Grenache grown on schist soils in the Faugères appellation area, the Cinsault macerates whole bunches for sixty days with the partially destemmed Grenache, before aging for one year in vats. Its notes of white pepper, rose, and peony will complement grilled meats, charcuterie, and spicy terrines.
Aging potential: ten years.

La Sorga
Antony Tortul loves old vineyards: he devotes his life to finding and vinifying them. Just as there are landless shepherds, he can be defined as a landless winegrower, in other words, a wine merchant whose area of activity extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a wine technician and oenologist in various vineyards in the south of France, he created La Sorga in 2008. His enthusiasm leads him on a path filled with favorites, and each of these favorites is a vineyard. The result is a dizzying mosaic of natural, lively, and spirited wines, which reinvents itself each year with around thirty cuvées per vintage. Few winemakers can list such a variety of grape varieties on their menu: the whole of southern France is there with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and tutti quanti.
The label and the name with their pestilential connotations should not make this wine pass for what it is not: no morbid stench will disturb your experience once the bottle is opened. The nose, on the contrary, is of great aromatic complexity: black fruits, humus, white pepper, peony, and on the palate the citrus peel typical of the schist soils of the Faugères region and particularly Cabrerolles, from which this wine comes. The texture is very rounded, the finish is long and already very straight! No sulfites, no filtration, nothing else for that matter. The blend is made from sixty percent Cinsault (sixty-five-year-old vines), twenty percent Grenache (sixty-five-year-old vines), and twenty percent Carignan (sixty-five-year-old vines). Vinification is done in whole bunches in a quasi-infusion for sixty days for Cinsault and forty-five days for the other grape varieties. Once everything is blended, aging is one year in vats. It will keep well for a good ten years.

Blessed with superb maturity and great minerality, Les Grandes Orgues by Frédéric Gounan is a single-varietal Pinot Noir from Auvergne grown on basalt soils. Its generous, concentrated body, great liveliness, and freshness make it a sumptuous, lively, energetic wine capable of being enjoyed on its own. Beautiful notes of red fruits mineralized by basalt and lava, a true wine born of the earth. The distinction between Grandes Orgues and Petites Orgues is in no way linked to the plot but to the vintage and the blend. It is made during tasting, at the very end of aging. It is the first wine to be racked, the quintessence of the vintage. What seems the greatest, the most obvious, is the subject of the first blend. Then, the rest is blended to create the Les Petites Orgues cuvée. These Grandes Orgues are a pleasure to enjoy with local cuisine.

Coming from a family of farmers established in the commune of Saint-Sandoux (Puy-de-Dôme) for at least two centuries, Frédéric Gounan was in his first life a mechanic and prototype creator for the French motorcycle brand Voxan, whose headquarters were in Issoire. He turned away from the industrial world to devote himself to wine with his partner Caroline. He intends to take advantage of the magnificent terroirs of his native village, far from "pissing the vines", as was done in the past: he notes that everything that comes from this land has exceptional taste qualities. He takes over plots of Gamay d'Auvergne, plants other grape varieties, and ends up producing vintages that are among the tastiest and most sought-after in Auvergne. On this land of the Chaîne des Puys, Pinot Noirs grow on black basalt soils, while Sauvignons and Pinot Gris grow on white clay-limestone soils with basalt pebbles. A follower of organic and biodynamic farming, Frédéric also applies methods he deems appropriate to the climate and terroir: to facilitate photosynthesis in this harsh and contrasting climate, he practices lyre trellising, which allows the vines' foliage to be aerated and exposed to the sun, guaranteeing ripe fruit at harvest. Always a mechanic at heart, he makes his tools and tinkers with his tractors according to his needs. His wines are rare and distinguished, highly sought after by wine lovers: small estate (less than two hectares), small production (by volume, not by spirit).
Grands Champs Red 2018
This "Grands Champs" Burgundy, certified organic by Eurofeuille, is a biodynamic and natural red wine produced under the AOP Bourgogne label in the Côte de Nuits region, southeast of Gevrey-Chambertin. Made from 100% Pinot Noir, it has a aging potential of five to ten years. Serving temperature: between 14 and 16°C.
Vinification
The Grands Champs plot, from which this organic Burgundy comes, is planted with fifty-year-old vines. Its soils consist of cone gravel on Bresse marl. The harvest, carried out by hand, is carried out in 6 kg crates to preserve the grapes. After rigorous manual sorting, traditional vinification begins with indigenous yeasts. Aging lasts ten months in oak barrels, 15% of which are new. Bottled without filtration or fining.
Tasting
Delicately fruity, Grands Champs is an authentic wine of its terroir. Very indulgent, it evokes black fruits (black cherry), raspberry, licorice and thyme. The palate is opulent and structured.
