Antony Tortul loves old vineyards: he devotes his life to finding and vinifying them. Just as there are landless shepherds, he can be defined as a landless winegrower, in other words, a wine merchant whose area of activity extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a viticultural technician and oenologist in various vineyards in the south of France, he founded La Sorga in 2008. His enthusiasm leads him on a path filled with favorites, and each of these favorites is a vineyard. The result is a dizzying mosaic of natural, lively, and spirited wines, which reinvent themselves each year with around thirty cuvées per vintage. Few winemakers can include such a variety of grape varieties on their menu: the whole of southern France is there with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and tutti quanti. The label sets the bar very high: Gustave Doré’s Dante crosses the raging Acheron in a boat and doesn’t seem very sure of himself, understandably. Don’t let this infernal image throw you off balance; Feu I, far from plunging you into hell, propels you into the paradise of aromatic white wines. Indeed, it is one hundred percent Terret Bourret (vines aged eight and sixty-five years) harvested on clay-limestone soils in Marseillan, near the Thau basin, and in Paulhan on Villafranchian limestone (all in Hérault). The harvest of old Terrets macerates in whole bunches in the juice pressed from the young Terrets for twenty-four days before aging in vats for nine months. On the nose, white pepper, tobacco, plum, sweet spices, we didn't tell you any stories above. The palate, in harmony, is long, lemony, saline (a typical note of these wines from the sandy coast of Languedoc), while remaining extremely fresh.

Few winemakers can include such a variety of grape varieties: the entire south of France is included, with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and all the rest. Two terroirs contributed to this very southern white wine: the Villafranchian limestone of Pézenas, in the Hérault valley, and the clay-limestone soils of Marseillan, on the Languedoc coast. The blend is composed of eighty percent Grenache Blanc (vines aged sixty years) and the rest Grenache Gris (vines aged twenty years). The two Grenaches are vinified separately in "dip" (maceration of berries or whole bunches in the must obtained by direct pressing), twenty days for the white Grenache and fifteen days for the gray Grenache. Aging is seven months in vats. With a nose of pear, slightly fennel, a hint of camphor, with the delicious notes of the infusion, we feel that this wine is made for grilled fish and seafood dishes from the Languedoc coast. The palate is full, round, very energetic, aromatic, also carried on white fruits.

Few winemakers can list such a variety of grape varieties on their menu: the whole of southern France is there with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and all the rest.
A dense blend: nielluccio (sixty percent), listan (forty percent), muscat of Alexandria, muscat à petits grains, muscat of Hamburg, cardinal, chasselas. The nielluccio is directly pressed, the rest macerates, in whole bunches for some, in berries destemmed by hand for others, in the nielluccio must for forty-five days (the “dip” method). Aging is seven months, followed by eight months in bottles. The very fresh, very floral nose welcomes us: white-fleshed fruits, fresh almond. It announces a great complexity, confirmed by the straight mouth, long and fresh, mineral, and with this crazy finish on vine peach! Filagnotti Gavi Blanc 2007

Filagnotti 2007 is much more than a wine: it is a piece of natural wine history, signed by Stefano Bellotti, a major figure in the peasant revival in Italy. This emblematic cuvée from the Cascina degli Ulivi estate, located in Novi Ligure in Piedmont, embodies the spirit of freedom and rigor that has always guided this pioneering winemaker, committed to biodynamics since the 1980s.
From the Filagnotti plot, one of the finest terroirs of Gavi DOCG, this 100% Cortese was vinified without inputs, with indigenous yeasts, without filtration or fining, then aged for a long time, most likely in old barrels, according to the estate's practices. At nearly 20 years old, this natural white wine demonstrates exceptional aging potential.
The nose is complex, evolved but lively, with notes of dry honey, baked apple, candied yellow fruits, straw, wax, and an ever-present mineral backbone. On the palate, the texture is full, silky, but retains a beautiful freshness, with a striking, vibrant, almost saline length.
Filagnotti 2007 is a gastronomic wine: it will pair wonderfully with roasted poultry, fish in sauce, an aged cheese such as a long-aged Parmesan, or even dishes based on white truffle from Piedmont. It is recommended to decant it for a long time and serve it between 12 and 14°C to appreciate all its complexity.

VS-Fine Calvados, Domaine de la Flaguerie
The Domaine de La Flaguerie and the Ducy orchards are located between Caen and Bayeux, in the Bessin region. The Calvados produced there has an aromatic profile linked to this rolling plain region, more lively, more dynamic, and less well-known to the general public than the rounded, sweet style of the Pays d'Auge. Made from the estate's apples, this organic Calvados (40% alcohol) is a perfect example of the local style: the color is amber, with a nose reminiscent of tobacco, pepper, and cinnamon. On the palate, this spicy liveliness is confirmed before rounding out into vanilla apple. A complex Calvados, long in the mouth, full of elegance.
Finisterra White 2019,
Jean-Marc Dreyer
Aromatic and floral, full of citrus peel and tropical fruits, Finisterra is a sort of quintessential Alsace wine, a rare and refined vintage of captivating complexity. Lychee, passion fruit, white flowers, ginger, and yellow rose, on an aromatic background of beeswax. This wine has balsamic accents of waxed old wood and yellow fruits (peach), spices, on a delicate mineral framework of tannins reminiscent of Chinese oolong tea. The secret? Jean-Marc Dreyer blended five grape varieties—Riesling, Muscat, Pinot Gris, Auxerrois, and Gewurztraminer—to create this skin-macerated cuvée with structure, oxidative notes, and a deep amber color. It will pair very well with roast poultry, game, and anything related to duck or goose: duck breasts, duck with blood, roast duckling, confit, and foie gras. We also imagine it with well-simmered wild mushrooms. A wine to enjoy after an autumn walk. Biodynamic method, fermentation using indigenous yeasts, unfiltered, unclarified, with no sulfites added in the vineyard or cellar.

"Maceration is a tradition in Alsace!" says Jean-Marc Dreyer, adding that direct pressing in this region is a modern invention, linked to the advent of electricity. In the past, people worked by hand and let the grapes macerate before sending the marc to the press. » Whole-bunch maceration is Jean-Marc Dreyer's signature and represents 85% of the estate's production, the remainder consisting of direct-pressed whites, often aged using controlled oxidation. Jean-Marc succeeds several generations of his family at the Dreyer & Fils estate, established in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics, but he hesitated for a while between several methods: at first, his wines were more oaky, aged in new barrels with stirring. Then came the sweet period: all his wines contained residual sugar. In 2008, he tried vinifying without any sulfur and found his direction: the following winter, upon returning from the pilgrimage to Compostela, he swore never to add sulfur to any wine again. Having made this decision, he asserts his style around skin maceration, quite advanced, chiseled, always surprising on Alsatian grape varieties, of which it brings out the structure without sacrificing the delicacy. Jean-Marc works in single-varietal or blended vintages and also produces Pinot Noir reds of surprising depth.
Fleckstein 2023 White 2023,
A mineral and complex Riesling from an exceptional terroir
The Fleckstein 2023, from Domaine Einhart, is a superb expression of Riesling from clay-limestone soil, enhanced by artisanal vinification. After a low-temperature pre-fermentation maceration, designed to preserve the purity of the aromas while structuring the wine, this iconic grape variety was aged for one year in a sandstone egg. This unique container allows for a subtle exchange with the air, enhancing the wine's depth and texture while maintaining its freshness.
On the nose, this Riesling reveals an elegant aromatic blend of citrus, white peach, and white flower notes, enhanced by a flinty minerality typical of the terroir. On the palate, the attack is lively and crystalline, offering a beautiful tension supported by fruity flavors and dense salivation. The finish, long and marked by subtle bitters, allows the typicality of the limestone to fully express itself, with a horizontality and structure that enchants the taste buds.
Refined gastronomic pairings

Fleckstein White 2021
Do you like Riesling? Do you love Alsace Riesling? You'll succumb to the temptation of Fleckstein, a pure, charming, mineral, and crystalline wine, 100% Riesling, with an alcohol content of 13.5%. All the grapes come from the Einhart estate and are grown on the great limestone terroir of the Rosheim hillsides, in the Fleckstein area, on a ferruginous vein located 1.5 meters deep and a layer of loess that retains a lot of freshness and limestone purity in this wine, whose horizontal acidity is typical of Middle Triassic muschelkalk. The plots, inclined at 10%, are south-east facing and the average age of the vines is forty years. The harvest is worked by direct pressing and fermented with indigenous yeasts. The aging is one year on total lees in Alsatian foudre (barrels of approximately one thousand liters). We recommend decanting this Fleckstein so that it expresses all its vitality.

Located in the northern part of the Alsatian vineyard, horizontally above Strasbourg, the Einhart estate is a ten-hectare family property whose vines are located on the hillsides that rise between the Alsace plain and the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, i.e. shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone). Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is a co-founder, Nicolas devotes his winemaking to protecting the land and biodiversity, making wine without additives, refusing harmful phytosanitary products, and maintaining ecological refuge areas. His estate has been certified organic since 2011. Like Jean-Marc Dreyer [link], he is firmly focused on skin maceration and produces white maceration wines (orange wines) in addition to a Pinot Noir red. Entirely manual harvests, destemming of the grapes, light punching down of the cap, and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees, and the absence of filtration before bottling. The wines are made from pure grapes, lively, powerful, invigorating, and reflect the minerality of the beautiful terroirs of the Vosges foothills.
