Coyade White 2015
A voluptuous southern white wine born from a blend of Macabeu, Grenache Blanc, and Carignan Blanc planted in the Agly Valley, in the heart of Roussillon, Coyade comes from vines grown on a predominantly clay-limestone terroir. Malolactic fermentation took place in stainless steel vats, and the three grape varieties were vinified separately before being blended. The color is intense and golden, with notes of straw and honey on the nose, and a slight oxidation on the palate that pairs perfectly with hard cheeses.

Crac Rosé 2021
Belly Wine Experiment
Fresh, fruity, and pleasant, Crac is a vin gris, a still rosé wine made entirely or partially from black grapes. It generally undergoes a very short maceration, hence its light color. This is obtained by slow direct pressing (forty-eight hours) of Auvergne Gamays "sur limagne," or on the dark-colored sedimentary and volcanic soils that make up the Auvergne plain. This slow pressing, replacing a short maceration, allows for a gentle extraction of the grape's constituents and gives the wine its color. To these Auvergne Gamays are added a proportion of Pinot Gris from Alsace. Categorized as Vin de France, free from any chemical or sulfite additives in the vineyard or in the cellar, Crac spends a year aging on lees before bottling. This wine is produced using organic farming methods and has received no chemical or sulfite additives, in the vineyard or in the cellar. It will go very well with charcuterie, cured meats, and tapas of all kinds.

Founded and run by Claire Sage and Aimé Duveau, located in Chanteuges (Haute-Loire), Belly Wine Experiment is as much an experiment as it is a winemaking business. The creative duo has a lot to offer: Claire is the sister of Daniel Sage, a fan of underwater wine aging but above all an importer of Catalan wines. Hence the presence of Catalan grape varieties in Belly Wine Experiment's blends, alongside Burgundy, Auvergne and Jura grape varieties, readily found in the same bottle. Aimé is the son of Manu Duveau, a poet-winemaker from Auvergne, a former stonemason and a great winemaker of local Gamays at his Domaine de l'Égrappille. The specificity of Belly Wine Experiment is the exoticism (in the literal sense) of the blends, with Xarel lo from Catalonia being able to rub shoulders, for example, with Gamay from Puy-de-Dôme with the utmost naturalness. The wines are made using semicarbonic maceration, without the addition of chemical additives or excessive manipulation in the cellar. The house is also known for its very high-quality, vinous perries.

Under the enigmatic name of Crapaud Licorne stands an organic and natural red wine from the Cahors terroir, 100% Malbec, certified AB and Nature & Progrès. It is made by Danis Bessières (Danis dans la vigne) from organic grapes from his family's Domaine de l'Antenet.
Vinification
Danis Bessières's Crapaud Licorne is based on Malbec, the emblematic red (and even black) grape variety of Cahors. It comes from 30- to 40-year-old vines growing on clay-loam and limestone gravel soils. The vinification is carried out without any additives, with a short maceration. The aging is done in stainless steel vats.
Tasting
This deep purple-red color, no mistake, it's Malbec, the Cahors grape variety from which "black wines" are made. This red wine from Danis Bessières, dense, dark, full-bodied and rich in substance, fits the description well. Toad Unicorn needs local dishes and charcuterie from the region: the galabart black pudding from the Mayrinhac farm or the black pudding from the Collectif Padouen will accompany it with talent. Under the Danis dans la vigne brand, in the Cahors terroir, Danis Bessières vinifies organic grapes purchased from his parents' estate, the Domaine de l'Antenet, which was the first organic vineyard in Cahors in the early 1980s.
Organic and natural since 1983
Danis respects the principles established in the vineyard and cellar by his grandfather and then his father: to make wines without additives, organic and natural, from the grape varieties of the terroir while respecting the environment. It was in 1983 that his grandfather obtained the organic label Lemaire-Boucher, followed by Nature & Progrès and then the organic labels AB and Eurofeuille. Danis Bessières continues this momentum.
Malbec, but not only
Malbec reigns over the Cadurcian region, but Danis also uses Cabernets, Jurançon Noir, Merlot and recently created grape varieties. This allows him to temper the density and opacity of the main grape variety. He also does not hesitate to create single-varietal cuvées of Cabernet Sauvignon, Cabernet Franc or Colombard.

A pure Malbec, precise winemaking
The grapes come from clay-limestone soils typical of the Lot region, cultivated according to organic farming principles (AB certified). After a gentle two-week maceration, fermentation occurs naturally, without oenological inputs or added yeasts. Nine months of aging in stainless steel tanks preserves all the freshness and energy of the grape, resulting in a lively, digestible, and deeply sincere wine.
An elegant and distinctive profile
Upon tasting, Crapaud Licorne reveals a dark color with purplish reflections. The nose opens with aromas of black fruits (blackcurrant, blackberry), pepper, and subtly herbaceous notes. On the palate, the texture is fine, almost silky, with beautiful ripeness and a fresh, spicy finish. The tannins are present but delicate, perfectly balancing the fruit's richness.
A companion for fine dining
Decanted one hour before serving, between 14 and 16°C, this wine brilliantly accompanies stews, grilled meats, or artisanal charcuterie. It can also age for 5 to 10 years in the cellar, gaining complexity while retaining its free spirit.

Clos Lentiscus
This still white wine is light, pleasant, refined, and crisp. It should be drunk young and well chilled. It's a good thing it comes in a liter bottle, because it's easy to pour over, especially as an aperitif with lots of friends. Made from the famous traditional Catalan grape variety Xarello, it comes from vines planted on calcareous-sandy soils and harvested by hand. It is pressed directly, the must is vinified using indigenous yeasts and fermented for six months in stainless steel vats.

It is in Sitges, Catalonia, in the heart of the Garraf Natural Park, that Manel Avinyo and his brother Joan took over the family estate, renamed Clos Lentiscus by Manel. Even though Barcelona is only a half-hour drive away, the beauty of the landscape is striking and the immersion in nature is total: Mediterranean forests rub shoulders with Catalan scrubland (thyme, rosemary, rockrose, mastic tree which gave its name to the estate, etc.). The Penedès region also has a long winemaking history. Nestled in its gentle hills is Clos Lentiscus, in the Penedés appellation, on twenty hectares of sandy and clay-limestone soils facing due south at an altitude of 225 meters. According to historical documents, the family of Manel and Joan Avinyo has been established here since at least the 14th century. For a long time, the grapes were sold to local cooperatives, but since the two brothers took over the estate, organic and biodynamic farming has replaced conventional practices. The entire harvest is used in the house vintages, and organic and biodynamic practices have allowed this beautiful property to regain its former prestige: in the 19th century, its wines were sold in France and as far away as the Americas. Manel quickly earned a nickname: The Bubbleman, a tribute to his talent for vinifying cavas, the sparkling whites characteristic of the northeast of the Iberian Peninsula, from native varieties that only Catalonia has the secret to: sumoll, ull de llebre, xarel·lo, malvasia from Sitges, cartoixà vermell, cariñena (carignan), accompanied by tempranillo and muscat from Alexandria. The vines are old, sometimes centuries old. No synthetic additives are used in the vineyard, and operations such as planting, pruning, de-budding, and harvesting are dictated by the lunar phases. Pollination is facilitated by the presence of beehives; sheep contribute to fertilization and control of the plant cover. Ringo, the white horse, takes care of working the soil.
Elegance, purity, and a crisp minerality due to the limestone characterize the productions of Clos Lentiscus. The note of controlled oxidation, when it is felt, does not dominate the tasting, and the wines are never deviant. The cavas are renowned for their exuberance, but those of Clos Lentiscus never have more than two grams of residual sugar per liter. The estate also produces still wines, red, white, and rosé.
Crucella Red 2019
La Vinicola di Antonio Gismondi
The estate's only red, Crucella is a beautiful blend of Merlot, Sangiovese, and the ancient local Freisa grape variety, which imparts a slight hint of musky red fruit, but the Sangiovese dominates. The harvest macerates for five or six days in stainless steel vats, then the wine is aged for seven to ten months in the same type of vat. Crucella is characterized by a nose of undergrowth, mineral and earthy, a lively and acidic attack on the palate, red fruit, cherry on the retro-olfaction, and tannins that are less present than the deep color would suggest. Definitely a good wine for laying down that will blossom over time.

La Vinicola di Antonio Gismondi
Crucella is known for its undergrowth, mineral, and earthy nose, a lively and acidic attack on the palate, red fruits, cherry on the retro-olfaction, and tannins less present than the deep color would suggest. Certainly a good wine for laying down that will blossom with time. The only red from the estate, it is a beautiful blend of Merlot (33%), Sangiovese (34%), and the ancient local grape variety Freisa (33%), which imparts a slight hint of musky red fruit, but the overall wine is well balanced. The harvest macerates for five or six days in stainless steel vats, then the wine is aged for seven to ten months in the same type of vat.

Antonio Gismondi's azienda is located in Cerreto Sanita, in the Benevento region of Campania. A microclimate gives this area an almost continental feel: humid winds from the Tyrrhenian Sea collide with the first ramparts of the Apennine mountain range, causing condensation in the air and lowering temperatures, which are significantly cooler and more humid than on the coast. If we add a temperature inversion phenomenon between day and night, which is common in the Apennine climate, the freshness of the wines from the Antonio Gismondi estate is nothing mysterious in this southern Italy, which is nevertheless known for its very hot climate. The estate is family-run: for generations, the Gismondi family has cultivated vines and made wine using the most traditional and natural methods, to which biodynamic techniques are added. For a long time, of the fifteen tons of grapes produced each year, one ton was reserved for on-site winemaking for family consumption, with the rest going to the local wine cooperative. It was their meeting with Massimo Marchiori and Antonella of Partida Creus that led Antonio and his wife Anabel to start producing natural wines at home from the entire harvest. The two-hectare vineyard is located between 350 and 380 meters above sea level, on clay and stony soils, with two-thirds facing south. The grape varieties are Merlot, Freisa and Sangiovese for the reds, and Falanghina and Malvasia di Candia for the whites.x
Cul Sec Blanc 2020

A splendid wine, sumptuously fine and fresh—and it's a Vin de France. The texture is silky and rich, with notes of fresh apple and white peach. Great elegance and purity, a magnificent balance between fruity, floral, and mineral notes. Produced biodynamically and under the Vin de France appellation, Cul sec blanc is the faithful expression of its terroir in the northern Rhône Valley: it is made from Viognier and Marsanne grown biodynamically on granite and gneiss soils in Saint-Jean-de-Muzols, on the banks of the Ardèche near its mouth. The harvest is entirely manual, in small containers, and no inputs are used in the vineyard or the winery. The grapes stay in a cold room while awaiting direct pressing, which is done slowly and gently to extract the best from the fruit. This step is followed by settling, after which the must goes into stainless steel vats to ferment with natural yeasts. The aging is one year, also in stainless steel vats.

Thierry Alexandre produces little (two hectares in Saint-Jean-de-Muzols, in Ardèche, and a few vines north of Crozes-Hermitage), but he produces well and carefully, all biodynamically and without additives in the vineyard or cellar. His bottles are in the Saint-Joseph, Crozes-Hermitage blanc and Vin de France appellations. The grape varieties are typical of this northern Rhône Valley: Marsanne, Roussanne, Syrah, Viognier. The estate rests on quite varied soils, mainly decomposed granite, as well as gneiss, sandy clay and loess. He practices semicarbonic fermentation in whole bunches for fairly long periods and aging, depending on the vintage, in stainless steel or old barrels. His wines are as rare and sought-after as the winemaker is humble and discreet, but there is nothing haughty or inaccessible about them: pleasant, warm, fluid and well balanced between fruit and mineral, they are wines of pleasure that should be reserved for the most friendly gatherings.

De Vini
0.72+ is a dry white wine produced by Christophe Bosque of De Vini, organic and natural, without any added sulfites or chemical additives. It comes directly from the Muscadet region, the Loire estuary. While it doesn't carry the Muscadet appellation (it's a Vin de France), it can be considered a Muscadet and enjoyed as such.

0.72+ Blanc de De Vini is made from 100% Melon de Bourgogne (another name for the Muscadet grape variety) grown in Maisdon-sur-Sèvre (Loire-Atlantique) on gabbro soils characteristic of the region. Gabbro is a granular igneous rock resting on a granite subsoil, and this produces splendid, vibrant, and mineral white wines. Gabbro and granite are Vinilibre's preferred soils and constitute a precious viticultural heritage. The wine was aged for one year in buried cement tanks (traditional in this region), on its lees, without any additives.

Cuvée 0.72+ (exclusive cuvée) Red 2019 Magnum
De Vini
Exclusive to Culinaries, 0.72+ red is a merchant cuvée produced by Christophe Bosque of the De Vini estate, located in the Nantes region. The vines from which it is produced, 80% Grenache Noir, 10% Syrah, and 10% Viognier, are located in the Côtes du Rhône region, in Rochefort-du-Gard, and grow on a pebble-rich soil similar to that of nearby Châteauneuf-du-Pape. Classified as a Vin de France, it has its counterpart in white.
Vinification
The vines are managed biodynamically and the grapes are macerated for two weeks on the skins and fermented on indigenous yeasts: no pumping over, no crushing, as little intervention as possible. Just a little punching down. No filtration, no fining, no sulfites.
Tasting
0.72+ red has a slightly dark ruby color, with faded rose tones. This floral note is found on the nose and palate. The presence of white Viognier in this red blend gives this wine a floral side, a rather rare note of white flowers. A little prune, a complex yet light aromatic structure, a pleasant salivating side. This is a beautiful wine that still has good years ahead of it, especially in the magnum format which polishes all its qualities. Great length, great structure on the palate. 0.72+ is a robust wine that will pair well with solid dishes and anything containing truffles. Let's pair it without further ado with a nice grilled meat (a rib of beef from Maison Aitana) and let's heat up for the occasion a good truffle sauce from Maison Pébeyre.

De Vini
With a slightly dark ruby color and faded rose tones, this is a red wine that should logically catch your eye for your greatest pleasure: this cuvée 0.72+ red comes from very different terroirs than its white equivalent (which we also offer). The vines from which it comes, 80% Grenache Noir, 10% Syrah and 10% Viognier, are located in the Côtes du Rhône region, in Rochefort-du-Gard, and grow on a soil of rolled pebbles that is not without points in common with that of Châteauneuf-du-Pape, which is only a few kilometers away on the other bank of the Rhône. The presence of a white grape variety - Viognier - in this red blend gives this wine a great originality, a floral side that hovers over the entire organoleptic experience: there are faded rose petals on both the nose and the palate, as well as a fairly strong tendency towards white flowers (Viognier, again). There is also a little prune and a complex, though light, aromatic structure. This is a beautiful wine that was long overdue and which is currently at its peak, with beautifully melted tannins and many more years ahead of it. Great length, great structure on the palate, and a pleasant salivating side. Viognier is an inspiration from the Northern Côtes-du-Rhône adapted to the Southern Côtes-du-Rhône, and red blends featuring white grape varieties are an increasingly common occurrence in the world of natural wines. As for the cultivation and vinification, the vines are managed biodynamically and the grapes were macerated for two weeks with care: no pumping over, no crushing, as little intervention as possible. Just a little punching down, no more than necessary. If the name of the cuvée intrigues you, be aware that following a small technical incident during bottling, it does not contain exactly the standard quantity. This detail should not worry you, because in this case, 72 cl is a maximum: most bottles require between 1 and 3 cl to reach 75, which is very little. Don't let the fluidity and delicacy of this wine fool you either; it's actually a solid wine that will pair well with solid dishes like roast wild boar and anything with truffles.

Here is a red wine from a southern grape variety vinified by a Burgundian master: Frédéric Cossard here takes on Carignan from the South, conveying its virtues with his usual dexterity. The blend includes a little Mourvèdre. Peppery, spicy, fruity (cherry), notes of undergrowth and well-integrated tannins, it is a delicious and fresh wine for all occasions.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked for some time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations.
In 2006, he created his trading house and bought organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy, as vintages are made from grapes purchased in the Jura, Languedoc, and elsewhere. At his farm, the soil and vines are worked as naturally as possible: regular horse-drawn ploughing, no addition of chemical fertilizers or weedkillers. The vines are tended according to biodynamic principles: homeopathic treatments based on essential oils, copper, and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Red or white, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.
Cuvée Carignan Red 2022
It's all in the title: this Cuvée C Carignan by Frédéric Cossard is a 100% organic and natural Carignan, vinified in Burgundy by Frédéric Cossard. The Burgundian master here takes on Carignan from the South, expressing its virtues with his usual dexterity. The blend includes a little Mourvèdre.
Vinification
The Cuvée C Carignan vines are planted at the foot of Mont Ventoux. The vinification of organic grapes is entirely natural, using indigenous yeasts, and maceration is done in whole bunches without exaggerating extraction. Aging is done in vats. No sulfites added.
Tasting
Peppery, spicy, black fruits, C Carignan offers notes of undergrowth, violet, and well-melted tannins, it is a gourmet and fresh wine for all occasions, sunny and balanced. Cuvée Carignan Red 2023,
A true homage to the Carignan grape variety, this cuvée seduces with its complexity and indulgence. Made from organic grapes harvested at the foot of Mont Ventoux, this cuvée offers a dark color, a nose of black fruits, spices, and pepper, and a full, sunny palate. The tannins are melted, giving way to flavors of undergrowth, violet, and spices.
Aged for 9 months in stainless steel vats, this is a fresh and balanced red, perfect for casual meals with charcuterie, grilled meats, or spicy dishes. Serve at 16-18°C, it can be stored for 5 to 10 years.
