La Senda
La Bodega La Senda is the creation of Diego Losada, a native of Bierzo, a region in the northwest of the province of León, bordered to the north by Asturias and to the west by Galicia. Pilgrims traveling to Compostela via the Camino Francés or the Camino de Invierno can admire its magnificent landscapes, where ancient vineyards cover the hilltops. Viticulture dates back to Roman times, but the region was so traumatized by the phylloxera crisis that vines were not replanted until the mid-20th century, without massive uprooting, giving these vines an average age of forty to seventy years. Born in Ponferrada, in the northern Bierzo, Diego was never one for compromise. Resolutely radical, with a passion for freedom and rigor, he first applied this disposition to music in the heavy metal band he formed with his high school friends. It was later to wine that he would devote this same passion, studying organic chemistry at university and learning the scientific aspects of viticulture. But the scientific rigidity and conventional methods he discovered on some of the estates where he worked did not satisfy him. Attracted to a viticulture closer to the land, Diego reclaimed a few plots to showcase the Bierzo terroir as naturally as possible. In 2012, he created the La Senda estate, whose name means "the path," on the outskirts of his hometown. His wines would be like him: honest, frank, natural, and expressive. Not awarded the designation of origin, they are the pure reflection of their soils and climate, the personality and energy of their creator.
This 100% Mencia red (a descendant of the Trousseau) comes from clay-limestone soils very rich in quartz, iron, and slate, at an altitude of around 650 meters in southern El Bierzo. The vines are seventy to ninety years old. The grapes macerate for three to four days in old oak barrels, and the wines are aged for seven months in French oak barrels and tuns. No sulfites are added, no filtration. Dark garnet color, warm slate nose with fruity accents—the marriage of cherry and pebble—a full and juicy palate: a bright wine, perfectly faithful to its terroir. Decanting is recommended.

Fond Cyprès
Ni tout à fait rouge, ni vraiment rosé : 1er Jus Domaine est une cuvée hybride, légère et naturelle, qui bouscule les codes. Signée Fond Cyprès, elle résulte d’un pressurage très doux de Carignan et Grenache, cultivés en bio sur sols argilo-calcaires du Languedoc, avec un style volontairement souple, fruité et spontané.
Un vin nature sans maquillage
Les grappes entières sont mises en cuve pour une macération courte et douce, sans égrappage. La fermentation se déroule en levures indigènes, sans ajout de sulfites ni autres intrants œnologiques. L’élevage, de six mois en cuves inox, préserve la fraîcheur et le côté juteux du fruit.
Un profil léger et rafraîchissant
Au nez, 1er Jus Domaine séduit par ses notes de cerise croquante, framboise fraîche, une touche de fruit rouge acidulé et un soupçon d’amande fraîche. La robe est claire, entre rubis et framboise. En bouche, c’est fin, glissant, avec une matière souple, désaltérante et une pointe d’énergie en finale. Un rouge ultra-digeste, presque floral, sans tannins marqués.

Servi entre 14 et 16 °C, 1er Jus accompagne à merveille des poissons crus, un barbecue estival, des planches apéritives, ou une cuisine asiatique aux notes sucrées-salées. Un vin de plaisir immédiat, à boire dans les 2 ans, pour profiter de sa fraîcheur et de sa légèreté.
1er Jus Red 2023
Fond Cyprès's 1er Jus 2023 is a bold and original expression of the Languedoc-Roussillon terroir. This red wine, made from a blend of Carignan and Grenache Noir, offers a unique and fluid taste experience, halfway between a red wine and a rosé. With a moderate alcohol content of 12.5°, it stands out for its freshness and lightness, perfect for convivial moments.
Terroir and Vinification
The Carignan and Grenache Noir vines grow on clay-limestone soils typical of the region, giving this wine a subtle minerality and a beautiful structure. The vinification is carried out according to a unique method: the whole bunches of Carignan are immersed in a saignée of Grenache in full fermentation, with pressing two days later. This process begins as a rosé vinification and ends in red, giving the 1er Jus Domaine its unique character and light color.
Aged for 6 months in stainless steel vats, this wine is made with indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. The minimal presence of sulfur and light filtration ensure a respectful and natural approach to the wine.
Tasting and Food Pairing
On the nose, the 1er Jus 2023 seduces with fresh and vibrant raspberry aromas. On the palate, it reveals a fluid, almost airy texture, with a fruity and elegant finish. It pairs ideally with a beautiful charcuterie board or as a convivial aperitif, best served chilled between 12 and 14 degrees for an optimal experience. This natural wine can be kept for up to five years, but it also tastes great young.

La Sorga
For this cuvée, Grenache Blanc from the Hérault Valley macerates whole bunches for 45 days in vats. It is also aged in vats for 12 months. Its notes of mandarin, beeswax, and white peach will pair well with hard or blue cheeses. Aging potential: 10 years.

Partida Creus
Anonimo Ancestral is a natural sparkling wine obtained by the method of refermentation in the bottle with aging for twelve months on fine lees. No filtration, no added sulphite. It results from a blend of several traditional Catalan grape varieties which differ depending on the color: for example xarel lo, macabeu, parellada, moscatel and ull de llebre. It pairs well with Mediterranean dishes, particularly those containing garlic, raw or cooked, such as snails Burgundy, romesco sauce, cod aioli, etc. It is a friend of all grilled dishes, including fish. This creamy and mineral wine with a superb texture and wonderful freshness should be drunk very cold (8-10°C) in a tulip or Bordeaux glass.

Anonimo Ancestral is a sparkling rosé with a creamy texture and fine bubbles, offering a magnificent mineral sensation on the palate, superb texture, and remarkable freshness. It should be served at a very low temperature (8-10°C) in a Bordeaux or tulip glass. The notes evoke undergrowth, grass, and yeast alongside red fruit. Obtained using the bottle refermentation method and aged for twelve months on fine lees, it is not filtered or sulfite-added. It is the result of a blend of several traditional Catalan grape varieties that differ depending on the color: for example, Xarel lo, Macabeu, Parellada, Moscatel, and Ull de Llebre. The blend and its proportions are subject to variation depending on the vintage. It pairs well with Mediterranean dishes, particularly those containing garlic, for example, snails Burgundy style, a Romesco sauce, cod aioli, etc. Anonimo Ancestral is a friend of all grilled dishes, including fish and seafood (octopus, squid, etc.).

Partida Creus is an important estate, both in terms of wine and history – we are talking here about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont—and even from the Langhe region, where wine is well-versed—first pursued careers as architects in Barcelona. But the wine bug tickled them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a number of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. For them, it's not just a matter of saving their heritage, no: it's a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to produce their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, ceciat parent, maccabeu, parellada, pansé, vinel·lo, bobal, cartoixà vermell or xarel·lo: it is a true conservatory of the native Catalan grape varieties that Partida Creus cares for. There is also Moscatel, Grenache, Merlot and Cabernet (among others). Few wineries can boast of growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to best convey the signature of the soil and the grape variety: single varietals are common among them, alongside very rich blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that indicate the cuvée. The wines, fresh, vibrant, lush but always straightforward and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.
White Absinthe 60° - 70cl
Awen Nature Distillery
This certified organic white absinthe is the result of a special recipe that was the subject of many years of research by the founder of the Awen Nature distillery. Entirely organic and natural, it derives its flavor from a combination of seven distilled botanicals, a bouquet that expresses very refreshing notes, always with a dominant anise and complex notes of plants such as wormwood, coriander, hyssop, and lemongrass. This absinthe is created and distilled exactly as this liqueur was before the 1915 ban. To fully appreciate it, we recommend the traditional method: in a glass containing a measure of absinthe, place a sugar cube on an absinthe spoon and pour fresh water drop by drop over the sugar cube. Upon contact with water, white absinthe becomes slightly cloudy to reveal iridescent and brilliant reflections.

The Awen Nature distillery is a factory of magic potions: beverages with a strong Celtic content, organic liqueurs with a strong touch of poetry. This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially dedicated itself to absinthe, a liqueur that Julien helped to rehabilitate. It’s not “the liqueur that makes you crazy,” he says: “we were already crazy before.” He strives—successfully—to reproduce the taste of yesteryear, that of the absinthes that were once given to children on a piece of sugar as a dewormer. “You need a touch of madness to be a distiller today,” says Julien. In addition to absinthe, Julien distills a wide range of spirits and liqueurs: gins, vodkas, botanical rums, Swedish elixir, concoctions inspired by role-playing games... All made from plants, respecting the environment, without preservatives or artificial flavors. An ode to plants that the korrigans must sip in secret, at night, on the moors.
