Beets '20 Beer 2020, Cyclic Beer Farm
Cyclic Beer Farm
Packaged in 75 cl bottles so that everyone can satisfy their thirst, the beers from the Barcelona-based brewery Cyclic Beer Farm play between classicism and flights of inspiration, in a contrasting and creative way, in the Catalan style. Based on classic principles and a Belgian fermentation model, the two brewer-winemakers Joshua and Alberto play with ingredients, aromas, and macerations, including cereals, fruits, vegetables, and grape skins from Catalan grape varieties, to achieve flavors reminiscent of an unidentified drinkable object (OBNI). Whether they assert themselves through balance or a certain controlled dissonance, these beers will never leave you indifferent and will reveal their full potential in the summer heat, served well chilled.
Here is Beets, a saison (5.5% alcohol) that will surprise more than one and will certainly enchant a wider audience than its apparent oddity might suggest. First, its beautiful, vibrant fuchsia color is not a common sight in the world of beers. This fascinating color is explained by the main ingredient of the maceration, organic red beets grown on the farm of the two Catalan brewers, who carry it out once a year. The 2020 vintage is their fourth experiment in this field and achieves a balance they have been looking for since the first attempt. This time, they decided to macerate the roots twice as long but without peeling or grating them, just cut them into pieces. The extraction is therefore carried out as precisely as possible, without excess or deficiency. The "funky" brew (according to the brewers) intervenes to correct any excesses of the vegetable, bringing it freshness, acidity, and moderating its earthy power. The natural flavor of the beetroot is thus sublimated, without heaviness or sweetness. A beautiful balance of vegetal, fruity and bitter flavors, and always that magnificent color... A favorite of the Culinaries tasting team.
Fresita '20 Beer 2020,
Cyclic Beer Farm
Packaged in 75 cl bottles so everyone can satisfy their thirst, the beers from the Barcelona-based brewery Cyclic Beer Farm play between classicism and flights of inspiration, in a contrasting and creative way, Catalan style.
Here is a beer (5.5% alcohol) that you will return to after the first glass: it seduces, it intrigues. Its complexity will escape no one. Those who have not seen the label (Fresita is self-explanatory) will quickly discover the can of worms, or rather the strawberries, since it is strawberries that are in question. Precisely whole organic strawberries from El Maresme, a mountainous micro-region of Catalonia including the municipalities of Sant Pol de Mar and Sant Cebrià de Vallalta and benefiting from a microclimate conducive to the cultivation of the gaviota and pajaro varieties, renowned for their intense aroma. This is the aroma that the Cyclic Boys wanted to convey in their beer. The pale pink color sets the tone, the nose confirms in (a little) Tagada strawberry mode: the fruit manifests itself in retro-olfaction, in the background. The acidity is pronounced, a touch of brett on the nose and palate contribute to the flavor of this very original beer with a layered aromatic structure. With the required freshness, it will be a hit on summer terraces.
Réhoboam GT Garrut Rouge 2015
Partida Creus
Natural wine without added sulphites.
Magnum XL Xarel Lo Blanc 2017, Partida Creus
Made from the native Xarel Lo grape variety, this smoky, mineral, and explosive white wine is perfect for seafood, fish, and white meats. Drinkable and enjoyable beyond description, yet complex, deep, and persistent.
Natural wine with no added sulfites.
Noisette Ancestral White 2018, Émilie Mutombo
A little something from the land of cava, a lovely amber color, fruit and bubbles: a lively and bouncy effervescent, a celebration of life to be enjoyed during summer evenings (but not only).
Natural wine with no added sulfites.
Magnum Munjebel Red 2014
Frank Cornelissen's Munjebel 2014 is a pure and intense immersion in the volcanic terroir of Etna. Made exclusively from Nerello Mascalese, this red wine aptly expresses the identity of northern Sicily. It comes from several exceptional plots, notably those used for the estate's vintages, such as Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-Porcaria, and Pontale Palino, as well as from vines specifically dedicated to this cuvée (Rampante Sottana, Piano Daini, and Crasà).
In the glass, its translucent ruby color evokes the refinement and finesse of a great Pinot Noir, while preserving the energy and intensity characteristic of Etna wines. The nose is a true olfactory journey, revealing aromas of wild red fruits, black cherry, and raspberry, accompanied by subtle spicy and mineral notes, indicative of the basaltic influence of the soil. On the palate, it is both structured and vibrant: its tannins are present yet silky, and the ripeness of the fruit is balanced with a beautiful acidity. A slight salty touch prolongs the finish and recalls the volcanic origins of the terroir.
A natural wine with no added sulfites, the Munjebel 2014 reflects Frank Cornelissen's non-interventionist philosophy. This rich and expressive wine is ideal for aging (5 to 10 years), but is already splendid today after aeration in a carafe. Served between 16 and 18°C, it will pair wonderfully with grilled meats, Mediterranean dishes, or a porcini mushroom risotto.
Magnum VN Vinel.lo Ancestral Blanc 2016, Partida Creus
This lively and easy-drinking white sparkling wine (10% alcohol) is a blend of native Catalan grape varieties: Garnatxa Blanca, Macabeu, Moscatell, Vinyater, Xarel.lo, Parsé, and Parellada. The harvest is pressed directly, and the must ferments in temperature-controlled stainless steel vats with indigenous yeasts. A second fermentation takes place in the bottle, where it ages for 10 months on its fine lees. Dry, light, and fruity, it will easily replace a champagne with a sunnier nuance. The nose offers aromas of ripe white fruits and yeasts reminiscent of pastries. On the palate, it is elegant, fresh and suitable for all occasions, but we recommend it as an aperitif or to accompany desserts (galette des Rois, pithiviers, millefeuille and all puff pastries).
Natural wine without added sulfites.
Magnum VN Vinel.lo Ancestral Sparkling Red 2016
VN, Vinel·lo Ancestral Red Sparkling Wine, is a natural sparkling wine resulting from a blend of indigenous grape varieties: Samsó (Cinsault), Garrut (Mourvèdre), Trepat, Ull de Perdiu, Queixal de Llop, Sumoll, and Grenache Noir, harvested from predominantly limestone soils. After crushing, the musts from the different grape varieties ferment one after the other and are gradually added, thus extending fermentation with indigenous yeasts. Fermentation completes in the bottle for ten months on fine lees. No filtration, no additives, no added sulfites. A fruity, very fresh sparkling wine with floral and yeasty notes. Very long finish. Natural wine with no added sulfites.
Magnum I'm Natural Don't Panic #7 Red 2018
Coruna del Conde
Julien López's I'm Natural, Don't Panic range consists of macerated wines. This 100% Tempranillo red is both powerful and supple; its freshness is the result of a high-altitude climate that subjects the vines to significant temperature variations. A lovely bouquet of red fruits and a beautiful balance of sweetness and minerality. Serve with tapas, grilled meats, or poultry.
Natural wine with no added sulfites.
Rosso 2012
Le Coste
This generous Italian red is made from a blend composed primarily of Grechetto (a local variety related to Sangiovese), with the secondary grape varieties being Cannaiolo, Colorino, Ciliegiolo, and Vaiano, indigenous varieties planted in the vineyards on the volcanic soils of the Le Coste estate. Fermentation lasts about a month in French oak and chestnut vats. Rosso is then aged in Slovenian oak barrels. At first glance, a beautiful ruby color, a crisp and juicy palate, with notes of red and black fruits.
Natural wine with no added sulfites.
Unatantum Liquoreux Red Still 2009
This sweet red is 100% aleatico, grown on the volcanic soils of the Azienda Le Coste estate. The grapes are air-dried for a month, hung in whole bunches from wires, and the wine is slowly fermented for three years. This produces a wine that is sweet without being syrupy, and wonderfully complex.
Natural wine with no added sulfites.
Su Chi No'Nau Rouge 2013, Gianfranco Manca Panevino
A blend of two hundred-year-old plots of vines: Grenache and Cannonau. Fermentation and aging take place in stainless steel vats. Fruity, slightly carbonic, between fruit and stone: a slight smoky touch brings to mind schist, a volcano. A very fine table wine.
Natural wine with no added sulfites
Sassaia Blanc 2011, La Biancara di Angiolino Maule
This white is the story of a beautiful encounter between a Garganega and a touch of Trebbiano. Produced from vines growing on the volcanic slopes of Veneto, Sassaia is the result of spontaneous fermentation, without filtration, using indigenous yeasts, before aging in barrels. With a beautiful orange color, it stands out for its powerful and slightly smoky nose, which continues on the palate with notes of cider while retaining a beautiful acidic structure. Full-bodied and generous, it will perfectly replace a red wine with a grilled meat dish.
Natural wine with no added sulfites
