What is white wine?
Regardless of their profile, all our white wines are natural and organic wines, with no added sulfites.
White wine is most often made from white grapes, but some black grape varieties can also be used. This is then called "blanc de noirs."
The main French grape varieties for white wine are Chardonnay, Sauvignon, Chenin, Viognier, Melon de Bourgogne, Sémillon, Muscat, Riesling, etc. There are more well-known protected designation of origin (AOC/AOP) for white wines (Loire, Jurançon, Entre-Deux-Mers, Fiefs-Vendéens, Muscadet…), but many appellations are also famous, sometimes more famous, for their white wines than for their red wines: this is the case, for example, for Alsace and Burgundy.
A dry white wine can be made from direct pressing (grapes pressed immediately after harvest) or vinified with maceration of destemmed or whole-cluster grapes. In this case, it is called a macerated white wine or orange wine.
Sweet or dessert wines are wines with a sweet profile because they retain a high level of residual sugar after fermentation. These wines should not be confused with VDN (vins doux naturels) or fortified wines, which can be white, and which are obtained from grape must whose fermentation has been interrupted by the addition of alcohol.
A dry white wine, depending on the ripeness of the grapes, the terroir, the grape varieties, and the winemaking process, has a taste profile ranging from very dry (acidic) to fruity and sweet. One can feel the mark of the soil (acidity, salinity, minerality) or that of the fruit (sweetness, fruity or floral aromatic palette), sometimes both. Aging and cellaring time can also influence the sweetness, acidity, or aromatic intensity of a white wine.
White wines are made almost everywhere in temperate climates. In Europe, some white wines from Italy and Spain are renowned. In France, Burgundy, the Loire Valley, Savoy, Alsace, Languedoc, and Gascony can be cited as major origins of white wine.
Regarding pairings, white wines are most often associated with fish, seafood, and cheeses, as well as cheese-based dishes such as Swiss or Savoyard fondue. They are also reserved for white meats and light appetizers, as well as some desserts.
What are the different types of white wines?
The large family of white wines includes dry white wines (the most common category), which include oxidative white wines and macerated white wines (orange wines). There are also sweet white wines, dessert white wines, sparkling white wines (or pétillant), and fortified white wines (white vins doux naturels).
Why choose an organic white wine with no added sulfites?
For health, first of all. Many people claim not to tolerate white wines because they give them headaches. This symptom is most often due to the addition of sulfites, not to mention other chemical additives in conventional winemaking.
Indeed, conventional winemaking tends to add more sulfites to white wines than to red wines because they are more fragile and more difficult to preserve, but in the presence of natural white wines without added sulfites, this problem disappears.
An organic white wine with no added sulfites is therefore healthier and more digestible. It also tastes better, allowing its aromas and fruit more room to express themselves.
A good natural white wine offers a freer and livelier sensation on the palate. These wines are fresher, fuller, and more pleasant to taste.
What is the distinction between a sweet white wine and a dry white wine?
The dry-sweet-dessert scale is a matter of residual sugar, the amount of natural grape sugars that the wine retains after fermentation.
A dry white wine will contain less than 10 g of residual sugar, a sweet white wine between 10 and 45 g, and a dessert wine will contain more than 45 g per liter.
Which exceptional dishes pair best with white wine?
If we generally consider that white wines are to be paired with fish and seafood, white meats, poultry, and cheeses, the pairings depend heavily on the types of wines.
For exceptional dishes, an exceptional white wine.
For example, oysters and smoked salmon will be paired with dry white wines from Burgundy or the Loire estuary (Muscadet), fine fish (turbot, sole, sea bass) with crisp and aromatic white wines from Burgundy, the Loire Valley, Savoy, and the South.
Loire white wines will go with goat cheeses, and Savoy or Jura white wines with rich cheeses such as Reblochon, Comté, or Mont d'Or.
With age, the range of pairings for great dry or dessert white wines expands and includes stews, poultry, and feathered game. Sometimes, an old Burgundy or an old sweet Jurançon develops truffle aromas: the pairing is then obvious.

Puligny Montrachet White 2022
This Puligny-Montrachet AOP is a dry, organic, natural white Burgundy wine vinified by Frédéric Cossard. Frédéric produces several Puligny-Montrachet vintages, including this one with no climate indication, but endowed with all the graces of this great white wine appellation from the Côte de Beaune, one of the most prestigious in Burgundy.
Vinification
Puligny-Montrachet is made from Chardonnay grown on clay-limestone soil. This is a direct-press wine, aged for at least one year.
Tasting
A marvelous fusion of richness and dryness, Frédéric Cossard's Puligny-Montrachet has great aging potential. With age, its aromas lean more and more towards earthy, mineral notes, with smoky accents and a magnificent affinity with truffle. In the meantime, it is difficult to list its pairings, as this unique wine has the gift of harmonizing with everything that is good. Still young, reserve it for fine poultry and white meats.

Between viticulture and trading
Frédéric Cossard created the Domaine de Chassorney in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, then ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. Since the recent sale of this estate, Frédéric continues to manage his trading house, created in 2006 in his own name. He vinifies grapes from the greatest climates of Burgundy, but also from the Jura, Languedoc and elsewhere.
A solid commitment to nature
At Frédéric Cossard, the work of the soil and the vines is done naturally: plowing by horse, biodynamics, no chemical fertilizers or weedkillers. The harvest, by hand, is carried out at full maturity. Frédéric Cossard's vintages are rare and coveted, wines that are always highly anticipated but which sometimes require waiting.
Riesling Blanc 2022
Domaine Einhart
Riesling from Domaine Einhart is, as its name suggests, a dry white wine made from 100% Riesling from the Alsace region, organic (Ecocert) and natural, classified as a Vin de France. Riesling, the lord of Eastern European grape varieties, finds here an expression worthy of its nobility.
Vinification
The twenty-five-year-old Riesling vines from Domaine Einhart grow on the muschelkalk (oolitic limestone) soils of the Kreutzweg area. The grapes are harvested by hand and then pressed directly. Fermentation is carried out using indigenous yeasts. Aging on fine lees is ten months in century-old beer barrels (an Alsatian specialty) and precedes bottling without filtration. From the vine to the cellar, Riesling was produced without any additives or sulfites.
Tasting
A beautiful orange-yellow color. The first nose is very delicate, slightly musky, with notes of grapefruit and dandelion flower. The second nose is fresher and mineral with aromas of thyme, aromatic herbs, and flint. The palate begins with vivacity and a beautiful verticality, a minerality typical of limestone. The finish is persistent and saline. Decanting is recommended so that Riesling can spread its wings and express its mineral notes. You can serve this gem from the Einhart estate with any kind of dish; it is easy-going, but it also pairs well with cheese, roast poultry, sauerkraut, or smoked fish.

In the northern part of the Alsatian vineyard, the Einhart estate is a ten-hectare family estate whose vines grow in the foothills of the Vosges Mountains. The soil is clay-limestone and rich in fossils (muschelkalk, or shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone).
A family estate
Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is co-founder, Nicolas devotes his winemaking work to protecting the land and biodiversity, making wine without inputs, refusing harmful phytosanitary products, and maintaining ecological refuge areas. His estate has been certified organic (Ecocert and AB) since 2011. The estate produces white wines from maceration or direct pressing and a Pinot Noir red.
The best of Alsatian terroirs
Entirely manual harvests, destemming of the bunches, light punching down, and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees, and the absence of filtration before bottling. The wines are pure grapes, lively, powerful, invigorating, and transcribe the minerality of these very beautiful terroirs in the Vosges foothills.
Les Bonnes Quilles Blanc 2023
Domaine de Bois-Moisset
Originating from Gaillac in Occitanie, organic and natural, Les Bonnes Quilles is a white wine from Domaine Bois-Moisset, obtained through light maceration and classified as a Vin de France. This marvel of balance and aroma will seduce you with its personality and adaptability to all occasions.
Vinification
Les Bonnes Quilles blanc is a blend of three grape varieties: Loin-de-l'œil 70%, Muscadelle 20%, and Sauvignon 10%. The vines grow on the clay-limestone molasse soils of the first slopes of Gaillac and the grapes are harvested by hand. The harvest is directly pressed with a short five-day maceration for the loin-de-l'œil, a Gaillac variety named for the length of its petiole.
Tasting
Les Bonnes Quilles deserves its name: great freshness, original aromas of pear and grapefruit with notes of rose. An endearing white wine where the macerated loin-de-l'œil plays the role of a spice. This wine for friends and good food, with its sunny and convivial profile, will accept solid pairings, nothing scares it: roasted white meats, beautiful poultry, grilled fish or fish in sauce, or country cuisine.

In the heart of the oldest vineyard in France — that of Gaillac, in the Tarn — Sylvie Ledran, Philippe Maffre and their son Hippolyte watch over their Bois-Moisset estate, a wine-growing property associated with a mixed crop-livestock activity, all in organic farming. Gaillac is famous for its many very old indigenous grape varieties, and its wine-growing heritage is uniquely rich.
Cows and vines
The Bois-Moisset estate is also home to a herd of old local breed cows and guest rooms are available during the summer. It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years.
Native grape varieties
The grape varieties are dominated by Syrah and Duras, but the wines of the Bois-Moisset estate reflect the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l’œil, mauzac, braucol, ondenc, etc.). The red wines are crisply fruity, concentrated but with smooth and delicate tannins, the whites have character and the pet’ nat’ are particularly tasty.
Cuvée 0.72+ (exclusive cuvée) White 2023
De Vini
Vinified without additives or sulfites by Christophe Bosque of De Vini, 0.72+ is an organic and natural dry white wine. It comes straight from the land of Muscadet, the Loire estuary. Without having the appellation (it is classified as Vin de France), it can be considered a Muscadet and drunk as such.
In the vineyard and in the cellar
0.72+ white from De Vini is made from 100% Melon de Bourgogne (another name for the Muscadet grape variety) planted in Maisdon-sur-Sèvre (Loire-Atlantique) on gabbro soils characteristic of the region. Gabbro is a grainy igneous rock resting on a granite subsoil, contributing to the production of splendid, lively and mineral white wines. Gabbro and granite are Christophe Bosque's favorite soils. The wine was aged for one year on lees in buried cement vats (traditional in this region), without any additives.

Tasting
0.72+ white is excellent to drink now or later, well chilled. An elegant acidity mixed with a balancing roundness, a saline and salivating side make 0.72+ an unfailing companion to raw or smoked fish and seafood, especially oysters. This vintage also exists in red.

After spending years as a merchant, importer, then wine merchant, this former cameraman with a BTS in oenology-viticulture acquired a few plots (two hectares) of Melon de Bourgogne vines in Gorges, in Loire-Atlantique, near Clisson in 2017. The soils there are made up of gabbro on a granite substrate, a pedological configuration specific to the Nantes region and particularly to Clisson. Christophe is full of praise for this type of soil.
Muscadet for the better
Christophe's vintages may come from grapes purchased from the best French terroirs, particularly in Languedoc, but the winemaker retains a special affection for his vines, which he maintains with passion and attention to the terroir. A touch of humor and a sense of pun can be seen on his labels and in his appellations, but in the bottle, they are serious, off-the-beaten-track wines, just the way he likes them.

Canoupe Blanc 2022,
Danis dans la vigne
Canoupe is a white wine from Cahors made from organic and natural Colombard grapes, produced in Vin de France by Danis Bessières of Danis dans la vigne. It is a beautiful white from the Southwest of France with very advanced maturity. It is part of the "Esprit du lieu" range of single-plot cuvées vinified by Danis. Its name expresses the vigor and vitality of the estate's Colombards: "plant spears that reach for the sky." At the beginning of summer, the vine rises into vigorous foliage, like a canopy, hence the name Canoupe.
Vinification
Canoupe is not a white wine like the others. This single-plot cuvée was vinified with particular attention to the ripeness of the grapes, which is very advanced. Botrytis plays an important role, particularly in the color, which is sustained despite the direct pressing. A little controlled oxidation is also present.
Tasting
The style of Canoupe is intermediate, between freshness and maturity, with ripe aromas, candied citrus fruits, honeysuckle, spices: cardamom, cinnamon, Christmas spices. The color tends towards orange and the aromas are similar. Candied, jammy, with a touch of oxidation. A complex and powerful wine that is best reserved for the table and gastronomy rather than as an aperitif.

Under the name Danis dans la vigne, Danis Bessières vinifies organic grapes from the family estate, the Domaine de l'Antenet, which was the first organic vineyard in Cahors in the early 1980s.
Organic and natural since 1983
Danis respects the principles established in the vineyard and cellar by his grandfather and then his father: making wines without additives, organic and natural, from the grape varieties of the terroir while respecting the environment. It was in 1983 that his grandfather obtained the organic label Lemaire-Boucher, followed by Nature & Progrès and then the organic labels AB and Eurofeuille. Danis Bessières continues in this vein.
Malbec, but not only
Malbec reigns supreme in the Cadurcian region, but Danis also uses Cabernets, Jurançon Noir, Merlot, and recently created grape varieties, as well as Cabernet Sauvignon, Cabernet Franc, and Colombard as single-varietals. These experiments allow him to moderate the density and opacity of the main grape variety.

Vinification
Les Bonnes Quilles blanc is a blend of three white grape varieties: Sauvignon and Muscadelle (the majority) and Len-de-l’el (Loin-de-l’œil), a Gaillac grape variety named for the length of its stalk, at 10%. The vines grow on the clay-limestone molasse soils of the first slopes of Gaillac and the grapes are harvested by hand. The Sauvignon and Muscadelle are directly pressed and rest in vats, while Loin-de-l’œil, destemmed, macerates for eight weeks on the skins. The two vats are blended for bottling.
Tasting
Les Bonnes Quilles, the aptly named. An engaging white wine, opulent yet dry, where the macerated far-of-the-eye plays the role of spice. At once fresh, robust and pleasant, Les Bonnes Quilles is superbly aromatic on the nose and in the mouth. A wine for friends and good food, with a sunny and convivial profile. It will accept solid pairings, nothing scares it: roasted white meats, fine poultry, grilled fish or fish in sauce, or country cuisine (cassoulet, stews, carbonades, etc.).

Magnum Gauthier White 2022,
Gauthier is a dry, organic (AB label), biodynamic, and natural macerated white wine (orange wine) from Jean-Marc Dreyer, vinified in Alsace from all the grape varieties cultivated by the winemaker and without the addition of sulfites. Always packaged in magnums, it is simultaneously a rarity, a challenge, a curiosity, and a precious bottle to savor. Gauthier is the first name of a pilgrim on the Way of Saint James who spent some time with Jean-Marc Dreyer and took part in the work in the cellar. Having noticed that the blend of the fin de cuvée was excellent to drink, he suggested to Jean-Marc that he make a special cuvée: "It tastes so good, it would be a shame not to do it!" It tastes incredibly good, even, notes the winemaker.
Vinification
If you are familiar with Jean-Marc Dreyer's Origin range - a series of maceration vintages based on six Alsatian white grape varieties - you will find in Gauthier the synthesis and summary of this range. This wine is in fact the result of the blending of the fin de cuvée of each Origin reference. Once blended, the fin de cuvée are kept for two to three months in barrels to unify the flavors. No added sulfites, no additives, no filtration, indigenous yeasts.
Tasting
This atypical production makes Gauthier a full-bodied, characterful vintage, with a distinct touch of controlled oxidation. Gauthier, of course, contains no more sulfites or additives than the vintages it is made from. That is, zero. It is the synthesis of the Jean-Marc Dreyer estate, and that in itself is a tasting note: refer to each of the other vintages in the Origin range on this site to piece together the puzzle, or, better yet, drink it. With everything that goes with macerated Alsace whites, whether cheeses, local dishes, Lacaune charcuterie or Lyon.
Gewurztraminer Origin White 2022,
Jean-Marc Dreyer's Gewurztraminer Origin is an organic (AB label), biodynamic, and natural dry white wine from Alsace, made with maceration (orange wine), with no added sulfites. Jean-Marc Dreyer's Origin range consists of single-varietal cuvées based on six Alsatian grape varieties (Sylvaner, Auxerrois, Pinot Gris, Gewurztraminer, Riesling and Muscat), macerated on the skins with a touch of controlled oxidation, which gives a multidimensional nature to the Gewurztraminer grape variety, thus proving that it has never had its last word.
Vinification
The organically and biodynamically grown Gewurztraminer is harvested by hand and macerated for seven days in whole bunches. After pressing and fermentation, the wine is aged for ten to eleven months in the Alsatian style, in foudres and demi-muids, without topping up. Biodynamic method, fermentation by indigenous yeasts, unfiltered, unclarified, no sulfites added in the vineyard or in the cellar.
Tasting
Fragrant, powerful, sumptuous, disconcerting, addictive, structured in layers and of a surprising complexity, Gewurztraminer Origin is the gewurztraminer that you no longer expected, with an overpowering aromatic, without the sugar commonly associated with this grape variety. All the sugars have been eaten, what remains is an extraordinary richness of aromas, naked and unvarnished. Notes of mango, lychee, ylang-ylang, the bouquet of flowers and exotic fruits is there, sublimated by a dry and straight frame. This wine screams for foie gras, with or without truffle, but it can be drunk with everything from seafood to land.

Jean-Marc Dreyer, a biodynamic and natural Alsace winemaker (AB organic certification label), succeeds several generations of his family at the Dreyer & Fils estate, established in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics. In 2009, upon returning from a pilgrimage to Compostela, he decided to never again add sulfur to any wine. Having made this decision, he affirmed his style around skin maceration, accentuated and chiseled, bringing out the soul of the Alsatian grape varieties. Jean-Marc also works with direct pressing and often with single varietals. He also produces Pinot Noir reds of surprising depth.
Maceration and Direct Press
Jean-Marc Dreyer's wines are characterized by whole-bunch maceration (but you should also taste his direct-press whites). "Maceration in Alsace," he says, "is an ancestral tradition! In the past, we worked by hand and let the grapes macerate before sending the marc to the press." Gentle oxidation is also a particular characteristic of his wines, generally vinified without topping up. Jean-Marc is best known for his “Origin” series, a finely macerated expression of Alsace grape varieties, but we invite you to discover his other wines.

Vinification
Riesling, the king of Alsace's white grape varieties, forms the basis of this organic and natural wine. After pressing and fermentation, the wine is aged for ten to eleven months in the Alsatian style, in foudres and demi-muids, without topping up. Auxerrois Origin White 2022,
Auxerrois Origin by Jean-Marc Dreyer is an organic (AB label), biodynamic, and natural dry white Alsatian maceration wine (orange wine), with no added sulfites. Jean-Marc Dreyer's Origin range consists of single-varietal cuvées based on six Alsatian grape varieties (Sylvaner, Auxerrois, Pinot Gris, Gewurztraminer, Riesling, and Muscat), enhanced by skin-contact maceration with a touch of controlled oxidation. The discovery of each Origin vintage is always a pleasant surprise.
Vinification
Auxerrois, or Pinot Auxerrois, is a typically Alsatian grape variety with floral and spicy notes. The harvest, done by hand, is macerated for seven days in whole bunches. After pressing and fermentation, the wine is aged for ten to eleven months in Alsatian style, in tuns and demi-muids, without topping up. Tasting
Floral, fresh, seductive, slightly smoky, Auxerrois Origin by Jean-Marc Dreyer is both atypical and delicious. The maceration gives it a distinguished chew on very fine tannins. With its amber color, floral notes, seductive bitters, delicious salinity, hints of white peach and citrus, and perfect straightness, it is ready for any pairing. A bellota Iberico ham would melt with happiness next to it, but it will also be a delight alongside smoked fish, seafood platters, mature cheeses, or white meats. Tri-Aux White 2022,
Tri-Aux is an organic, biodynamic, and natural dry white wine from Alsace (AB label) produced by Jean-Marc Dreyer without added sulfites. Its name is a play on words based on its composition: three successive vintages of the Auxerrois grape variety.
Vinification
Auxerrois or Pinot Auxerrois is a typically Alsatian white grape variety. For all three vintages, the harvest is vinified using direct pressing, fermented, and then aged in barrels for one to three years. The resulting wines are blended to create this cuvée. Tri-Aux is a lovely, seductive and fresh wine, aromatic and floral, delicious and dry at the same time. Sylvaner Siggi White 2017,
Siggi (the s is pronounced z) is an organic, biodynamic, and natural Alsatian dry white wine (AB label) from Jean-Marc Dreyer, vinified from Sylvaner grapes without added sulfites. A beautiful aging process (seven years, the age of reason) allows Siggi to be appreciated at its peak.
Vinification
The Sylvaner grapes from Jean-Marc Dreyer's estate, grown organically, are hand-harvested and directly pressed. The wine undergoes two years of maturation in foudres and finishes this maturation in bottles. No topping up, no addition of sulfites or other additives, no filtration.
Tasting
Clean orange color, nose of citrus and dried fruits and a little sparkle at the opening. Woody palate, controlled oxidation, walnuts, hazelnut, acidity comes next with notes of peach and nectarine associated with leather and yeasty touches, not to mention saline and iodized notes. The finish returns to hazelnut. This incredible complexity gives Siggi a key to all pairings. It will be paired with cheeses, spicy cuisine, Indian curries and Réunion curries. Argilla Ramato Rosé 2021
Terre Pianca
Argilla Ramato 2021 from Terre Pianca is a captivating wine that showcases Pinot Gris in an unusual expression, with a ramato (coppery) hue achieved through skin maceration. This process, typical of Friuli, reveals all the aromatic richness and structure of this iconic grape variety, while giving it a delicately tinted color, ranging from light red to deep orange.

On the border between Veneto and Friuli-Venezia Giulia, but located in the latter province, dependent on the town of Pordenone, Sacile is a small town crossed by the Livenza River, which continues its path towards the Adriatic. This is where the owners of the Terrepianca estate cultivate several indigenous Friuli grape varieties on twelve hectares of clayey soil: refosco (the transalpine equivalent of mondeuse), refosco dal peduncolo rosso (refosco with a red stalk), pinot grigio (pinot gris) and friulano (large-grained sauvignon in France). They produce light and fragrant natural wines, often sparkling (frizzante), using organic and biodynamic farming methods without adding any inputs to the vineyard or cellar. Fermentation is carried out using indigenous yeasts; no filtration is carried out. So far, Terrepianca produces two still wines, red and white (Argilla) and two sparkling wines, rosé and white (Argine).

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. Having observed, during his years of trading, the existence of harmful wine-growing practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked for a while as a wine broker before creating the domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations.
In 2006, he created his own wine trading house and bought organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais vintages. The exercise is not limited to Burgundy, as vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular ploughing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Red or white, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and coveted wines, which sometimes require waiting.

Magnum Alburostre White 2022
Alburostre is an organic, biodynamic, and natural white wine made by Christophe Bosque (De Vini) in the Nantes region from the Folle-Blanche grape variety. It comes from vines growing in Gorges (Loire-Atlantique), on the winemaker's estate, on gabbro soils. Classified as a Vin de France. Folle-Blanche or Gros-Plant is a typical grape variety of the Nantes region, where it has been known since the 16th century and thrives on gabbro soils. Very suitable for distillation, it is also a grape variety used in Armagnac and Cognac. It typically produces low-alcohol, pale-colored wines: Alburostre is all of these things.
Vinification
The organic folle-blanches harvested for Alburostre are pressed directly, fermented with indigenous yeasts, and then the wine is aged for nine months on lees in stoneware jars. No fining, sulfiting, or filtration.
Tasting
Alburostre means "white-beak" in old French. Aside from the paleness of its color—typical of folle-blanche—there is nothing inexperienced about it. It is a very beautiful, easy-drinking white wine (10 degrees alcohol), supple, pleasant, chiseled, and pure. A beautiful yeasty fermentation note rises above its simple description to envelop the palate and further accentuate the wine's length. Very gourmet: reserve it for the finest smoked salmon, seafood, and even caviar. The winemaker recommends salmon tartare with coriander, pollack steak with beurre blanc, or steamed barnacles.

De Vini, along with the Vinilibre winery, is the multifaceted business of Christophe Bosque, originally from Saint-Nazaire. He has always been passionate about wine. We are particularly interested in his local creations, produced from his vineyard of some two hectares and fermented in buried vats in the Nantes style - a true reinvention of Muscadet (outside the appellation) in natural mode.
Gabbro Fondu
After spending years as a merchant, importer, then wine merchant, this former cameraman with a BTS in oenology-viticulture acquired a few plots (two hectares) of Melon de Bourgogne vines in Gorges, in Loire-Atlantique, near Clisson in 2017. The soils there are made up of gabbro on a granite substrate, a pedological configuration specific to the Nantes region and particularly to Clisson. Christophe is full of praise for this type of soil.
Muscadet for the better
Christophe's vintages may come from grapes purchased from the best French terroirs, particularly in Languedoc, but the winemaker retains a special affection for his vines, which he maintains with passion and attention to the terroir. A touch of humor and a sense of pun can be seen on his labels and in his appellations, but in the bottle, they are serious, off-the-beaten-track wines, just the way he likes them.
Xarel lo Macabeu White 2019
Xarel lo-Macabeu is, as its name suggests, a blend of equal parts Catalan Xarel lo and Macabeu grape varieties grown in Pla de Penedès (Alto Penedés) on clay-limestone soils at an altitude of between 200 and 230 meters. The vines are between 35 and 45 years old. The grapes are sorted, crushed, and macerated with the stems and skins, two days for the Xarel lo and one day for the Macabeu. Fermentation takes place in stainless steel tanks and the two grape varieties are blended after alcoholic fermentation. The wine is fragrant, dry, aromatic, mineral, with balanced acidity and a touch of controlled oxidation.

Cyclic Beer Farm is a duo of Barcelona friends, Alberto and Joshua. Based in the Catalan capital, they have two sides to their business: beer (Cyclic Beer) and wine (Cyclic Wine). The beers, inspired by the Belgian model, come in surprising and colorful ranges where expertly measured yeast cocktails and house brews combine with varied macerations of fruits, vegetables, herbs and grape marc from traditional Catalan varieties, the latter taken after the fermentation of their wines - because the second side is the wine, made exclusively from native Catalan grape varieties. As merchant winemakers, Alberto and Joshua personally harvest by hand from organic wineries throughout Catalonia and bring the harvest back to their brewery-cum-winery workshop in La Sagrera (Barcelona). There, they sort the grapes, tread them by foot, and ferment the must using exclusively indigenous yeasts. Depending on the type of wine, skin maceration takes place on the skins and stems for between one and three days for whites and between six and fifteen days for reds. The free-run juice is then transferred without pressing into stainless steel tanks where fermentation continues before bottling. The skins and stems, and sometimes part of the juice, are then used for the maceration of saison beers: an interesting synergy between beer and wine. No sulfites are added during vinification; nothing is added to or removed from the wine, which is never filtered. The harvest and other viticultural operations are decided according to the lunar calendar.
Divin Poison White 2020,
Divin Poison is an organic, biodynamic, and natural dry white wine made by Christophe Bosque of the De Vini estate using melon de Bourgogne grapes from the Nantes region. Classified as a Vin de France and harvested on gabbro soils characteristic of the region, it has all the hallmarks of a (very good) Muscadet, except for the appellation.
Gabbrodo White 2021,
The Gabbrodo 2021 from De Vini (Vinilibre) is an ode to the terroir of the Pays Nantais. This natural wine without any additives delicately expresses the Melon de Bourgogne, the region's emblematic grape variety. Made from gabbro soils, a rare volcanic rock in the Loire region, it benefits from a nine-month aging in sandstone jars, giving this exceptional white remarkable purity and tension.
Its pale color with golden highlights announces a luminous and crystalline wine. The nose seduces with its freshness and aromatic complexity: notes of citrus (lemon, grapefruit), white fruits (pear, peach), and a hint of iodine that recalls its maritime origins. On the palate, the attack is frank and lively, driven by beautiful acidity and sharp minerality. The aging in jars adds a silky texture while preserving the wine's tension and freshness. The finish is long and saline, with a delicately smoky persistence that invites further sipping.
The Gabbrodo 2021 is an ideal companion to seafood. It will enhance scallops with truffles, grilled lobster, sea bass in a salt crust, or pikeperch with beurre blanc. Serve between 10 and 12°C, it can be enjoyed now for its brilliant freshness or can be cellared for 5 to 10 years to reveal all its complexity.
