Puligny Montrachet White 2022
This Puligny-Montrachet AOP is a dry, organic, natural white Burgundy wine vinified by Frédéric Cossard. Frédéric produces several Puligny-Montrachet vintages, including this one with no climate indication, but endowed with all the graces of this great white wine appellation from the Côte de Beaune, one of the most prestigious in Burgundy.
Vinification
Puligny-Montrachet is made from Chardonnay grown on clay-limestone soil. This is a direct-press wine, aged for at least one year.
Tasting
A marvelous fusion of richness and dryness, Frédéric Cossard's Puligny-Montrachet has great aging potential. With age, its aromas lean more and more towards earthy, mineral notes, with smoky accents and a magnificent affinity with truffle. Between viticulture and trading
Frédéric Cossard created the Domaine de Chassorney in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, then ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. Since the recent sale of this estate, Frédéric continues to manage his trading house, created in 2006 in his own name. He vinifies grapes from the greatest climates of Burgundy, but also from the Jura, Languedoc and elsewhere.

Gewurztraminer Origin White 2022,
Jean-Marc Dreyer's Gewurztraminer Origin is an organic (AB label), biodynamic, and natural dry white wine from Alsace, made with maceration (orange wine), with no added sulfites. Jean-Marc Dreyer's Origin range consists of single-varietal cuvées based on six Alsatian grape varieties (Sylvaner, Auxerrois, Pinot Gris, Gewurztraminer, Riesling and Muscat), macerated on the skins with a touch of controlled oxidation, which gives a multidimensional nature to the Gewurztraminer grape variety, thus proving that it has never had its last word.
Vinification
The organically and biodynamically grown Gewurztraminer is harvested by hand and macerated for seven days in whole bunches. After pressing and fermentation, the wine is aged for ten to eleven months in the Alsatian style, in foudres and demi-muids, without topping up. Biodynamic method, fermentation by indigenous yeasts, unfiltered, unclarified, no sulfites added in the vineyard or in the cellar.
Tasting
Fragrant, powerful, sumptuous, disconcerting, addictive, structured in layers and of a surprising complexity, Gewurztraminer Origin is the gewurztraminer that you no longer expected, with an overpowering aromatic, without the sugar commonly associated with this grape variety. All the sugars have been eaten, what remains is an extraordinary richness of aromas, naked and unvarnished. Notes of mango, lychee, ylang-ylang, the bouquet of flowers and exotic fruits is there, sublimated by a dry and straight frame. This wine screams for foie gras, with or without truffle, but it can be drunk with everything from seafood to land.

Sylvaner Siggi White 2017,
Siggi (the s is pronounced z) is an organic, biodynamic, and natural Alsatian dry white wine (AB label) from Jean-Marc Dreyer, vinified from Sylvaner grapes without added sulfites. A beautiful aging process (seven years, the age of reason) allows Siggi to be appreciated at its peak.
Vinification
The Sylvaner grapes from Jean-Marc Dreyer's estate, grown organically, are hand-harvested and directly pressed. The wine undergoes two years of maturation in foudres and finishes this maturation in bottles. No topping up, no addition of sulfites or other additives, no filtration.
Tasting
Clean orange color, nose of citrus and dried fruits and a little sparkle at the opening. Woody palate, controlled oxidation, walnuts, hazelnut, acidity comes next with notes of peach and nectarine associated with leather and yeasty touches, not to mention saline and iodized notes. The finish returns to hazelnut. This incredible complexity gives Siggi a key to all pairings. It will be paired with cheeses, spicy cuisine, Indian curries and Réunion curries. It is also a good partner for well-roasted poultry and pata negra ham. We recommend a good decanting.

Bigotes is a dry, organic, and natural white wine made by Frédéric Cossard from Chardonnay. Although it is a "generic" white Burgundy, it clearly bears the mark of its terroir and the winemaker. Bigotes is, in a way, the white counterpart of the Bedeau red cuvée.
Vinification
Bigotes is produced by Frédéric Cossard on a small plot of Chardonnay in the Burgundy regional appellation, on clay-limestone soils. This is a direct-press, organic wine, with no added sulfites.
Tasting
Bigotes is characterized by tension and indulgence. On the nose, the aromatic attack is lemony, lingering with yellow fruits. On the palate, tension, fullness, indulgence, a little fat, and plenty of aromatic persistence. i Vicini Moscato White 2021
I Vicini Moscato is an organic, biodynamic, and natural macerated (orange) dry white wine from Jean-Yves Péron. Vinified in Savoie from Muscat d'Asti. It is part of the I Vicini series of cuvées, vinified in Savoie from organic grapes from Northern Italy. The muscats grow on very fine limestone soils, calcareous-magnesian, on a particularly cool site.
Vinification
The Muscat d'Asti grapes, harvested manually at good phenolic maturity, macerate for three months in vats on the skins, with punching down. Racking off in January, aging for one year in 300 l barrels. No filtration, fining or addition of sulfites.
Tasting
Straightness, tension and freshness: this very fine mountain Muscat offers the aromatic and musky nose specific to the grape variety, without any syrupy notes. A very present tannic structure balances the whole. On the palate, it is rich and powerful; we find the charming scent of Muscat in the retro-olfaction, but with the tension and freshness that Jean-Yves Péron favors for his dry whites. It’s a great table wine, not really for an aperitif, but for gastronomy, no limits.

Jean-Yves Péron skillfully embodies the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies the grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron’s work follows the principles of minimal intervention. On narrow, steep surfaces, his mountain vines in micro-plots, worked by hand, receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The grapes are vatted in whole bunches and undergo semicarbonic maceration. Shortly before pressing, they are foot-trodden in the vat, then sent to two- or three-wine barrels for twelve months of aging on lees, before blending and resting in the vat. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
Night Potion Skin Contact White 2021,
Night Potion Skin Contact is an organic and natural dry white wine certified CCPAE (Catalan Council for Organic Agriculture) and biodynamic, produced by Clos Lentiscus in the Baix-Penedés region (Catalonia).
Vinification
Produced on the limestone soils of the Garraf Natural Park, Night Potion Skin Contact is made using skin maceration, hence its name and its solid, structured yet velvety character. It is made from 100% native Catalan grapes, xarel lo, and is vinified in terracotta containers.

In a superb landscape of Mediterranean greenery, Manel Avinyo, nicknamed "the Bubbleman", his brother Joan and his daughter Núria specialize in cavas, sparkling wines made using the traditional method, and also make some still wines, all biodynamically, without added additives or sulfites.
History of Clos Lentiscus
The family has been established here since at least the 14th century. When the two brothers took over the estate, organic, biodynamic and additive-free winemaking replaced conventional practices, allowing this beautiful property to regain its former prestige: in the 19th century, its wines were sold in France and as far away as the Americas.
The Clos Lentiscus style
Purity, elegance and a crisp minerality characterize the organic and natural wines of Clos Lentiscus. This Catalan estate also produces still wines. The grape varieties are traditionally Catalan: Sumoll, Ull de Llebre, Xarel-lo, Cartoixà Vermell, Cariñena, and especially Malvasia from Sitges, accompanied by Tempranillo and Muscat from Alexandria. The vines are old, sometimes centuries old. No synthetic additives are used in the vineyard, where operations are dictated by the lunar phases. Pollination is facilitated by the presence of beehives, whose honey sometimes supports the secondary fermentation of the grapes.
VY Vinyater White 2020
Partida Creus
Rounded, buttery, expressive, and mineral, VY Vinyater first reveals a nose of white fruits and white flowers. Lemon zest and a hint of beeswax. On the palate, it offers volume and body, with a very long finish. Made from old vines (sixty years old) of the Catalan Vinyater grape variety growing on clay-limestone soil, aged in fifty-liter demijohns and classified as Vino de Mesa (table wine), VY Vinyater is a fresh and seductive white that excels with seafood, grilled white meats and sweetbreads, but it can also seduce without any accompaniment or pretext.

Partida Creus is an important estate, both in terms of wine and history – we are talking here about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont – and even from the Langhe region, where they know a lot about wines – first pursued a career as architects in Barcelona. But the wine bug tickles them, and soon they abandon the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they find a quantity of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revive to save these varieties – and their wines – from oblivion. The wines reflect this diversity, with the winemakers striving to best convey the signature of the soil and the grape variety: single-variety wines are common among them, alongside extensive blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that denote the vintage. Full of fresh fruit and fragrant white flowers (gardenia, jasmine, etc.), elegant and dense… Mineral, fresh, powerful, and long-aging, this wine has it all. This pure Chardonnay comes from a steep plot located between 280 and 400 meters above sea level. The soils are mainly marl, limestone, and clay. Les Spontanés de GILG
The color of this beautiful dry natural Sylvaner is pale yellow with golden highlights. The nose is powerful and complex, laden with aromas of ripe stone fruit. On the palate, it is round, spherical, polished, generous, and slightly rich, with notes of grapefruit and peach. The finish is long and full of flavor. Within the diverse range of wines produced by the Gilg family, the Les Spontanés series is dedicated to natural wines, with no additives or sulfites added in the vineyard or cellar. This pure Sylvaner comes from young vines, aged eight years; It is ready to drink now and is ideally served between 8 and 10 °C.

Belonging to a family established since 1601 in the Alsatian wine-growing village of Mittelbergheim, the Armand Gilg estate bears the name of its founder, who resolutely oriented the family business towards viticulture in 1937. Since then, the Gilgs have remained in charge, having expanded the vineyard from an initial one hectare to twenty-nine hectares, purchased centuries-old cellars for bottles and tuns, and built buildings for pressing and other winemaking activities. The estate, classified as HVE (High Environmental Value) for several years, acquired organic farming certification in 2021. Its plots, scattered around the village, are grouped into around a hundred groups, including five hectares on the famous Grand Cru of Zotzenberg, one of the most renowned lieux-dits in Alsace, and one hectare planted solely with Riesling on the Grand Cru Moenchberg. Production embraces all seven traditional Alsatian grape varieties (Pinot Noir, Sylvaner, Auxerrois, Riesling, Muscat, Pinot Gris and Gewurztraminer), also including Chardonnay for the Crémants and the Klevener de Heiligenstein (Savagnin Rose). While all the vintages of the Gilg estate are organic, two natural vintages are produced, one based on Pinot Noir, the other on Sylvaner, within the Les Spontanés series dedicated to wines without additives.

This Pinot Noir from the Qvevris series (aged in Georgian-style terracotta jars) comes from a plot whose sloping terroir, facing south-southeast, is located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are mainly marl, limestone and clay. The grapes macerate in whole bunches. Plenty of fruit and roundness supported by a sumptuous minerality. Coteau Libre White 2015
Two Grenaches for the pleasure of one, and not just any: Grenache Blanc and Grenache Gris from vines planted on terraces on clay-siliceous soils. Aged for four years in barrels, Coteau Libre is one of those wines whose texture is evident on the nose. On the palate, it has a beautiful density and a very respectable length.

Avec Les Vignes Blanches Qvevris 2023, Frédéric Cossard continue de repousser les frontières de la Bourgogne classique, en proposant un Mercurey rouge vinifié avec audace et précision. Cette cuvée issue de Pinot Noir planté sur sols argilo-calcaires s’inscrit dans une démarche profondément naturelle, fidèle à la philosophie sans compromis de ce vigneron pionnier : aucun intrant de synthèse à la vigne, vinification sans intrants œnologiques, et fermentation exclusivement avec levures indigènes.
La macération en grappes entières durant trois semaines permet une extraction douce et subtile. Mais c’est l’élevage d’un an en amphores géorgiennes (qvevris) qui confère à cette cuvée sa signature si particulière. Loin des boisés classiques de Bourgogne, l’amphore respecte la matière et amplifie la pureté du fruit, tout en apportant une belle sphéricité en bouche.
Au nez, le vin s’ouvre sur des notes franches de griottes, de fruits rouges croquants et d’infimes touches florales. En bouche, l’équilibre est remarquable : les tanins sont souples, la trame est fraîche, et l’ensemble glisse avec élégance, sans renier la profondeur minérale du terroir de Mercurey. Le profil reste fin, vibrant et d’une buvabilité étonnante, parfait pour ceux qui recherchent une interprétation moderne, vivante et épurée de la Bourgogne.
Idéal à table, il accompagnera aussi bien des poissons grillés que des viandes blanches rôties. Sa finesse lui permet également d’épouser des plats végétariens délicats. Vigneron nature de Bourgogne, il cultive aussi des raisins dans d’autres régions, comme ici dans le Jura, pour en révéler une expression personnelle et sincère. Fidèle à sa philosophie, cette cuvée est issue d’une vinification sans intrants, sans levures ajoutées, et sans sulfites. Le résultat : un vin vivant, pur, et intensément gourmand.
Pinot Noir jurassien, vinifié en Bourgogne
Cette cuvée 100 % Pinot Noir provient de raisins cultivés dans le Jura, sur des sols argilo-calcaires, puis vinifiés dans le chai de Frédéric en Bourgogne. Une macération en grappes entières de deux semaines permet une extraction en douceur, avant un élevage de 8 mois en cuve inox, pour préserver l’éclat du fruit et la tension naturelle.
Un rouge frais et fruité, facile mais pas simple
Au nez, on retrouve des arômes nets de petits fruits rouges, de griotte et une touche florale légère. La bouche est souple, digeste, avec une trame minérale et des tanins fins qui structurent sans dominer. L’ensemble est juteux, désaltérant, et d’une belle pureté. À 11 %, ce vin allie légèreté et caractère.

Vigneron à part, Jean-Pierre Robinot compose ses vins comme on écrit un poème : avec attention, patience et intuition. Il élabore des Chenins profonds, vibrants, toujours sans intrants ni soufre ajouté. Son approche lente de la vinification, associée à une écoute du rythme naturel du vin, donne naissance à des cuvées puissantes et pleines de relief.

Cette cuvée 2022 est issue de vignes cultivées sur sols argilo-calcaires, dans un climat propice à la maturité. Le raisin, pressé directement, est ensuite élevé pendant un an en barriques de plusieurs vins, permettant une oxygénation lente et subtile, sans apport boisé marqué. Bistrologie, l’énergie du fruit dans le calcaire
Issue de vignes cultivées sur sols argilo-calcaires, cette cuvée 100 % Chenin blanc offre une expression franche et gourmande du cépage. Après un pressurage direct, le vin est élevé pendant un an en barriques ayant déjà contenu plusieurs vins. Ce contenant neutre permet une oxygénation lente sans influence boisée, pour un résultat pur et cristallin.
Fruits confits, minéralité et tension
Le nez évoque l’abricot mûr, le coing, les fleurs blanches et une touche de miel sec. En bouche, l’attaque est fraîche et tendue, puis le vin s’arrondit avec un joli volume porté par les fruits blancs confits. L’équilibre entre la vivacité et la richesse naturelle du Chenin est maîtrisé. La finale minérale, légèrement saline, prolonge le plaisir avec élégance.

Lumière de Silex, un Chenin sur schistes
Cette cuvée est issue de parcelles plantées sur des sols de schistes dans l’appellation Anjou, terroir idéal pour le Chenin blanc. Le pressurage direct permet une expression nette du fruit, sans extractions ni maquillage. Le vin est ensuite élevé un an en barriques ayant déjà contenu plusieurs vins, pour oxygéner sans marquer.
Ampleur, tension, longueur iodée
Lumière de Silex se déploie avec grâce : le nez s’ouvre sur des fleurs blanches, la pêche, une touche de fruit exotique. En bouche, l’attaque est ample, ronde, avec une texture généreuse, équilibrée par une tension minérale qui étire la finale. Cette finale justement, iodée et persistante, évoque la roche et le sel, et appelle un deuxième verre.
À table : finesse et profondeur
Parfait avec des fromages à pâte molle, des poissons grillés ou en sauce, ou encore des viandes blanches. Servir frais, entre 10 et 12°C. Ce vin nature peut se déguster jeune, pour sa fraîcheur et son fruit, ou se garder plus de dix ans pour révéler sa complexité tertiaire et sa verticalité.
La Grande Chaude, Blanc 2023

Avec La Grande Chaude 2023, Philippe Chatillon nous livre une cuvée d’auteur, où le Chardonnay, cépage noble du Jura, trouve une expression ciselée et profondément minérale. Cette cuvée certifiée en agriculture biologique, classée en AOC Côtes du Jura, est issue d’un terroir rare et complexe : des marnes rouges du Lias enrichies d’un banc de dolomie – une roche calcaire tendre – qui structure le sommet de la parcelle. Cette composition unique, située à Passenans, confère au vin une tension naturelle et une grande précision aromatique.
Les vignes de 60 ans livrent un fruit concentré, que Philippe Chatillon vinifie en pressurage direct, sans artifice, avant un élevage de deux ans en barriques anciennes, où le vin se construit lentement, à l’abri du bois neuf, dans une pure logique de respect du vivant.
Le nez s’ouvre avec élégance sur des agrumes zestés, des fleurs blanches, des notes briochées discrètes, le tout porté par une minéralité crayeuse bien présente. En bouche, la texture est droite, tendue, précise, presque saline, avec une longueur qui laisse une sensation de pureté saisissante. C’est un vin blanc gastronomique, intense mais jamais lourd, qui combine la fraîcheur du Jura avec la profondeur du grand Chardonnay.
À table, La Grande Chaude sublimera aussi bien un poisson grillé, une volaille crémée ou un risotto aux champignons. À carafer pour lui laisser le temps de respirer, il se servira entre 10 et 12°C et pourra évoluer sur 5 ans.
