Skin-Contact Rafling White 2021
Classified as a Vin de France, Skin Contact Rafling is a wine resulting from a fairly extensive skin maceration: hence the presence of "Skin Contact" on the label. "Rafling" is a play on words relating to the maceration on stems (whole bunches) and the name of the Riesling grape variety. It is a dense and robust wine that is both round and straightforward, elegant and full of personality. Our national Frédéric Cossard, as comfortable with Burgundian-style winemaking (but without additives) as with the multi-colored refinements of merchant winemaking, offers us here a Riesling from twenty-five-year-old biodynamic vines harvested in Alsace on clay-limestone soil. Maceration is three weeks in whole bunches. Don't worry too much about food and wine pairings, this one is made for all occasions and can even compete with dishes that we usually think are reserved for red wine. Its aging potential—at least ten years—is generous.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years of trading, the existence of harmful wine-growing practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice which are among the most sought-after in Burgundy. Frédéric worked for a time as a wine broker before creating the domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own wine merchant house and purchased organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais vintages. The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular plowing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. Fleurie, Red 2020
Domaine Bélicard
Among the ten Beaujolais crus, Fleurie is undoubtedly the most ethereal, the most floral, and Domaine Bélicard offers a natural and elegant interpretation here. This 100% Gamay Noir, organically certified, grows on the granitic slopes of the cru, which give this wine remarkable mineral finesse.
Gentle winemaking for a delicate wine
The grapes, picked at perfect ripeness, undergo a short maceration of a few days to extract just enough matter without harshness. Fermentation occurs naturally, without exogenous yeasts or additives. The six-month aging takes place in barrels that have held several wines (not new), bringing complexity and suppleness without masking the fruit.
A Fleurie of character with finesse
The nose is expressive, featuring fresh red fruits, violet, and a subtle spicy touch. On the palate, the texture is fine, the structure supple yet present, with a mineral tension that lengthens the finish. The style is silky, digestible, almost floral, but without mawkishness – a straightforward, vibrant, and well-balanced Fleurie.

Amoroso Rouge
Distillerie Sentema
Amoroso Rouge has nothing in common with traditional, syrupy industrial vermouths. This audacious creation from Distillerie Sentema, nestled in the Alpes-Maritimes, shatters the codes of red vermouth by offering a dry, complex, and vegetal version, entirely rooted in the Provençal terroir.
The base is a succulent and juicy Syrah from Domaine de Garbelle, cultivated in the Var region. This wine is fortified with a local wine spirit, then infused for two weeks with a bouquet of wild plants from the Var garrigue: Barjols absinthe, savory, rosemary, oregano, agastache, as well as bitter orange zest harvested in the Alpes-Maritimes.
The result? A dry, taut vermouth, with no added sugar, driven by structuring bitters, an intense palate, and a savory finish that evokes green olives and sunshine. On the nose, a deep aromatic profile emerges: rosemary, dried herbs, citrus zest. On the palate, the attack is direct, with a perfect balance between the black fruit of the Syrah and the bitter touch of the botanicals. The long, fresh finish, subtly aniseed by the absinthe, evokes a sun-drenched corner of the garrigue.
Ideal as an aperitif, Amoroso Rouge can also elevate a Mediterranean Negroni or be served neat, on the rocks, with an orange twist.

Marty Red 2022
Danis dans la Vigne
A straightforward and fleshy Malbec, from an exceptional terroir
Marty 2022 is much more than just a wine: it's a vibrant tribute to the deep terroir of Cahors, and particularly to one of the most beautiful plots of the Danis estate in the vineyard. This Malbec, from clay-limestone soils, cultivated organically and without any synthetic chemicals, produces a dense, juicy, and profoundly sincere natural wine.
Short maceration, followed by 8 months of aging in stainless steel tanks, preserves the integrity of the fruit while revealing the finesse of the grape variety. With no added inputs and only indigenous yeasts, this wine respects the spirit of living wine, offering an elegant and clear expression of Malbec, far from heavy extractions and pronounced oakiness.
A vibrant, structured yet supple red
From the first pour, Marty 2022 displays a deep purple color with violet reflections. The nose is immediate, generous, blending aromas of ripe black fruits, candied fruit, and a subtle touch of leather, evoking the noble rusticity of the grape variety. On the palate, the attack is supple, followed by a beautiful, melted tannic structure, without harshness, and carried by a lovely freshness. It's a wine that is both gourmet and serious, perfect for accompanying grilled red meats, stews, or a fine cut of aged beef.
Serve between 16 and 18°C, it can be enjoyed now or aged 5 to 10 years in the cellar to gain even more complexity. A modern and lively Cahors, like a bridge between tradition and freedom.
Vino Rosso Red 2018,
Corva Gialla
Vino Rosso, simply named, can be considered the emblematic red of Azienda Corva Gialla. Red fruits, freshness, mineral and earthy notes, tertiary aromas, spices, and tobacco: this is how we can summarize the profile of this 100% Sangiovese with the Vino da Tavola (table wine) designation. With a few years of bottle age, this 2018 offers beautiful notes of evolution and a pronounced but not excessive body. The richness, due to a high content of natural sugars during fermentation, and the polyphenolic maturity are remarkable, as well as the balance between velvety and tannicity, lightness and body, roundness and acidity. On the nose, notes of spices such as cinnamon, black pepper and fennel; on the palate, the wine is full-bodied and red fruits dominate: ripe cherry, raspberry and strawberry. Black fruits and plum are not left out, and delicious aromas of dried fruits (prune, fig) combine with spices on the finish. Vino Rosso is a classic Sangiovese from old and newer vines planted at 450 meters above sea level on a west-facing plot with volcanic soils. The harvest is destemmed. A starter culture is made from a small proportion of grapes, while the rest is directly pressed and added directly to the starter culture. The wine rests in fiberglass vats until bottling in March.

Azienda Corva Gialla ("yellow crow") is a wine estate in Lazio, Italy, located on the edge of Umbria in the Alta Tuscia Viterbese. A volcanic region considered one of the most beautiful in Italy and characterized by its calanches, tall tuff rock formations delineating deep valleys carved by numerous rivers and streams. Corva Gialla is located in Lubriano, opposite Cività di Bagnoregio. Alta Tuscia is a breeding ground for young winemaking talents dedicated to nature who are enhancing these historically neglected lands. Founded in 2017, the estate has four hectares cultivated by Beatrice Arweiler, originally from another wine-growing region, between the Rhine and the Moselle. The new owner also planted an olive grove (Frantoio and Leccino varieties) and developed the estate for mixed farming and livestock production. The vines were planted with the help of Gian Marco Antonuzzi of the Le Coste estate. The friable volcanic soil lends itself beautifully to viticulture and the planting of grape varieties such as Grechetto d'Umbria, Trebbiano, Vermentino, Sangiovese, and Ciliegiolo. The estate's wines are quintessentially Italian, meaning they are crafted primarily for enjoyment. They are straightforward, deep, and easy to drink, expressing the strong minerality of their soils.
Pommard Rouge 2021
Domaine de Chassorney
The illustrious Burgundy vineyard of Pommard, the epitome of Burgundy red wine, is represented here by Frédéric Cossard in the form of this beautiful wine full of red fruits and voluptuousness. On the palate, it is supple and light, but also has presence and personality. A straightforward, loyal, taut wine, adored by the ancient Dukes of Burgundy. The soils are clay-limestone and well-drained at the lower slopes, and at higher altitudes are Oxfordian marl, brown calcic and brown calcareous soils. Occasionally, a red tint emerges, revealing iron oxide. Pommard retains a virile and assertive reputation, especially inherited from the 19th century. However, it reveals itself to be sensitive, supple, and feline, tending towards leather, pepper, and chocolate with age. It is best to let this wine age a little to allow it to express its full potential. The Pinot Noir harvest on clay-limestone soil is macerated for three weeks in whole bunches before aging for a year in concrete eggs.

With YARD 2022, Les Souriants estate offers an original and captivating interpretation of Pinot Noir in Beaujolais, a region more accustomed to Gamay expressions. This natural red wine, certified organic, is a pure artisanal product, crafted with care and patience to offer a luminous and sincere expression of the grape variety, without embellishment or artifice.
Coming from vines grown on granitic soils, Pinot Noir finds a mineral tension and vibrant freshness here, far from clichés of opulence. The winemaking remains gentle and precise: a one-month maceration to delicately extract color, aromas, and structure, followed by one year of aging in old barrels, without new wood, to preserve the finesse of the fruit.
On the nose, it's a floral and fruity explosion: crunchy cherry, candied red fruits, fresh rose. A fine and expressive aromatic profile that extends to the palate with a beautiful texture, supple but structured. The wine combines a delicate, almost silky touch with fresh and digestible energy. Vertige
Distillerie Sentema
Vertige is a remarkable creation by Distillerie Sentema, nestled in the heights of the Alpes-Maritimes, between sky, garrigue, and sea. This spirit, akin to a gin in spirit but unique in its base, is crafted from wine brandy rather than neutral alcohol, which gives it a rare aromatic depth and true personality.
Everything here is conceived in harmony with nature: certified organic, Vertige highlights carefully selected local botanicals: wild juniper berries, Menton IGP lemon peels, fragrant verbena, coriander seeds, and angelica roots. These plants are macerated for two weeks before distillation to extract essential oils without altering the balance of aromas.
The nose is astonishingly pure, blending the zesty notes of lemon, the citrusy and vegetal freshness of verbena, and the resinous signature of juniper. On the palate, the attack is silky and lively, with a soft yet precise structure, and a finish that lingers on citrus and dried herb notes, with a beautiful tension.

Mint
Distillerie du Viaduc
With this bottle of Mint, Distillerie du Viaduc offers a novel and ultra-fresh interpretation of mint, far from the sugary clichés of classic liqueurs. Here, no syrup, no artificial flavors, no artifice: only three varieties of French organic mint – peppermint, grapefruit mint, and spearmint – macerated for a long time, then distilled at low temperature in an artisanal still.
This spirit has an alcohol content of 30% vol., yet remains extremely delicate. The distillation process subtly reveals the full range of herbal and menthol notes of the plants without becoming aggressive or overwhelming. The color is clear, crystalline. On the nose, it offers a pure scent of fresh mint, cut grass, and chlorophyll. Xarab Silver White 2006
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created this astonishing sweet white wine from the Xarab series, made from Pedro Ximenez and Xarel·lo grapes, raisined on the vine and harvested in December. Golden-amber in color, with a nose of candied grapes and buttery caramel, the palate is rich and taut, avoiding the pitfalls of excessive richness and syrupiness. The finish lingers on dried fruits and caramel, and the cellaring is very long.
