Oolithe white 2020
Domaine Einhart
Oolithe, a macerated white wine, has a pale apricot color and exudes a beautiful minerality, great freshness, and the integrity of its predominant grape variety, Sylvaner. Aromas of fresh apple enhance it. The second nose opens more fully with elderflower, lily of the valley, and citrus peel. On the palate, the attack is lively, fresh, and mineral, leading to a spicy and persistent finish. The name Oolithe is a direct allusion to the oolitic limestone that makes up the muschelkalk soil from which it is sourced (plots located in Weingarten and Oberer Altenberg). On this soil grow Sylvaner and Gewurztraminer, the two grape varieties that make up this wine, at 60 percent and 40 percent respectively. The average age of the vines is thirty years. The harvest is manual, destemmed, and the brief maceration, on indigenous yeasts, takes place for four days. The wine is aged on fine lees, in stainless steel vats, before being bottled without filtration. From the vine to the cellar, this wine was made without any additives. Decanting is recommended so that it fully expresses all its floral grace.

Pinot Noir 2020,
Domaine Einhart
A velvety, ripe red, 100% Pinot Noir, with an intense, fragrant, and gently fruity aroma. The deep, purplish color evokes black cherry. The initial nose is enhanced by aromas of black fruits (blackberry, blackcurrant, black cherry) with a hint of freshness blended into a light vanilla woodiness. The second nose is more open, with aromas of blood orange, bitter almond, and kirsch. On the palate, the berries are still present, supported by present but well-melted tannins, and lead to a velvety finish resting on a lovely freshness. Plenty of persistence and length. The Pinot Noirs from which it is made, aged around thirty years, grow on the muschelkalk (shell limestone) terroirs of Dittelsberg-Albermohn and are harvested by hand, then destemmed. Maceration, using indigenous yeasts, takes between ten and twelve days. Aging for one year on fine lees, in demi-muids, precedes bottling without filtration. From the vine to the cellar, this wine was made without any additives. Decanting is recommended so that it can fully express its finesse and grace.

Plantés sur des sols argilo-calcaires typiques du secteur de Blaye, les cépages Merlot (65 %), Malbec (25 %) et Cabernet Sauvignon (10 %) sont cultivés selon les principes de l’agriculture biologique (certifié AB & Nature & Progrès). La vinification reste fidèle à l’esprit nature : macération égrappée de deux semaines, sans intervention œnologique ni levures exogènes, puis élevage en cuves béton pour préserver l’éclat du fruit.
Un rouge vivant et généreux
Au nez, le vin libère des arômes de fruits noirs mûrs, d’herbes fraîches et d’épices douces. En bouche, l’attaque est souple, les tanins présents mais bien intégrés, soutenus par une belle fraîcheur. Le vin gagne en intensité au fil de la dégustation, avec une matière ronde et équilibrée.

Aged for five to seven years in Limousin oak barrels, this cognac is made exclusively from the Ugni Blanc grape variety. Its amber color and roundness on the palate reflect its long aging process. The fine and elegant nose offers subtle notes of vanilla; caramel and dried fruits delicately assert themselves on the palate. Serve it neat or as an aperitif, with ice cubes.
Orange, Rosé 2020
Domaine Bélicard
Un nom intrigant, une robe rosée, une structure inattendue : « Orange » du Domaine Bélicard est un vin qui brouille les pistes et élargit les horizons du rosé. Vin nature issu à 100 % de Gamay cultivé en bio dans le Beaujolais, ce millésime 2020 est une proposition audacieuse, presque méditative, loin des clichés fruités et acidulés.
Un rosé libre à l’esprit oxydatif
La macération courte de quelques heures révèle une robe soutenue, aux reflets légèrement orangés, tandis que l’élevage de trois mois en cuve béton et une approche volontairement peu interventionniste laissent place à une micro-oxydation maîtrisée. Aucun intrant œnologique, levures indigènes, et un jus qui s’exprime sans retenue. Le résultat : un rosé atypique, complexe, avec du fond et une belle capacité à évoluer.
Un profil aromatique à part
Au nez, ce sont les fleurs séchées qui dominent, suivies de notes de fruits noirs, de fruits jaunes très mûrs, et une touche zestée rappelant l’écorce d’agrumes. En bouche, la matière est ample, presque tannique, avec une sensation saline en finale. La légère oxydation apporte du relief et une personnalité marquée, sans déséquilibre.
À déguster autrement
Orange 2020 est un rosé d’auteur, à servir entre 10 et 12 °C, sans carafage, sur des moments d’apéritif contemplatifs ou des plats simples mais savoureux. Il peut aussi vieillir quelques années en cave (jusqu’à 10 ans), pour explorer ses nuances plus profondes. Un vin pour curieux éclairés et palais aventureux.
YARD Rouge, Rouge 2023

Une vinification naturelle, fidèle au fruit
Issus de vignes plantées sur des sols argilo-calcaires du Lot, les raisins sont cultivés sans chimie, dans le respect des équilibres naturels. La vinification est artisanale : macération douce de deux semaines, fermentation en levures indigènes, sans intrants œnologiques, suivie d’un élevage de neuf mois en cuves inox. Ce choix permet de conserver toute la vivacité du fruit, sans masquer l'identité du cépage ni celle du terroir.
Un rouge souple et savoureux
À la dégustation, YARD Rouge séduit par son nez ouvert sur des arômes de fruits noirs mûrs (prune, mûre), accompagnés de touches de fruits secs. En bouche, la matière est souple, les tanins sont fins et bien intégrés, avec un joli grain et une finale qui garde de la fraîcheur. Le style est net, pur, et invite à la gourmandise sans lourdeur.
Le vin nature de toutes les occasions

Westerberg White 2021
Westerberg is a dry white wine full of character, elegance, and spice, offering the best of the estate's Riesling and Gewurztraminer: 90% Riesling and 10% Gewurztraminer grown on the great limestone terroirs of the Rosheim hillsides: soils of shell limestone with ceratites (fossilized limestone) and lettenkohl (muschelkalk carbonate) plates. A depth of one meter and eighty of soil with a grain size of 70% limestone and a layer of loess at one and a half meters, this is a superb minerality that benefits the wine. One hundred percent of the grapes come from the property. The average age of the vines is forty-five years, on plots facing south on a 30% slope. The grapes are entirely hand-harvested and destemmed. The Riesling is directly pressed, while the Gewurztraminer undergoes a forty-eight-day maceration before pressing. Everything is fermented with indigenous yeasts. The wine is aged for one year on fine lees and is bottled without filtration. No sulfites or any other inputs are added to the vineyard or the cellar. We recommend decanting this Westerberg.

Les Grandes Serres
Located between Vaison-la-Romaine and Séguret, the Grandes Serres vineyard, certified organic, promotes an innovative agroforestry approach, including the planting of pistachio trees along the edges of the plots. This cuvée, The White Widow 2024, made from a blend of Clairette, Grenache Blanc, and Marsanne, elegantly expresses the richness of the Rhône's sandy soils.
A pure and delicious white
Harvested in the cool of the morning on a fruity day, the grapes are pressed directly, thus preserving their brightness and freshness. Fermentation takes place spontaneously with indigenous yeasts, in a subtle balance between new Stockinger barrels (for Clairette and Marsanne, 50%) and stainless steel vats (for Grenache Blanc, 50%). Careful aging with light stirring gives the wine a full texture, without filtration, allowing natural sedimentation of the lees in the cold.
An expressive nose and a generous palate
From the moment you open it, The White Widow seduces with an intense bouquet of yellow fruits and jasmine. The palate is full-bodied and rich, supported by a beautiful mineral tension, which brings balance and length. A fresh finish, with slightly saline notes, prolongs the pleasure.

Ce pétillant naturel 100 % Gamay réunit fraîcheur, fruit et légèreté, dans un style joyeux, sans artifice ni ajout.
Un rosé pétillant naturel, franc et libre
Le Gamay est ici récolté en grappes entières, puis mis en macération courte afin d’extraire juste ce qu’il faut de couleur et de matière. La fermentation démarre naturellement grâce aux levures indigènes, puis se poursuit en bouteille, selon le principe de la méthode ancestrale. Aucun ajout de sulfite, pas de dosage ni de levures sélectionnées : c’est un vin vivant, brut, tout en spontanéité. Son élevage s’étale sur environ deux ans avant la sortie, lui apportant équilibre et stabilité.
Un profil tonique et fruité
Robe rosée pâle légèrement trouble, mousse fine et naturelle, et au nez, des notes de petits fruits rouges, de grenade et une touche florale délicate. En bouche, la bulle est souple, la matière légère, avec une finale acidulée et rafraîchissante qui donne envie d'y revenir. L’ensemble est digeste, désaltérant, et incroyablement gourmand.

YARD Orange, Blanc 2022
Danis dans la vigne
Avec YARD Orange, Danis dans la vigne s’aventure du côté des blancs de macération, ces vins dits "oranges" qui bouleversent les repères. Cette cuvée nature 100 % Colombard, issue de raisins cultivés en agriculture biologique sur les sols argilo-calcaires du sud du Lot, incarne une vision libre et contemporaine d’un vin blanc, tout en couleur, en énergie et en sincérité.
Un vin orange artisanal et précis
La macération pelliculaire de quelques jours permet à ce Colombard de puiser dans ses peaux arômes, matière et une légère teinte dorée. Aucun intrant œnologique n’est utilisé : fermentation spontanée en levures indigènes, pas de collage ni de filtration, et un élevage en cuve inox de sept mois pour conserver le croquant du fruit. Le résultat est un vin nature pur, vibrant, sans compromis.
Une bouche éclatante et vivante
Le nez évoque l’abricot mûr, les zestes d’agrumes et une touche herbacée très rafraîchissante. En bouche, l’attaque est franche, tendue, avec une belle structure apportée par les tanins très fins issus de la macération. L’ensemble est vif, digeste et laisse une sensation tonique en finale.

Les Cadets Rouge 2019
Château Les Graves de Viaud
A typical Bordeaux blend, the Côtes-de-Bourg of the Les Cadets cuvée is composed of Cabernet (Sauvignon and Franc, 70%) and Merlot (30%) grown on iron-rich silty gravel and clayey gravel, and co-fermented in stainless steel vats for better synergy between the grape varieties. Vinification begins with a cold prefermentative maceration and continues with a gentle, slow extraction. Fermentation is carried out using indigenous yeasts; no sulfites are added. The wine is aged in sandstone amphorae for at least ten months on fine lees to refine the tannins. The geological conditions give the Cabernets a refreshing tannic base and accentuate the roundness and fruitiness of the Merlot, while giving it a very seductive floral aromatic palette. The bouquet of blackcurrant and blackberry that appears on the nose is confirmed on the palate. 2019 is still young as we write these lines: this wine will wait a few years, and it will only get better for it.
Cuvée O Red 2014
With this 2014 vintage, Domaine Les Graves de Viaud offers us a still red wine that perfectly embodies the natural elegance of the Côtes de Bourg. Made from biodynamically grown Cabernet Franc, this wine benefits from the Demeter and AB labels, guaranteeing practices that respect the land and the vines, without chemical additives or winemaking artifices. Here, nature expresses itself freely, revealing the authenticity of the Bordeaux terroir.
This exclusive cuvée (1,200 bottles) of Côtes-de-Bourg is composed of 60% Cabernet Franc. The vines grow on gently sloping hillsides with clayey gravel soils. Harvesting is done by hand, destemmed, and not crushed. Carried out in egg-shaped vats, the skin maceration is long: up to three months at a controlled temperature. Fermentation is done using indigenous yeasts, and no sulfur is added at bottling. This wine, as delicate as it is profound, has the distinction of being vegan (no animal products, therefore no egg-based fining). The nose, fresh and spontaneous, offers notes of plum, violet, and peony. The palate is pulpy, crisp, and fresh, seductive: mainly blackcurrant and blackberry. The tannins are silky and melted, yet powerful.
To the eye, this 2014 reveals a deep red color with garnet highlights, a sign of beautiful development. The nose opens generously after decanting, revealing aromas of ripe red fruits, morello cherry and raspberry, subtly enhanced by spicy notes and a vegetal touch typical of Cabernet Franc. On the palate, the attack is supple, giving way to fine and elegant tannins. The balance between freshness and structure is remarkable, with a persistent finish that reveals slightly peppery and mineral nuances.
This wine will pair wonderfully with dishes of character such as duck breast with figs, a gratin of root vegetables or even a platter of mature cheeses. Served between 16 and 18°C, it will reveal all its complexity after decanting.
With its 13.5% alcohol and its aging potential of 5 to 10 years, this 2014 vintage can be enjoyed now for its freshness or waited in the cellar for a deeper expression of its terroir.
The Wine Witch White 2024,
Les Grandes Serres
In the heart of Vaucluse, between Saint-Maurice-sur-Eygues and Visan, the Grandes Serres vineyard thrives on deep clay-limestone soils bordered by garrigue. The Wine Witch 2024, a subtle blend of Clairette, Marsanne, and Vermentino, is a generous white, both powerful and balanced, faithful to its terroir.
A bold and natural vinification
The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.
A charming nose and a full palate

Born in the vibrant Gaillac region, the YARD x Bois Moisset Rouge 2024 is an ode to the diversity of the ancestral grape varieties of Southwest France. In this free-spirited cuvée, classified as a Vin de France, Domaine Bois Moisset skillfully blends three emblematic varieties: Braucol, with its rustic and wild character; Duras, vibrant and spicy; and a touch of Gamay, which rounds out the whole with its fruity freshness. This bold combination, conceived as a nod to local roots as much as to contemporary tastes, expresses a sun-drenched clay-limestone terroir, which gives the wine its power and purity.
Cultivation methods
At Domaine Bois Moisset, the vine is first and foremost a living ally, respected in its rhythm and needs. Certified organic, the vineyard management excludes all artifice: here, the soils breathe, nourished by natural compost, carefully worked, and the vines are observed, listened to, and supported rather than constrained. The harvest is done by hand, guaranteeing meticulous sorting and intact bunches. In the cellar, the winemaking follows the same philosophy: minimal intervention, indigenous yeasts, gentle extraction to preserve the fruit and reveal the texture, without masking the soul of the grape. Fond Cyprès
The vibrancy of the south, natural version
At the foot of the Corbières mountains, the Fond Cyprès estate produces a 2024 red wine imbued with freedom and energy. This natural wine, certified organic (AB), is born on sun-drenched clay-limestone soils, with total respect for the environment: soil cultivation without synthetic products, hand-harvesting, and vinification using short maceration without added yeasts or oenological additives. Here, the fruit expresses itself in all its purity, without artifice.
The Mediterranean trio – Carignan, Grenache, and Syrah – yields a wonderfully fresh wine, with a slightly spicier profile than the previous vintage. Its clear ruby color heralds a youthful and vibrant wine. On the nose, an immediate bouquet of red fruits (cherry, raspberry) mingles with a herbaceous and peppery touch reminiscent of garrigue paths after the rain. The palate, fluid and lively, seduces with its drinkability: smooth tannins, lovely acidity, and a clean finish of sweet spices. A wine that doesn't seek effect but rather the pure expression of the terroir.
