This Pinot Noir from the Qvevris series (aged in Georgian-style terracotta jars) comes from a plot whose sloping terroir, facing south-southeast, is located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are mainly marl, limestone and clay. The grapes macerate in whole bunches. Plenty of fruit and roundness supported by a sumptuous minerality. The Pinot Noir benefits greatly from the velvety texture brought by aging in qvevri.

Le Coste White 2010
A blend of Malvasia and Moscato from the Le Coste estate, a volcanic Eden of natural wines located on the borders of Tuscany and Umbria. An orange color, an aromatic nose that unites herbaceous notes and candied fruit. The same battle is evident on the palate, with added hints of compote.

Xarab Garnacha Red 2009
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created this astonishing sweet red wine from the Xarab series, made from Grenache and Cabernet Sauvignon grapes, raisined on the vine and harvested in December. The wine is rich, intense, and generous, loaded with candied red fruits.

Coteau Libre White 2015
Two Grenaches for the pleasure of one, and not just any: Grenache Blanc and Grenache Gris from vines planted on terraces on clay-siliceous soils. Aged for four years in barrels, Coteau Libre is one of those wines whose texture is evident on the nose. On the palate, it has a beautiful density and a very respectable length.

Coyade White 2015
A voluptuous southern white wine born from a blend of Macabeu, Grenache Blanc, and Carignan Blanc planted in the Agly Valley, in the heart of Roussillon, Coyade comes from vines grown on a predominantly clay-limestone terroir. Malolactic fermentation took place in stainless steel vats, and the three grape varieties were vinified separately before being blended. The color is intense and golden, with notes of straw and honey on the nose, and a slight oxidation on the palate that pairs perfectly with hard cheeses.

Maquis Red 2015
Lledo what? Here's a deep red produced from Lledoner Pelut, a little-known Catalan grape variety. The Maquis cuvée reflects the quintessence of the clay-limestone soil, with the added bounty of Roussillon. The grapes are vinified in whole bunches, crushed by foot, then placed in cement vats. A captivating nose with notes of raspberry, confirmed on the palate, with a fairly pronounced tannic texture.

La macération en grappes entières durant trois semaines permet une extraction douce et subtile. Mais c’est l’élevage d’un an en amphores géorgiennes (qvevris) qui confère à cette cuvée sa signature si particulière. Loin des boisés classiques de Bourgogne, l’amphore respecte la matière et amplifie la pureté du fruit, tout en apportant une belle sphéricité en bouche.
Au nez, le vin s’ouvre sur des notes franches de griottes, de fruits rouges croquants et d’infimes touches florales. En bouche, l’équilibre est remarquable : les tanins sont souples, la trame est fraîche, et l’ensemble glisse avec élégance, sans renier la profondeur minérale du terroir de Mercurey. Bistrologie, l’énergie du fruit dans le calcaire
Issue de vignes cultivées sur sols argilo-calcaires, cette cuvée 100 % Chenin blanc offre une expression franche et gourmande du cépage. Après un pressurage direct, le vin est élevé pendant un an en barriques ayant déjà contenu plusieurs vins. Ce contenant neutre permet une oxygénation lente sans influence boisée, pour un résultat pur et cristallin.
Fruits confits, minéralité et tension
Le nez évoque l’abricot mûr, le coing, les fleurs blanches et une touche de miel sec. En bouche, l’attaque est fraîche et tendue, puis le vin s’arrondit avec un joli volume porté par les fruits blancs confits. L’équilibre entre la vivacité et la richesse naturelle du Chenin est maîtrisé. La finale minérale, légèrement saline, prolonge le plaisir avec élégance.
Accords & service : à la fois festif et gastronomique
Bistrologie s’apprécie aussi bien à l’apéritif qu’à table, sur des poissons fins, des viandes blanches, ou même des plats végétaux aux notes sucrées-salées. Servir entre 10 et 12°C, sans carafage. Cette cuvée nature peut être bue dès aujourd’hui, mais saura aussi vieillir plus de 10 ans avec grâce.

Le Domaine Einhart, vigneron engagé de longue date en agriculture biologique, nous livre ici une cuvée blanche qui capture toute la fraîcheur et la gourmandise des grands blancs alsaciens, sans jamais trahir leur finesse. Ce millésime 2024, tout juste embouteillé, est le fruit d’un assemblage emblématique de la région : Auxerrois majoritaire, accompagné de Muscat, Pinot Gris et Riesling. Un quatuor alsacien vinifié en presse directe, sans fioriture ni sur-extraction, et élevé 7 mois en foudres sur lies fines pour conserver la pureté aromatique et la tension du vin.
Le sol argilo-calcaire, typique de la plaine alsacienne, confère à cette cuvée à la fois rondeur et verticalité. Aucun intrant œnologique, des levures indigènes exclusivement, et une vinification respectueuse des équilibres naturels : un blanc vivant, expressif, et absolument digeste.
Vivacité florale et gourmandise des fruits mûrs
Dès le service, la robe pâle et brillante annonce la fraîcheur du vin. Le nez est très aromatique, dominé par le citron jaune, des notes florales délicates (tilleul, jasmin) et une touche de fruit exotique bien mûr (litchi, mangue fraîche). En bouche, c’est une explosion de fraîcheur : attaque vive, milieu de bouche souple grâce à l’Auxerrois, et finale tendue portée par la patte du Riesling. L'équilibre est parfaitement maîtrisé.

Vino Rosso Red 2015
Corvagialla's red is a Sangiovese from vines planted at an altitude of 450 meters on a west-facing plot with volcanic soil. The grapes are destemmed and macerated for approximately three weeks, with daily pumping over or punching down as needed. Aging is twenty-four months in chestnut barrels. The wine is bottled for six months before being released.

i Vicini Favorita White 2022
Favorita, from the I Vicini merchant range, is produced by Jean-Yves Péron using organic, biodynamic, and natural methods. It is made from organic grapes purchased in Asti (Piedmont). This macerated white wine is made from 100% Favorita, a local white grape variety very similar to Vermentino.
Vinification
The grapes used for this Favorita cuvée are harvested at full maturity from young vines growing on semi-slopes. One-third of them are directly pressed and two-thirds are macerated in carbonic acid for two weeks. The wine is aged for one year in 300-liter barrels. Unfiltered, unfined, and no sulfites are added.
Tasting
This is a Vermentino that bears the hallmarks of a more continental terroir and climate than average. It has a beautiful acidic base and plenty of minerality, sapidity, and aroma, similar to certain Alsatian grape varieties: fragrant without being exotic. Pair it with fish and seafood in all their forms: oysters, shellfish, smoked salmon, etc.

i Vicini Cortese White 2022
I Vicini Cortese is a dry white wine from Jean-Yves Péron, organic, biodynamic, and natural, made from Cortese grapes harvested in Piedmont. It is a merchant cuvée from the I Vicini series, harvested organically in Northern Italy and vinified in Savoie.
Vinification
The grapes from which I Vicini Cortese is made come from Asti and grow in a cool microclimate that allows for relatively late ripening. Cortese is an ancient grape variety often associated with Trebbiano or Garganega. It produces a fresh and tangy wine with a straw-yellow color with greenish highlights. Here, it undergoes two weeks of carbonic maceration and spends a year in 34-hectoliter tuns. No fining, no filtration, and no addition of sulfites.
Tasting
I Vicini Cortese is a light and fresh, digestible wine, with an alcohol content between 10 and 11 degrees, making it easy to drink. It has a minerality due to the terroir and citrus notes, particularly lemon zest. A perfect companion for tapas and the most refined starters, shellfish, and seafood.

Vinification
Barbera is grown in Asti and Alba. The second most widely used red grape variety in Italy after Sangiovese, it produces full-bodied, colorful wines with red fruits. Harvested by hand, no sulfites added, no filtration, no fining. Both Barberas are macerated for three months with punching down and undergo a fifteen-day carbonic maceration. The wine is aged for one year in 300-liter barrels.

Les Barrieux White 2022

Vinification
