Le Petit Domaine de Gimios is located near Saint-Jean-de-Minervois, an ancient terroir and origin of sweet muscats from Languedoc. In fact, the estate is dedicated to the region's typical small grain muscat (in addition to a few other varieties), and Anne-Marie Lavaysse places herself directly in the tradition by producing beautiful wines from this precious grape variety. In 1993, she and her son Pierre took over several old abandoned vineyards, which she now owns. Small, certainly, but multicultural and almost self-sufficient: the muscat from old vines shares the space with vegetable and food crops, fruit trees and some livestock. None of this receives any chemical inputs, sulfur, or mechanical force, and the Ecocert-certified estate is cultivated biodynamically. On these five hectares, viticulture and mixed farming are one and the same. The manual harvest takes place in the early morning, the grapes are destemmed and crushed by foot, before macerating for about ten days using indigenous yeasts. No sulfites are added during bottling. The wines are universally described as "delicious," "pure and fresh," "frank and digestible." The estate produces dry, sweet, liqueur, and fortified muscats, as well as very fruity reds made from traditional local grape varieties. Everywhere, the impression of biting into fresh grapes.
Auxerrois Origin White 2022,
Auxerrois Origin by Jean-Marc Dreyer is an organic (AB label), biodynamic, and natural dry white Alsatian maceration wine (orange wine), with no added sulfites. Jean-Marc Dreyer's Origin range consists of single-varietal cuvées based on six Alsatian grape varieties (Sylvaner, Auxerrois, Pinot Gris, Gewurztraminer, Riesling, and Muscat), enhanced by skin-contact maceration with a touch of controlled oxidation. The discovery of each Origin vintage is always a pleasant surprise.
Vinification
Auxerrois, or Pinot Auxerrois, is a typically Alsatian grape variety with floral and spicy notes. The harvest, done by hand, is macerated for seven days in whole bunches. After pressing and fermentation, the wine is aged for ten to eleven months in Alsatian style, in tuns and demi-muids, without topping up. Tasting
Floral, fresh, seductive, slightly smoky, Auxerrois Origin by Jean-Marc Dreyer is both atypical and delicious. The maceration gives it a distinguished chew on very fine tannins. With its amber color, floral notes, seductive bitters, delicious salinity, hints of white peach and citrus, and perfect straightness, it is ready for any pairing. A bellota Iberico ham would melt with happiness next to it, but it will also be a delight alongside smoked fish, seafood platters, mature cheeses, or white meats. We will enjoy it, for our part, with a beautiful roasted poultry.

Rose-Marie, Rosé 2021
Château Le Puy
Rose-Marie 2021 is much more than a simple wine: it is a rare and poetic signature from Château Le Puy, a renowned pioneering biodynamic estate in the Bordeaux region. Made from 100% Merlot, this wine is obtained by saignée from a fermenting tank, a gentle method that gives birth to a delicate cuvée, somewhere between a very light red and a deep rosé.
Vinification is done without inputs or exogenous yeasts, in old barrels that have already seen several wines. No added sulfur. After fermentation, the wine is dynamized for 6 to 8 months, according to biodynamic principles, before being bottled without filtration. The estate is Demeter certified, so each step is carried out with great sensitivity to living organisms and the wine's natural balance.
With a clear to very clear ruby color, almost translucent depending on the vintage, Rose-Marie charms from the first glance. The nose is extremely delicate: fresh red fruits, white and pale flowers, like peony, bring a sensation of lightness and rare elegance. On the palate, the texture is fluid, airy, with a discreet, barely perceptible tannic presence that supports the whole without hardening it.
A unique, subtle wine that pairs wonderfully with vegetarian cuisine, grilled fish, refined appetizers, or even certain fresh cheeses. Serve slightly chilled, it is a precious bottle, both pure and vibrant, that is savored for its sincerity and finesse.
Magnum Gauthier White 2022,
Gauthier is a dry, organic (AB label), biodynamic, and natural macerated white wine (orange wine) from Jean-Marc Dreyer, vinified in Alsace from all the grape varieties cultivated by the winemaker and without the addition of sulfites. Always packaged in magnums, it is simultaneously a rarity, a challenge, a curiosity, and a precious bottle to savor. Gauthier is the first name of a pilgrim on the Way of Saint James who spent some time with Jean-Marc Dreyer and took part in the work in the cellar. Having noticed that the blend of the fin de cuvée was excellent to drink, he suggested to Jean-Marc that he make a special cuvée: "It tastes so good, it would be a shame not to do it!" It tastes incredibly good, even, notes the winemaker.
Vinification
If you are familiar with Jean-Marc Dreyer's Origin range - a series of maceration vintages based on six Alsatian white grape varieties - you will find in Gauthier the synthesis and summary of this range. This wine is in fact the result of the blending of the fin de cuvée of each Origin reference. Once blended, the fin de cuvée are kept for two to three months in barrels to unify the flavors. No added sulfites, no additives, no filtration, indigenous yeasts.
Tasting
This atypical production makes Gauthier a full-bodied, characterful vintage, with a distinct touch of controlled oxidation. Gauthier, of course, contains no more sulfites or additives than the vintages it is made from. That is, zero. It is the synthesis of the Jean-Marc Dreyer estate, and that in itself is a tasting note: refer to each of the other vintages in the Origin range on this site to piece together the puzzle, or, better yet, drink it. With everything that goes with macerated Alsace whites, whether cheeses, local dishes, Lacaune charcuterie or Lyon.

Whole-bunch maceration exposes Riesling in a completely new light: the petrol notes recede into the background, waiting until the finish to emerge, and the wine expresses a structured verticality balanced by a gentle roundness. Pineapple and grapefruit on a very mineral background, but it's the soil you sense, not the diesel can. Taste pairings? Don't bother looking; it goes with everything. Try grilled fish, matelotes, seafood and shellfish, roasted or stewed white meats, pata negra ham, aged cheeses.

Tri-Aux White 2022,
Tri-Aux is an organic, biodynamic, and natural dry white wine from Alsace (AB label) produced by Jean-Marc Dreyer without added sulfites. Its name is a play on words based on its composition: three successive vintages of the Auxerrois grape variety.
Vinification
Auxerrois or Pinot Auxerrois is a typically Alsatian white grape variety. For all three vintages, the harvest is vinified using direct pressing, fermented, and then aged in barrels for one to three years. The resulting wines are blended to create this cuvée. Tasting
Tri-Aux is a lovely, seductive and fresh wine, aromatic and floral, delicious and dry at the same time. It offers spicy notes (cinnamon, dried fruits), a round and complex, saline body, and a finish of white fruits. Lots of energy and character. For all occasions, from the most relaxed to the most distinguished. Offer it roasted white meats, pata negra ham and other high-end cured meats. Cuvée O Rouge 2015, Château Les Graves de Viaud
This confidential cuvée (1,200 bottles) of Côtes-de-Bourg is composed entirely of Cabernet Franc. The vines grow on gently sloping hillsides with clayey gravel soils. The harvest is manual, destemmed, and not crushed. Carried out in ovoid vats, the skin maceration is long: up to three months at controlled temperature. Fermentation is done by indigenous yeasts and no sulfur is added at bottling. This wine, as delicate as it is profound, has the particularity of being vegan (no animal products, therefore no egg-based fining). Upon tasting, the signature of Cabernet Franc is clearly present. The nose, fresh and spontaneous, offers notes of plum, violet, and peony. The palate is luscious, crisp and fresh, seductive, velvety, with great length: touches of strawberry and blackberry. The tannins are silky and melted.

With Muscat Origin 2018, Jean-Marc Dreyer revisits this emblematic Alsace grape variety by working it with whole bunch maceration. A macerated wine of great finesse
Produced from Demeter-certified biodynamic viticulture, this Muscat is vinified naturally, without added sulfites, to respect the integrity of the fruit and the terroir. The skin maceration allows for the extraction of a delicate texture, providing a slightly tannic sensation and noble bitters, balanced by a lively and thirst-quenching acidity. Unfiltered and unclarified, it expresses a rare purity and sincerity.
A tasting under the sign of freshness
Behind its slightly cloudy golden color, this Muscat Origin reveals a subtly perfumed nose, with notes of white flowers, citrus zest, and herbs. On the palate, the elegant bitter notes of the Muscat gradually reveal themselves, balanced by a sharp freshness and a subtle tannic structure that adds depth. A lingering, saline finish prolongs the pleasure.
Food and wine pairings and tasting moments
Served around 10-12°C, this macerated Muscat is a true ally of seafood and cooked fish. It will brilliantly accompany warm langoustines, grilled lobster or spider crab, enhancing their texture and salty sweetness.
