Domaine Capmartin
Here's a lovely natural rosé, without sulfur or additives, another success from Simon Capmartin: Fruit Salad alludes to the fruity richness we love in this estate's wines. One hundred percent Syrah, it comes from rolled pebble soils on red clay. The average age of the vines is twenty years. The use of cover crops helps loosen the soil and provides nutritional support, alternating with natural grass cover. The harvest is destemmed and macerated for about three days until fermentation begins: then a bleeding is performed, followed by liquid-phase vinification. Aging is six months in vats. Simon defines it as a "strong rosé." He confides that he hesitated to make this wine before Anthony Tortul, from La Sorga, gave him the following advice: "If you don't try it now, you'll never try it." Notes of redcurrant, raspberry, strawberry, crushed wild strawberry... This wine is more than pleasant, a real fruit juice. It has all the graces of rosé plus a few others.

Guy Capmartin settled in 1985 in the former convent of Maumusson-Laguian, in the Gers, to exploit the magnificent surrounding soils, from which he would soon produce highly acclaimed wines in the Madiran and Pacherenc-du-Vic-Bilh appellations. In 1987, Tradition, his first vintage, was born. By the 2000s, he had decided to work exclusively in organic and biodynamic agriculture, a decision reinforced and entrenched by his son Simon, who took over. The wines were noted and received numerous awards. Certification was obtained in 2013, and the Demeter label is in progress. Taking advantage of his most specific plots on the estate, Simon also began to produce natural vintages, without inputs and according to the principle of minimal interventionism. Labeled Vin de France or Côtes-de-Gascogne, these are the vintages we offer at Culinaries.
The estate's grape varieties are organized around Tannat, the king of Madiran, surrounded by a palette as rich and diverse as the estate's soils: Cabernet Sauvignon, Cabernet Franc, a little Syrah and Grenache Noir, plus a few old red vines currently being identified. A plot of tannat, located on a very fine and very supple clay-marl soil with gravel, is pre-phylloxera. For the white, Petit Manseng, Gros Manseng and Petit Courbu, as well as, for the Côtes-de-Gascogne, Sauvignon Blanc, Sauvignon Gris and Viognier.
The main objective of the Capmartin estate is to make frank, fruity, authentic and honest wines, perfectly reflecting their terroir, which explains the parcel-based nature of the wines under the appellation: one parcel corresponds to one vintage, and vice versa. This also explains the number and variety of vintages.
Samos Blanc 1958, Samos Cooperative
Here's a gem, a real gem. The Samos Cooperative is one of the oldest wine cooperatives in Greece, supplying all of Europe with sweet Muscat for several centuries. It has preserved this masterpiece, this sweet white made from Muscat Petit Grain harvested and vinified on the island, for sixty-five solid years, which is why it takes on the appearance of a red. This is because it is very old and its color has evolved over time, from amber gold to dark mahogany. Normal. Sumptuously aged and patinated, caressed by time, it is endowed with an uncommon aromatic power. This great cuvée for laying down has all the virtues of a very old sweet wine: vibrant, sweet and saline, superbly fresh, with a beautiful aromatic structure and great length. This meditation wine, which reveals all the authenticity of the island's mineral and volcanic terroir, is a perfect example of what time can do to a great muscat. It was on the occasion of the Sous le Végétal project that this nugget without additives, added sulfites or any other additives was offered to us by the Samos Cooperative. Beneath the vegetation lies the mineral: such is the meaning of this concept of natural cuvées created in Greece, on the island of Samos, by a team of friends gathered around winemakers Jason Ligas and Patrick Bouju. The successful venture marks a renaissance of the thousand-year-old vineyard of this island in the North Aegean Sea, which owes its dense, wooded vegetation to various nicknames received in Antiquity, from Dryoussa ("covered with oaks") to Kyparissia ("covered with cypresses"), by way of Melamphyllos ("Dark-leaved"). This natural wealth covers a unique and varied subsoil: volcanic rocks and notably basalts, limestone, quartz, pink granites, schists, iron cast irons… The idea was born from Jason’s meeting with the Samos Wine Cooperative. Patrick Bouju soon joined the project. The five vintages of Sous le Végétal — Livia, Hüpnos, Octave, Palli & Genesia, Alexandre and Auguste — are produced on around sixty plots of Samos Muscat à petits grains (as well as Avgoustiatis for the red vintage and Asyrtiko for Alexandre), between 400 and 910 meters above sea level. Each plot is vinified separately. For vinification, four types of containers are used: amphorae, concrete eggs, stainless steel vats and 500-liter barrels. Each lieu-dit is vinified in at least two of the four containers and the aging takes place in black bottles sealed with wax. No sulfur is added, no filtration: the winemakers of Samos rediscover wine as it was made in their childhood. This is one of the wonders of natural wine: it allows, through the most innovative projects, to reconnect with forgotten traditions. Sous le Végétal also takes under its wing the A la Natural cuvées signed Patrick Bouju, without forgetting the 1958 vintage Muscat of Samos which inspired the project to the winemakers.

Stretching from the southern slope of the Montagne Noire to the city of Carcassonne, it is bordered to the west by the Lauragais and to the east by the Minervois. Hilly, wild, and rich in Mediterranean flora, it is a preserved ecosystem, especially since the Domaine du Temps, in the Font Juvénal area, is a magical place: around a former 18th-century priory, sixty hectares of forests and scrubland protect thirteen hectares of vineyards on stony clay-limestone soils. The balance between dryness and coolness is a boon for viticulture, with a wide range of grape varieties. In addition to the Languedoc grape varieties (Syrah, Grenache, Roussanne, Viognier, Muscat), Cabernet Sauvignon, Cabernet Franc, Merlot, Sémillon, and Chenin are grown. The aroma unfolds on the palate with very controlled notes of ripeness, wisteria, honey candy, and yellow peach. The freshness is wonderful, tempered by a little fat. A delicious and expressive wine.

The nose of Sans ordonnance is fine, complex, exotic without being excessive: the musky notes of the Muscat à Petit Grain are initially very discreet and then develop in the glass. The aroma unfolds on the palate with very controlled notes of ripeness, wisteria, honey candy, and yellow peach on a lovely acidic base. The freshness is wonderful, tempered by a touch of richness. A rich and expressive wine, excellent with fish and seafood. Sans ordonnance is composed of 60% Muscat à petits grains and 40% Viognier, grown on the clay-limestone soils of the Carcassonne region, near the Montagne Noire. The harvest ferments naturally in stainless steel vats before aging for nine months in oak barrels. Sans ordonnance is neither fined nor filtered.

Deep ruby color, nose revealing candied red fruits and floral notes. A hint of violet is discernible. On the palate, it is rich, refined, and concentrated. The Passetemps climat is located between the village of Santenay and the Gravières climat, another premier cru. The soil is clay-limestone, the vines are seventy years old, and this single-plot cuvée, characteristically, has great aging qualities and deserves to be cherished.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years of trading, the existence of harmful wine-growing practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice which are among the most sought-after in Burgundy. Frédéric worked for a time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own wine merchant company and purchased organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais vintages. The practice is not limited to Burgundy, as vintages are made from grapes purchased in the Jura, Languedoc and elsewhere. At his place, the work of the soil and the vines is done as naturally as possible: regular plowing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Red or white, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.

Dans ce Santenay 1er Cru Passetemps 2023, Frédéric Cossard met toute son sens du vivant et du terroir au service d’un Pinot Noir pur et vibrant. Issu d’un climat classé en premier cru, sur des sols argilo-calcaires typiques de la Côte de Beaune, ce vin naturel sans intrants œnologiques, ni soufre ajouté incarne une Bourgogne libre, fluide et habitée.
La vinification suit les principes chers à Cossard : macération en grappes entières pendant trois semaines, fermentation spontanée en levures indigènes, et élevage d’un an en œuf béton, contenant neutre qui préserve l’intégrité du fruit tout en affinant la texture. Le résultat est d’une pureté saisissante.
La robe rubis brillante laisse deviner un vin élancé et structuré. Au nez, une complexité envoûtante se dévoile : cerise griotte, petits fruits rouges acidulés, notes florales (pivoine, violette), touche terreuse et discrète évocation d’épices douces. La bouche offre un équilibre remarquable entre finesse tannique, tension minérale et longueur salivante. Ce vin déroule avec grâce, entre intensité et légèreté, et appelle naturellement la table.
Il accompagnera parfaitement un filet mignon de veau, une volaille rôtie, ou encore un risotto aux champignons sauvages. À servir autour de 15°C, sans carafage, pour profiter pleinement de son expression délicate.
Encore jeune, ce premier cru promet une belle évolution sur 5 à 10 ans, développant avec le temps davantage de profondeur tout en gardant son éclat naturel. Une grande cuvée d’émotion, pour amateurs de pinots sincères et vivants.
Santenay Clos Genets Rouge 2023
Frédéric Cossard
Santenay, en Côte de Beaune, livre ici l’un de ses visages les plus lumineux grâce au travail inspiré de Frédéric Cossard. Ce Clos Genêts 2023 est un pur Pinot Noir élevé sans artifices ni compromis : une macération en grappes entières de trois semaines, une fermentation en levures indigènes, aucun intrant œnologique, pas de soufre ajouté, et un élevage d’un an en œuf béton. Résultat ? Une expression du terroir à la fois libre, précise et vibrante.
Le terroir argilo-calcaire de ce clos confère au vin une belle tension minérale, qui soutient une matière fine et délicate. La robe, d’un rubis limpide et brillant, annonce déjà la fraîcheur du millésime. Au nez, on est accueilli par des arômes intenses de fruits noirs croquants – mûre, cerise burlat, cassis frais – avec une touche florale délicate et une pointe de poivre blanc. En bouche, le vin se déploie avec souplesse : les tanins sont fins, la structure aérienne, et l’ensemble offre une sensation de pureté presque cristalline. La finale, légèrement saline, prolonge la sensation de fraîcheur.
Ce Santenay Clos Genêts accompagne avec bonheur une belle charcuterie artisanale, un rôti de veau aux herbes ou encore une volaille grillée. This white is the story of a beautiful encounter between a Garganega and a touch of Trebbiano. Produced from vines growing on the volcanic slopes of Veneto, Sassaia is the result of spontaneous fermentation, without filtration, using indigenous yeasts, before aging in barrels. With a beautiful orange color, it stands out for its powerful and slightly smoky nose, which continues on the palate with notes of cider while retaining a beautiful acidic structure. Full-bodied and generous, it will perfectly replace a red wine with a grilled meat dish.
