Vinification: La cuvée Cœur Brisé est vinifiée en deux parties : une macération courte de 3 jours en grappes entières non foulées, et un pressurage direct. Les raisins, récoltés légèrement sous-mûrs, préservent fraîcheur et notes florales malgré la saison chaude. Après fermentation, les jus sont assemblés puis élevés durant 19 mois en cuve inox.
