Munjebel PA Red 2020
Cornelissen
Munjebel PA, a single-vineyard organic (Eurofeuille), biodynamic, and natural cuvée from Frank Cornelissen, is a Sicilian red wine in the DOP Etna Rosso/IGP Terre Siciliane Nerello Mascalese. It comes from the Feudo di Mezzo contrada, in the Porcaria area, at an altitude of 640 meters. Maturation is not facilitated by the depth of the soil in the case of a wet vintage, but what a reward upon tasting!
Vinification
The Nerello Mascalese harvest is destemmed and lightly crushed, before a sixty-day fermentation-maceration on the skins. The wine is aged for 18 months in vats and 18 months in bottles. No fining, light filtration.
Tasting

Munjebel CS Red 2020
Cornelissen
Munjebel CS is a natural single-plot red cuvée made from 100% Nerello Mascalese, biodynamic and organic (Eurofeuille label). It is produced by Frank Cornelissen in the DOP (AOP) Etna Rosso/IGP Terre Siciliane Nerello Mascalese. The grapes come from the Zottorinoto contrada and the Chiusa Spagnolo plot, towards the bottom of the valley, in a lava rock amphitheater at a relatively low altitude (620 m). This is a unique, ungrafted vineyard, planted around 1925.
Vinification
The Munjebel CS harvest is destemmed and lightly crushed. Fermentation, using a vat base and indigenous yeasts, is accompanied by a 50-day skin maceration. No fining, light filtration before bottling.
Tasting
The Chiusa Spagnolo plot produces a deep and tannic wine, a little behind the other crus of the contrada and reminiscent of the varietal typicity of Nebbiolo. The color is slightly less intense than that of the other reds of the estate and the wine is a little slower to express itself. You will pair it with meats, charcuterie and Mediterranean dishes. Also try it with a roast pigeon from Bresse (Pierre-Eudes Quintart) or from Brittany (Volailles Renault).

Domaine Bélicard
Among the ten Beaujolais crus, Fleurie is undoubtedly the most ethereal, the most floral, and Domaine Bélicard offers a natural and elegant interpretation here. This 100% Gamay Noir, organically certified, grows on the granitic slopes of the cru, which give this wine remarkable mineral finesse.
Gentle winemaking for a delicate wine
The grapes, picked at perfect ripeness, undergo a short maceration of a few days to extract just enough matter without harshness. Fermentation occurs naturally, without exogenous yeasts or additives. The six-month aging takes place in barrels that have held several wines (not new), bringing complexity and suppleness without masking the fruit.

Domaine de Chassorney
The illustrious Burgundy vineyard of Pommard, the epitome of Burgundy red wine, is represented here by Frédéric Cossard in the form of this beautiful wine full of red fruits and voluptuousness. On the palate, it is supple and light, but also has presence and personality. A straightforward, loyal, taut wine, adored by the ancient Dukes of Burgundy. The soils are clay-limestone and well-drained at the lower slopes, and at higher altitudes are Oxfordian marl, brown calcic and brown calcareous soils. Occasionally, a red tint emerges, revealing iron oxide. Pommard retains a virile and assertive reputation, especially inherited from the 19th century. However, it reveals itself to be sensitive, supple, and feline, tending towards leather, pepper, and chocolate with age. It is best to let this wine age a little to allow it to express its full potential. The Pinot Noir harvest on clay-limestone soil is macerated for three weeks in whole bunches before aging for a year in concrete eggs.

This Pinot Noir comes from a plot with a steep, south-southeast facing terroir located between 280 and 400 meters above sea level in the Saint-Romain appellation. Amoroso Rouge has nothing in common with traditional, syrupy industrial vermouths. This audacious creation from Distillerie Sentema, nestled in the Alpes-Maritimes, shatters the codes of red vermouth by offering a dry, complex, and vegetal version, entirely rooted in the Provençal terroir.
The base is a succulent and juicy Syrah from Domaine de Garbelle, cultivated in the Var region. This wine is fortified with a local wine spirit, then infused for two weeks with a bouquet of wild plants from the Var garrigue: Barjols absinthe, savory, rosemary, oregano, agastache, as well as bitter orange zest harvested in the Alpes-Maritimes.
The result? A dry, taut vermouth, with no added sugar, driven by structuring bitters, an intense palate, and a savory finish that evokes green olives and sunshine. On the nose, a deep aromatic profile emerges: rosemary, dried herbs, citrus zest. On the palate, the attack is direct, with a perfect balance between the black fruit of the Syrah and the bitter touch of the botanicals. The long, fresh finish, subtly aniseed by the absinthe, evokes a sun-drenched corner of the garrigue.
Ideal as an aperitif, Amoroso Rouge can also elevate a Mediterranean Negroni or be served neat, on the rocks, with an orange twist.

The quiet strength of a patient and vibrant Cahors
With Covenant 2018, the Danis dans la vigne estate continues its meticulous work with Malbec, offering it a rare setting of time and care. This natural red from Cahors, organically grown on clay-limestone soil, benefited from an extraordinary aging process: 2 years in barrels, followed by 4 years in vats before bottling. All of this, without any rush, without fining, without filtration, in an artisanal approach that is deeply respectful of the grape and the terroir.
This wine, with its dark, almost opaque color, immediately conveys a sense of depth. The long and controlled aging gives it a complex aromatic expression, where violet, the signature of Malbec, blends with candied black fruits, sweet spices, and a delicate hint of melted wood.
A natural red of character and aging potential
On the palate, Covenant 2018 is ample, structured, yet perfectly balanced. The tannins are present but velvety, the texture is juicy, enveloping, and the saline finish extends the elegance. This wine has lost none of its vibrancy despite its six years of aging — on the contrary, it gains in depth with each breath.
To be enjoyed today or kept in the cellar for another 10 years or more, this cuvée is ideal with roasted red meat, an autumn barbecue, or a truffle dish. Serve it at 16-18°C, no decanting necessary, in a large balloon glass to release all its complexity.

Corva Gialla
Vino Rosso, simply named, can be considered the emblematic red of Azienda Corva Gialla. Red fruits, freshness, mineral and earthy notes, tertiary aromas, spices, and tobacco: this is how we can summarize the profile of this 100% Sangiovese with the Vino da Tavola (table wine) designation. With a few years of bottle age, this 2018 offers beautiful notes of evolution and a pronounced but not excessive body. The richness, due to a high content of natural sugars during fermentation, and the polyphenolic maturity are remarkable, as well as the balance between velvety and tannicity, lightness and body, roundness and acidity. On the nose, notes of spices such as cinnamon, black pepper and fennel; on the palate, the wine is full-bodied and red fruits dominate: ripe cherry, raspberry and strawberry. Black fruits and plum are not left out, and delicious aromas of dried fruits (prune, fig) combine with spices on the finish. Vino Rosso is a classic Sangiovese from old and newer vines planted at 450 meters above sea level on a west-facing plot with volcanic soils. The harvest is destemmed. A starter culture is made from a small proportion of grapes, while the rest is directly pressed and added directly to the starter culture. The wine rests in fiberglass vats until bottling in March.

Azienda Corva Gialla ("yellow crow") is a wine estate in Lazio, Italy, located on the edge of Umbria in the Alta Tuscia Viterbese. A volcanic region considered one of the most beautiful in Italy and characterized by its calanches, tall tuff rock formations delineating deep valleys carved by numerous rivers and streams. Corva Gialla is located in Lubriano, opposite Cività di Bagnoregio. Alta Tuscia is a breeding ground for young winemaking talents dedicated to nature who are enhancing these historically neglected lands. Founded in 2017, the estate has four hectares cultivated by Beatrice Arweiler, originally from another wine-growing region, between the Rhine and the Moselle. The new owner also planted an olive grove (Frantoio and Leccino varieties) and developed the estate for mixed farming and livestock production. The vines were planted with the help of Gian Marco Antonuzzi of the Le Coste estate. The friable volcanic soil lends itself beautifully to viticulture and the planting of grape varieties such as Grechetto d'Umbria, Trebbiano, Vermentino, Sangiovese, and Ciliegiolo. With YARD 2022, Les Souriants estate offers an original and captivating interpretation of Pinot Noir in Beaujolais, a region more accustomed to Gamay expressions. This natural red wine, certified organic, is a pure artisanal product, crafted with care and patience to offer a luminous and sincere expression of the grape variety, without embellishment or artifice.
Coming from vines grown on granitic soils, Pinot Noir finds a mineral tension and vibrant freshness here, far from clichés of opulence. The winemaking remains gentle and precise: a one-month maceration to delicately extract color, aromas, and structure, followed by one year of aging in old barrels, without new wood, to preserve the finesse of the fruit.
On the nose, it's a floral and fruity explosion: crunchy cherry, candied red fruits, fresh rose. A fine and expressive aromatic profile that extends to the palate with a beautiful texture, supple but structured. The wine combines a delicate, almost silky touch with fresh and digestible energy. The finish is straight, clean, slightly saline, leaving a persistent floral sensation in the mouth.
YARD is an elegant red, perfect for aperitifs, roasted meats, pigeon with reduced jus, or even a beautiful vegetarian dish with mushrooms. It can be enjoyed now, without decanting, or aged serenely for 5 years. Served between 16 and 18°C, it reveals the full potential of Pinot Noir in a reinvented Beaujolais, between artisanal precision and free spirit.
