Belonging to a family established since 1601 in the Alsatian wine-growing village of Mittelbergheim, the Armand Gilg estate bears the name of its founder, who resolutely oriented the family business towards viticulture in 1937. Since then, the Gilgs have remained in charge, having expanded the vineyard from an initial one hectare to twenty-nine hectares, purchased centuries-old cellars for bottles and tuns, and built buildings for pressing and other winemaking activities. The estate, classified as HVE (High Environmental Value) for several years, acquired organic farming certification in 2021. Its plots, scattered around the village, are grouped into around a hundred groups, including five hectares on the famous Grand Cru of Zotzenberg, one of the most renowned lieux-dits in Alsace, and one hectare planted solely with Riesling on the Grand Cru Moenchberg. Production embraces all seven traditional Alsatian grape varieties (Pinot Noir, Sylvaner, Auxerrois, Riesling, Muscat, Pinot Gris and Gewurztraminer), also including Chardonnay for the Crémants and the Klevener de Heiligenstein (Savagnin Rose). While all the vintages of the Gilg estate are organic, two natural vintages are produced, one based on Pinot Noir, the other on Sylvaner, within the Les Spontanés series dedicated to wines without additives.

Fond Cyprès
With this evocatively named cuvée, Fond Cyprès delivers an exceptional red wine, structured and vibrant, celebrating the richness of the southern Languedoc. Made from old Carignan, Grenache, and Syrah vines, this natural and organic red wine reflects the complexity of the estate's clay-limestone terroirs and the finesse of aging in large oak foudres.
Respectful and precise winemaking
The grapes are vinified separately after a short one-week maceration, using indigenous yeasts, without the addition of sulfites or oenological inputs. Blending then takes place before 10 months of aging in foudres, which softens the wine without masking the identity of each grape variety. The result: a deep, natural wine, both sun-drenched and fresh.
Complexity, finesse, and length
Upon opening, the wine captivates with an expressive nose combining ripe red fruits, black fruit (blackcurrant, blackberry), sweet spices, and a hint of licorice. The palate is ample, structured yet supple, with fine tannins and a controlled freshness that balances the whole. The long and elegant finish reveals excellent aging potential.

Made in an illustrious Burgundy appellation, it is made from 100% Pinot Noir vines growing on the plot that gave its name to the cuvée.
Vinification
The Genevrières climate, in AOP Gevrey-Chambertin, is located on clay soil on a limestone base. Vinification begins with two weeks of whole-bunch maceration, followed by gentle pressing to preserve the fruit. A year of aging in terracotta (qvevri) gives additional velvety, sensuality and complexity to a wine that already offered a lot.
Tasting
The profile of a great classic red Burgundy with the freedom and breadth of nature. Black fruits, blackcurrant, blackberry, peony, red rose, delicately spiced, a touch wild… So many distinguished notes for this “Les Genevrières” 2022 vintage. This Chambolle-Musigny "Les Herbues" is an organic, natural white wine produced in Burgundy by Frédéric Cossard. It comes from the Les Herbues vineyard, from which it takes its name. Made from 100% Pinot Noir, it is classified under the Burgundy Chambolle-Musigny AOP.
Vinification
The Les Herbues plot is located between 250 and 300 meters above sea level. The clayey terroir, exposed to the east, rests on hard, fissured limestone formations that allow the roots to plunge into the subsoil. The Pinot Noir grapes macerate in whole bunches. Aging is approximately one year in barrels.
Tasting
Beautiful garnet color, finesse, elegance, density and uprightness. Cuvée Carignan Red 2022
It's all in the title: this Cuvée C Carignan by Frédéric Cossard is a 100% organic and natural Carignan, vinified in Burgundy by Frédéric Cossard. The Burgundian master here takes on Carignan from the South, expressing its virtues with his usual dexterity. The blend includes a little Mourvèdre.
Vinification
The Cuvée C Carignan vines are planted at the foot of Mont Ventoux. The vinification of organic grapes is entirely natural, using indigenous yeasts, and maceration is done in whole bunches without exaggerating extraction. Aging is done in vats. No sulfites added.
Tasting

A graceful and delicate pale rosé, a wine with the same qualities: 100% Cinsault, red fruits, citrus notes, flowers, and orange zest. Like Provençal sunshine in a bottle. Marvelously pure, this wine is produced by directly pressing grapes harvested from twenty-year-old vines near Vaison-la-Romaine (Vaucluse), on clay-limestone soils. This is a very rare, dense, and elegant Morey-Saint-Denis, bursting with fresh fruit aromas. It reveals itself to be complex and powerful, with red fruits and violet aromas. This captivating wine promises to improve for a long time (aging potential of around ten years). The small clay-limestone plot of Monts-Luisants is located above the village of Morey-Saint-Denis. The Pinot Noir planted here is of the Pinot Fin variety, a very old and increasingly rare strain. The vines are around seventy years old. The harvest is macerated in whole bunches and aged for one year in barrels.

Maquis Red 2015
Lledo what? Here's a deep red produced from Lledoner Pelut, a little-known Catalan grape variety. The Maquis cuvée reflects the quintessence of the clay-limestone soil, with the added bounty of Roussillon. The grapes are vinified in whole bunches, crushed by foot, then placed in cement vats. A captivating nose with notes of raspberry, confirmed on the palate, with a fairly pronounced tannic texture.

Pauvre Diable Red 2020,
Gourmet, deep, and velvety, this wine offers lovely, well-integrated tannins. The notes of black cherry and blackberry are assertive, while the mid-palate is characterized by touches of spice and rose. A beautiful natural red from the Vinsobres terroir, with a bright, clear ruby color. Don't be swayed by what you read on the label: Pauvre Diable, endowed with all the graces mentioned above, is nothing to be pitied. The name alludes to the state in which Victor Taylor, the current owner of the Serre Besson estate, found the estate when he bought it in 2011. A restoration of the vineyard followed, as well as a conversion to organic farming which is now bearing fruit: in this case this natural cuvée, without adding any inputs to the vineyard or the cellar, a pure expression of the estate's varied soils (sand, limestone, clay) and the oldest Grenache vines planted there. You can drink it now, in its youth and freshness, or let it age for three to five years.

In 2011, Victor, a Californian sommelier who had settled in Nyons after leaving his position as restaurant director at the Carlyle Hotel in New York, became passionate about the Serre Besson estate, then a small, abandoned wine estate nestled around an old stone building. He bought the whole property, renovated it, and revitalized the vineyard. A few years later, the red wines from the Serre Besson estate, in the Vinsobres appellation, were making waves, were noticed in competitions, and won several medals. Victor, upon taking over the estate, began his conversion to organic farming, which now allows him to produce an entirely natural cuvée based on Grenache: this is the Pauvre Diable that we offer you. In addition, it produces a Vinsobres appellation of origin whose grape varieties bring together Syrah, Cinsault, Mourvèdre, Carignan and Grenache. As well as a rosé macerated with Grenache Noir, Syrah and Viognier. The owner's ambition is not to impose a new style but to respect the terroir and nature in an environment that offers all the possibilities to make exceptional wines.
Alsace Blanc 2024
Domaine Einhart
Domaine Einhart, a long-time organic farming advocate, presents a white wine that captures all the freshness and lusciousness of great Alsace whites, without ever sacrificing their finesse. This 2024 vintage, just bottled, is the result of a classic regional blend: predominantly Auxerrois, with Muscat, Pinot Gris, and Riesling. An Alsatian quartet vinified by direct pressing, without embellishments or over-extraction, and aged for 7 months in large oak casks on fine lees to preserve the wine's aromatic purity and tension.
The clay-limestone soil, typical of the Alsace plain, gives this wine both roundness and verticality. No oenological inputs, exclusively native yeasts, and a vinification that respects natural balances: a lively, expressive, and absolutely digestible white.
Floral vivacity and ripe fruit lusciousness
From the moment it's served, the pale, brilliant color hints at the wine's freshness. The nose is very aromatic, dominated by yellow lemon, delicate floral notes (linden, jasmine), and a touch of very ripe exotic fruit (lychee, fresh mango). On the palate, it's an explosion of freshness: a lively attack, a supple mid-palate thanks to the Auxerrois, and a taut finish driven by the Riesling's character. The balance is perfectly mastered.

Weingarten Blanc 2024

Under the guidance of Domaine Einhart in Alsace, the Weingarten cuvée embodies the delicacy of a Sylvaner expertly crafted on a clay-limestone terroir. Vinified with certified organic methods and without oenological artifice, this natural white wine expresses a beautiful purity of fruit, balanced by a fresh and direct structure. Here, the humblest grape variety flourishes fully on the most generous soils.
The winemaking process involves a pre-fermentation cold maceration (12 to 14 °C) for 24 hours, promoting aromatic expression without extracting undesirable tannic compounds. The subsequent direct pressing produces a clear and delicate juice, which is then aged in stainless steel tanks for 10 months, preserving all the wine's vibrancy. The estate relies on spontaneous fermentation using indigenous yeasts, in full respect of the grape and its ecosystem.
Upon tasting, Weingarten 2024 reveals a pale color with green reflections. The nose is vibrant: white flowers, herbaceous notes, and a hint of exotic fruits. From one of the finest climates in Volnay, this premier cru red wine is opulent, balanced, and dense. It offers abundant notes of red and black fruits, including a full, ripe, and flavorful cherry. This is a voluptuous wine to be enjoyed at special occasions. Its velvety structure is fine and delicate, soaring into notes of airy lightness. The Lurets plot, in the Volnay AOC, produced this Pinot Noir. Its steep, west-southeast-facing terroir is located between 230 and 280 meters above sea level. The soils are primarily composed of pink limestone supported by white schist pebbles. The grapes macerate in whole bunches for two weeks in open wooden fermenters. In the heart of France's oldest vineyard—Gaillac, in the Tarn region—Sylvie Ledran, Philippe Maffre, and their son Hippolyte oversee their Bois-Moisset estate, a wine-growing property associated with mixed crop and livestock farming, all organic. Gaillac is famous for its many ancient indigenous grape varieties, and its wine-growing heritage is uniquely rich.
Cows and Vines
Domaine Bois-Moisset is also home to a herd of old local breed cows, and guest rooms are available during the summer months. It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years.
Native grape varieties
The grape varieties are dominated by Syrah and Duras, but the wines of the Bois-Moisset estate reflect the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l’œil, mauzac, braucol, ondenc, etc.). The red wines are crisply fruity, concentrated but with smooth and delicate tannins, the whites have character and the pet’ nat’ are particularly tasty.
