Cyprès de Toi Rouge is to be enjoyed in all circumstances; it is a wine for all occasions. Very drinkable, straightforward, and structured, it is the result of a blend of the estate's young vines: Syrah, Grenache, and Carignan, destemmed and vinified separately with indigenous yeasts in concrete vats, a traditional method in the Corbières. This fermentation and aging method owes its total absence of oak, allowing for a very pure fruity experience. No inputs are used in the vineyard, the winery, or the bottling process. This is practiced all year round, as the estate keeps the juices in vats: the idea is that there is never a shortage. It will be an ideal companion for Iberian ham, red or white meats, duck, and all grilled dishes.

This Corbières estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the heart of the old Corbières massif, they took over an old estate already planted with abandoned Carignan and Grenache vines, which had not seen any fertilizer or pesticides for years: these clean and vibrant soils were ideal conditions for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. Vinification is carried out without the addition of sulfites or exogenous yeasts. A beautiful texture, with notes of citrus and exotic fruits. Roussanne, Grenache Blanc, and Viognier grown on the same plot: a southern blend that produces a truly southern white, classified as a Vin de France, original, balanced, fresh, structured by light maceration, fermented and aged in barrels. Its profile is atypical in Corbières. A distinctive feature: the plot was planted according to the desired wine, and chosen to face north to ensure good acidity. The three grape varieties are harvested at different ripeness levels. As soon as the Viognier (later) is ripe, everything is harvested together: the white Grenache is often overripe. This produces a very particular taste balance, between freshness, richness, and roundness. After direct pressing, the must is vinified in old 225-liter barrels, then aged for ten months. It can be kept for around ten years, if given time: all pairings suit it.

At the foot of the Corbières mountains, the Fond Cyprès estate produces a 2024 red wine imbued with freedom and energy. This natural wine, certified organic (AB), is born on sun-drenched clay-limestone soils, with total respect for the environment: soil cultivation without synthetic products, hand-harvesting, and vinification using short maceration without added yeasts or oenological additives. Here, the fruit expresses itself in all its purity, without artifice.
The Mediterranean trio – Carignan, Grenache, and Syrah – yields a wonderfully fresh wine, with a slightly spicier profile than the previous vintage. Its clear ruby color heralds a youthful and vibrant wine. On the nose, an immediate bouquet of red fruits (cherry, raspberry) mingles with a herbaceous and peppery touch reminiscent of garrigue paths after the rain. The palate, fluid and lively, seduces with its drinkability: smooth tannins, lovely acidity, and a clean finish of sweet spices. A wine that doesn't seek effect but rather the pure expression of the terroir.
Served at 16-18°C, it pairs equally well with grilled red meat or as an aperitif with friends, featuring fine charcuterie. This vintage requires no decanting and can be enjoyed now, but will gain complexity over the years, with an aging potential of 5 to 10 years.

Un vin naturel, vinifié avec précision
Après une macération d’une semaine, le raisin fermente spontanément en levures indigènes, sans aucun intrant œnologique. Le vin est ensuite élevé pendant six mois en cuve bois, ce qui lui confère à la fois rondeur et structure, tout en préservant la fraîcheur de l’expression aromatique.
Élégance, fruit et légèreté
Au nez, la cerise griotte domine, avec une jolie pureté et une touche florale délicate. En bouche, l’attaque est souple, la matière fluide, les tanins soyeux. Le vin déroule avec finesse, sans excès, mais avec une longueur étonnante pour un vin de ce degré d’alcool (12 %). Une vraie personnalité, entre légèreté et précision.

Fond Cyprès
Avec Cyprès de Toi, le domaine Fond Cyprès signe une cuvée de Chardonnay bio venue du Languedoc, au style étonnamment frais et aérien. Ce vin blanc tranquille, issu de presse directe et élevé en cuve inox, met en avant la pureté du fruit, la vivacité du cépage et la gourmandise simple d’un vin naturel accessible.
Un Chardonnay sans maquillage
Cultivé sur des sols argilo-calcaires, le Chardonnay est vendangé tôt pour préserver son acidité naturelle. Pressé directement, il fermente en levures indigènes sans ajout d’intrants œnologiques, puis il est élevé six mois en cuve inox, afin de conserver toute sa fraîcheur et son éclat aromatique. Le résultat : un vin droit, limpide, prêt à boire.
Un blanc vif, floral et désaltérant

Signée Fond Cyprès, elle résulte d’un pressurage très doux de Carignan et Grenache, cultivés en bio sur sols argilo-calcaires du Languedoc, avec un style volontairement souple, fruité et spontané.
Un vin nature sans maquillage
Les grappes entières sont mises en cuve pour une macération courte et douce, sans égrappage. La fermentation se déroule en levures indigènes, sans ajout de sulfites ni autres intrants œnologiques. L’élevage, de six mois en cuves inox, préserve la fraîcheur et le côté juteux du fruit.
Un profil léger et rafraîchissant

Avec cette version rosée de Cyprès de Toi, le domaine Fond Cyprès livre un vin léger, vif et délicat, à base de Malbec pressé directement, sans macération. Ce rosé nature du Languedoc, certifié en agriculture biologique, joue la carte de la subtilité, de la fraîcheur et de la buvabilité immédiate.
Un rosé de soif, sans artifice
Issu de vignes plantées sur des sols argilo-calcaires, le Malbec est pressé directement après récolte, sans macération pelliculaire, pour donner un jus clair, tout en délicatesse. Avec Retour de Milan, Fond Cyprès dévoile une interprétation brillante et inédite du Muscat Petit Grain, vinifié en blanc de macération. Ce vin orange bio du Languedoc, aussi élégant qu’expressif, sort des sentiers battus pour offrir une expérience sensorielle unique, fraîche et gourmande.
Une macération tout en subtilité
Ici, les grappes entières de Muscat sont mises à macérer quelques jours, afin d’apporter texture et complexité sans perdre la délicatesse du cépage. La fermentation est spontanée, en levures indigènes, sans intrants œnologiques, suivie d’un élevage de 5 mois en œuf béton, qui favorise le mouvement naturel du vin et un contact doux avec les lies. Le résultat : un jus vivant, texturé, mais d’une fraîcheur exemplaire.
Un vin orange lumineux et aromatique
Le nez est éclatant, entre bergamote, zeste d’agrumes, fleur d’oranger et litchi frais. En bouche, le vin joue l’équilibre entre tension et douceur, avec des tanins très fins et une finale délicatement amère qui prolonge le plaisir. C’est un orange digeste, ciselé, à la fois floral et citronné.
Accords audacieux, plaisir immédiat
Servez-le entre 10 et 12 °C, sans carafage. Ce vin se marie idéalement avec les cuisines d’Asie (épices douces, curry thaï, sashimis), des fromages affinés (pâte persillée, tommes longues) ou même un dessert fruité peu sucré. Il pourra évoluer en cave sur 5 à 10 ans.

In 1998, in the heart of the Corbières appellation, between Lézignan and Escales, Rodolphe and Laetitia purchased eighteen hectares of plots that would form the core of their Fond Cyprès estate. Even before planting their first vine, these locals, both descendants of winegrowers, already had a clear vision: "to produce southern wines that reflect our style, wines with character, rooted in our soils, but with freshness and refined tannins." They wanted to create concentrated terroir wines, entirely natural wines. They began by developing the terraces to plant vines: six years of work to create a winery that lived up to their dreams. The estate's conversion to organic farming began in 2004, and the first organic harvest was in 2010, at the same time as they began practicing natural winemaking. To achieve this, they received the help and expertise of Frédéric Cossard, their friend from Burgundy, also featured in the Culinaries catalog. Far from seeing natural wine as a bohemian market, they see it as the future of viticulture. The fact that Michelin-starred chefs praise their wines fuels this confidence.
The formation of the Pyrenees significantly altered the soils of the old Corbières massif and the wine appellation that bears its name, transforming it into a mosaic of clay, limestone, sandstone, schist, and gravel terroirs. Around Lézignan, Quaternary detrital terraces dominate: stony scrubland, clay-limestone, and clay-gravel soils; true wine terroirs from which Fond Cyprès draws its quintessence. The dry Mediterranean climate is tempered by vegetation (trees and hedges) around the plots, preserving the freshness of the soil.
The first plots purchased were already planted with abandoned Carignan and Grenache, which had not seen any fertilizer or pesticides for years: these clean, vibrant soils were ideal conditions for embarking on natural winemaking. Around this historic heart of the estate, Syrah and Grenache Noir were planted. Finally, a final plot was planted with white grape varieties: Viognier, Grenache Blanc, and Roussanne.
Since 2010, the estate has been certified organic (Ecocert, Nature et Progrès). Rodolphe and Laetitia like to point out that their example has convinced their neighbors to go organic as well. The vines are bordered by hedges of various plant species (iris, broom, pyracantha, bay laurel). The terraced vines are demarcated by low stone walls. Three-quarters of the harvest is carried out manually, in crates.
Vinification is carried out without exogenous yeasts or added sulfites. Rodolphe and Laetitia select the finest grapes, destem them by hand, and ferment or press them. With the "pied de cuve" obtained by spontaneous fermentation, they inoculate the following vats. Careful cleaning of the vats and temperature control prevent the proliferation of bacteria. Extractions are gentle, and often, to soften the tannins, Bordeaux or Burgundy barrels with several wines are used for aging for nine to ten months. No filtration is performed.
"We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest: the musts are fruitier, more fluid, more complex. The names of the vintages are simple: grape variety, appellation or color, plot; sometimes a little lyricism ("Cyprès de toi"), always in moderation. The vintages follow the plots very closely: The Grenache du bois Saint-Jaume, from sixty-year-old vines, restores in its velvety texture the aromas of garrigue present in the plot. The Carignan de la source, also from old vines, offers aromatic notes of linden and red fruits. The Syrah de la pinède expresses the freshness of young fifteen-year-old Syrahs surrounded by pines and cypresses, with aromas of black olive. Finally, the Corbières is a blend of the three. As for the Blanc des garennes, it is an atypical white from the South, rich and deep, which brings together the three white grape varieties planted in the youngest plot, harvested at the same time at different ripenesses.
