Auxerrois Origin White 2022,
Auxerrois Origin by Jean-Marc Dreyer is an organic (AB label), biodynamic, and natural dry white Alsatian maceration wine (orange wine), with no added sulfites. Jean-Marc Dreyer's Origin range consists of single-varietal cuvées based on six Alsatian grape varieties (Sylvaner, Auxerrois, Pinot Gris, Gewurztraminer, Riesling, and Muscat), enhanced by skin-contact maceration with a touch of controlled oxidation. The discovery of each Origin vintage is always a pleasant surprise.
Vinification
Auxerrois, or Pinot Auxerrois, is a typically Alsatian grape variety with floral and spicy notes. The harvest, done by hand, is macerated for seven days in whole bunches. After pressing and fermentation, the wine is aged for ten to eleven months in Alsatian style, in tuns and demi-muids, without topping up. Biodynamic method, fermentation with indigenous yeasts, unfiltered, unclarified, no sulfites added in the vineyard or cellar.
Tasting
Floral, fresh, seductive, slightly smoky, Auxerrois Origin by Jean-Marc Dreyer is both atypical and delicious. The maceration gives it a distinguished chew on very fine tannins. With its amber color, floral notes, seductive bitters, delicious salinity, hints of white peach and citrus, and perfect straightness, it is ready for any pairing. A bellota Iberico ham would melt with happiness next to it, but it will also be a delight alongside smoked fish, seafood platters, mature cheeses, or white meats. We will enjoy it, for our part, with a beautiful roasted poultry.

Jean-Marc Dreyer, a biodynamic and natural Alsace winemaker (AB organic certification label), succeeds several generations of his family at the Dreyer & Fils estate, created in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics. In 2009, upon returning from a pilgrimage to Compostela, he decided never to add sulfur to any wine again. Having made this decision, he asserted his style around skin maceration, accentuated, chiseled, bringing out the soul of Alsatian grape varieties. Jean-Marc also works with direct pressing and often with single varietals. He also produces Pinot Noir reds of surprising depth.
Maceration and Direct Press
Jean-Marc Dreyer's wines are characterized by whole-bunch maceration (but you should also taste his direct-press whites). "Maceration in Alsace," he says, "is an ancestral tradition! In the past, we worked by hand and let the grapes macerate before sending the marc to the press." Gentle oxidation is also a particular characteristic of his wines, generally vinified without topping up. Jean-Marc is best known for his "Origin" series, a finely macerated expression of Alsace grape varieties, but we invite you to discover his other wines.
Munjebel FM Red 2020
Munjebel FM, one of Frank Cornelissen's single-plot cuvées, is an organic (Eurofeuille), biodynamic, and natural red wine with DOP Etna Rosso and IGP Terre Siciliane Nerello Mascalese appellations. It comes from the vast Feudo di Mezzo contrada, specifically its upper part, known as Sottana. Its soil is deep, and the wines it produces are of an unusual elegance, but typical of this region. The site is ventilated, but ideal ripeness is difficult to achieve in humid vintages.
Vinification
The Nerello Mascalese harvest is destemmed, lightly crushed, and then macerated for 50 days on the skins. Fermentation is carried out using indigenous yeasts. The wine is aged for 18 months in fiberglass vats and 18 months in bottles. It is not clarified but lightly filtered.
Tasting
An almost Burgundian elegance and roundness characterize this wine, even in warm vintages. A special vintage of great finesse, which adapts to the most varied dishes. Try it with all the cuisines of the South: Italian, Greek, Provençal… We would recommend a delicious cassoulet from Sillon to accompany it. Or simply a good black pig ham from Bigorre.

An ideal terroir for plot-by-plot vinification
In Passopisciaro, Sicily, in the north of the Etna Valley, the 19 plots cover 24 hectares of basalt soils spread over numerous plots (contrade) between 600 and 900 meters above sea level on the side of the volcano. It is, says Frank Cornelissen, the "Côte de Nuits of Sicily." Frank Cornelissen's contrade are all cultivated biodynamically and vinified separately: he decides on the blends based on the quality of each.
The nobility of Nerello Mascalese
Nerello Mascalese is the dominant variety and alone makes up the greatest vintages. This traditional red grape variety from the northern Etna valley produces hypermineral wines due to its long growing cycle. Rafalot Red 2013,
The Carignans of this Côtes-Catalanes are 125 years old and grow at an altitude of 300 meters in a clay-limestone valley, surrounded by wild fig trees, cedars, olive trees, apricot trees, and buzzing beehives, all protected by a pine forest. Fermentation lasts two weeks in concrete vats, with whole bunches crushed by foot, followed by aging in vats. Cherry and spice, supple and elegant tannins: full-bodied and irresistible.

Rubaiyat Red 2009
This wine is produced from Syrah vines planted at an altitude of approximately 1,290 meters, facing south on schist and clay soils. The destemmed harvest macerates in stainless steel vats, and is aged for sixteen months in old barrels. The Syrah, originally from Persia, inspired the name of the vintage: Rubaiyat is the title of a lyrical cycle by the Persian poet Omar Khayyam (11th century), a man of great wisdom, mathematician, astronomer... He wrote in particular about the joys that wine brings, among other pleasures of life.

Yeti Rouge 2024
La Tribu Alonso
La cuvée Yeti 2024 est un vin aussi atypique que son nom, né dans le Beaujolais sous l’impulsion passionnée du collectif La Tribu Alonso. Ce 100 % Gamay, ou plutôt devrions-nous dire « 100 % diversité de Gamay », réunit pas moins de 31 variétés différentes de ce cépage : Gamay teinturier, blanc, rose, clones anciens, plants oubliés… Une mosaïque de raisins qui reflète la richesse du vivant et l’esprit libre de ses vignerons.
Les raisins sont cultivés sur sols granitiques, sans produits de synthèse, selon une approche totalement naturelle, même sans certification. Après une macération semi-carbonique de 5 jours en cuve fibre, la fermentation s’effectue grâce aux levures indigènes, sans intrant œnologique. Le vin est ensuite élevé pendant 12 mois en œuf béton, ce qui lui apporte rondeur, énergie et équilibre, sans maquillage bois.
Le résultat ? Un vin rouge vibrant et juteux, à la robe légère et éclatante. Le nez dévoile des fruits rouges croquants, une touche herbacée, quelques épices douces et une pointe poivrée. En bouche, c’est fluide, digeste, avec une belle matière qui reste fraîche et élégante. Un Gamay glissant mais jamais simpliste.
Yeti se déguste à l’apéritif, sur de la charcuterie artisanale, des plats légèrement épicés ou même des viandes blanches grillées. C’est un vin de plaisir immédiat, qui parle à la fois aux curieux et aux amateurs éclairés de vins naturels vivants, à boire jeune ou dans les 5 ans.
Amphore Rouge, 2023
Philippe Chatillon
Avec Amphore 2023, Philippe Chatillon livre une cuvée rouge rare et singulière, mariant la typicité jurassienne à une méthode d’élevage ancestrale. Ce vin naturel certifié bio, classé en Vin de France, est issu d’un assemblage subtil de Pinot Noir et de Trousseau, deux cépages emblématiques du Jura, cultivés sur sols argilo-calcaires et vinifiés dans un esprit de pureté et de respect du fruit.
Après une courte macération d'une semaine, le vin est élevé pendant deux ans en amphores (qvevris), ces jarres en terre cuite utilisées traditionnellement en Géorgie. Ce choix d’élevage permet une oxygénation lente et naturelle, sans transfert d’arômes boisés, préservant ainsi la franchise du fruit, la délicatesse florale et la complexité du vin.
Au nez, Amphore 2023 séduit immédiatement : fruits rouges croquants, violette, note herbacée fraîche, et une touche légèrement terreuse qui rappelle la matière même de l’amphore. En bouche, c’est un vin léger, fluide, mais structuré, doté d’une tension naturelle et d’une belle persistance aromatique. L'équilibre entre la finesse du Pinot Noir et la vitalité du Trousseau est remarquable, porté par un élevage qui agit comme un révélateur plutôt qu’un maquillage.
À table, ce rouge vibrant accompagnera des viandes rouges grillées, des plats végétaux racinaires, ou encore des charcuteries fines. Il s’exprimera pleinement autour de 12 à 14°C, après un passage en carafe, et peut se garder entre 5 et 10 ans.

Le Sage Vagnin, Blanc 2023

Le Sage Vagnin 2023 est une cuvée précieuse, confidentielle et empreinte de sagesse. Seulement 800 bouteilles produites chaque année, toutes issues d’un petit clos planté de vignes de Savagnin âgées de 65 ans, enracinées profondément dans les marnes grises jurassiennes. Cette rareté est le fruit du travail précis et inspiré de Philippe Chatillon, vigneron sensible au vivant, dont le domaine est certifié en agriculture biologique, et situé dans le berceau du cépage, à Arbois.
Vinifié en pressurage direct puis élevé deux ans en barriques anciennes, ce vin blanc AOC Arbois se distingue par sa pureté aromatique et sa rondeur équilibrée. Aucun bois neuf, aucun intrant : juste le raisin, le temps, et l’attention du vigneron. Le résultat est un Savagnin tout en nuances, d’une rondeur minérale, entre tension et douceur.
Le nez est à la fois expressif et délicat : agrumes frais, pêche blanche, fleur d’acacia, avec une touche minérale subtile. En bouche, la texture est ronde mais tendue, avec une belle allonge, une sensation saline élégante, et une finale fraîche et florale. Le vin évite toute lourdeur, jouant sur l’équilibre parfait entre richesse naturelle du cépage et finesse du terroir.
Le Sage Vagnin accompagnera avec grâce des fruits de mer, des fromages affinés comme le comté ou le bleu de Gex, mais aussi une cuisine plus épicée, orientale ou végétale. À servir entre 10 et 12°C, avec un léger carafage, et à apprécier dès maintenant ou à garder jusqu’à 5 ans.

Puits Saint Pierre, Blanc 2023

La cuvée Puits Saint Pierre 2023 signée Philippe Chatillon est un magnifique hommage au Savagnin, cépage emblématique du Jura, ici travaillé avec une précision remarquable. Issu de la plus belle parcelle du domaine, plantée sur des marnes typiques des Côtes du Jura, ce vin blanc naturel et certifié en agriculture biologique, s’inscrit dans la tradition jurassienne tout en affirmant un style pur, net et vivant.
Le raisin est récolté à maturité optimale puis pressé directement, sans macération, pour préserver la fraîcheur et l’expression variétale. Le vin est ensuite élevé deux ans en barriques anciennes, sans intervention œnologique ni bois neuf, permettant une micro-oxygénation subtile qui affine la structure et développe la complexité aromatique.
Au nez, c’est un festival de sensations : abricot sec, miel fin, pointe briochée, herbes alpines, et une minéralité crayeuse qui annonce la tension en bouche. Cette dernière est droite, sèche, tendue, avec une superbe acidité qui porte les saveurs vers une finale longue et saline. L’équilibre entre le gras discret de l’élevage et la droiture naturelle du cépage en fait un vin gastronomique par excellence.
Puits Saint Pierre se marie idéalement avec des fruits de mer iodés, un vieux comté, ou des plats épicés aux saveurs orientales. Un passage en carafe est recommandé pour qu’il s’ouvre pleinement. Il peut être dégusté dès maintenant pour sa pureté ou attendu 5 à 10 ans pour gagner en complexité. À servir frais, entre 10 et 12°C.

Ceci n'est pas un vin White 2023
Ceci n'est pas un vin is still a wine, white, dry, organic, and natural, with no added sulfites. Made in Beaujolais by Cyril of La Tribu Alonso, it is classified as a Vin de France. It is 100% Chardonnay, but there are twenty-eight different varieties in the bottle. Just as the red wine Ambre dissolve is inspired by Salvador Dalí, this one obviously alludes to Henri Magritte (see the label).
Vinification
The collection of twenty-eight Chardonnays from the ampelothèque, from which Ceci n’est pas un vin is made, is planted on a half-hectare plot on granite, with wild grass, agroforestry and no tillage. The vines, pruned in the goblet style, are between four and thirty years old. There are Chardonnays here of all tastes and colors (white, pink, muscaté, etc.), and it seems that the multiplicity of grape varieties gives a whole new face to this Chardonnay, unfortunately a little overused in the world of viticulture. "We are moving away from the boring Chardonnay," says Cyril. The manual harvest goes into direct pressing and, after a 48-hour settling process, only sees from the vat to its bottling. Alcoholic fermentation without starter culture using indigenous yeasts, malolactic fermentation also in fiberglass vats. Zero chemical inputs, in the vineyard and in the cellar, and zero added sulfites.
Tasting
Surprisingly, Ceci n’est pas un vin: the opposite of classic Chardonnay, it has great qualities of resistance. Solid, fine and balanced. A dry white wine with no added sulfites that has a very long shelf life once opened, it is rare and unique. It can last, recorked, for a whole week. On the nose and palate, it is a marvel of perfume and aroma, as if it offered the quintessence of Chardonnay through all its varieties. Salty, iodized, aromatic and floral, it evokes peach or apricot blossom, white peach, and its acidity-alcohol balance will allow it to be kept between 5 and 7 years. It can be drunk whenever you want, with oysters, shellfish, raw or smoked fish, tapas, fine starters and any elegant and refined cuisine.

This tribal name refers to Cyril Alonso, winemaker, his wife, naturopath, and their family. They take care, using organic farming methods, of a conservatory of traditional grape varieties from the Rhône-Alpes region located in Marchampt (Rhône), in the heart of the Beaujolais Vert region. This two-and-a-half-hectare ampel library, which has existed since 1952, contained forty grape varieties. It currently contains one hundred and forty. This unique location gives the Tribu Alonso wines their particular style. Instead of being single-varietal microcuvées, they are quite the opposite: wines by grape variety family, either a Chardonnay containing all the Chardonnays of the house or a multi-Gamay Gamay.
A biotope classified in 2008
The estate enjoys a unique ecological location: the house and the vineyard are surrounded by untouched forests, on the steep terrain of northern Beaujolais. Three rivers cross it, and the vines, close to the bedrock, capture all the minerality of the soil. Organic farming is practiced and the work, both in the vineyard and in the cellar, is entirely manual, without the use of any chemical additives or sulfites in the winemaking process.
The wines
Cuvées of co-plantation (and for good reason), the wines of the Tribu Alonso embrace all the complexity of their grape varieties and the viticultural history of Beaujolais. These are carefully crafted wines, made with great care, fermented and aged to the sound of Tibetan bowls, whose alpha waves are beneficial to the liquids. The vatting periods are short, to preserve the freshness and fruit, as well as the signature of the soil and grape varieties.
GT Garrut Ancestral Sparkling Red 2019
Partida Creus
With its liveliness and deep notes of black fruit, GT Garrut Ancestral recalls the best of Lambrusco, but it is something else entirely. It is an atypical but oh-so-delightful single-varietal wine that deserves a closer look at its original character. Its purplish color with an exuberant pink foam, already expressing notes of blackberry on the nose, is already quite a program. GT Garrut displays beautiful earthy, juicy, and intense qualities; it is very characteristic of black fruits, particularly blackberry (blackberry or tree blackberry). Beautiful notes of red fruits too, and a delicious acidity. It is made entirely from Garrut, also called Monastrell, a Catalan grape variety related to Mourvèdre. This bright, summer-perfect wine is hand-harvested. Entirely destemmed, the grapes macerate for three days with punching down every three hours, and alcoholic fermentation with indigenous yeasts takes place for four months in stainless steel vats, followed by twenty months in oak barrels. Unfiltered, unfined, no sulfites added. GT Garrut smells of family vines, artisanal, unconstrained wine.

Partida Creus is an important estate, both in terms of winemaking and history—we're talking about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont—and even from the Langhe region, where wine is well-versed—first pursued careers as architects in Barcelona. But the wine bug tickled them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a number of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. For them, it's not just a matter of saving their heritage, no: it's a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to produce their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, ceciat parent, maccabeu, parellada, pansé, vinel·lo, bobal, cartoixà vermell or xarel·lo: it is a true conservatory of the native Catalan grape varieties that Partida Creus cares for. There is also Moscatel, Grenache, Merlot and Cabernet (among others). Few wineries can boast of growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to best convey the signature of the soil and the grape variety: single varietals are common among them, alongside very rich blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that indicate the cuvée. The wines, fresh, vibrant, lush but always straightforward and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.
Madloba White 2018,
Domaine des Miquettes skillfully combines the terroir and winemaking traditions of the Rhône with those of Georgia, whose viticulture is a model for Paul Estève and Chrystelle Vareille, the estate's founders. Located in Ardèche, south of the Saint-Joseph appellation, Paul learned his trade from René-Jean Dard and François Ribo, two leading figures in natural wine in the Rhône Valley. With Chrystelle, he began by taking over Paul's family farm with two acres of vines, then in 2004 the entire estate, which now covers 4.3 hectares. The white grape varieties are located around the house, the red grape varieties are planted on steep slopes, between 300 and 450 meters above sea level. The plots rest on a granite base with light soils: black mica granite, schist and gneiss. Everything is cultivated organically (Ecocert) with biodynamic practices. The vines are cared for and fortified using plant decoctions and clay. The soils are worked by horse or winch and pickaxe. No chemical inputs are added to the vineyard work. The harvest is entirely manual.
The great specificity of the Domaine des Miquettes remains the use of Georgian techniques, inspired by their passion for this country in the Caucasus, the cradle of wine, where eight thousand year old winemaking techniques are still used. At the heart of this viticulture is the qvevri, the buried jar where all the winemaking takes place: fermentation with skin maceration and aging. They set out to discover this country and returned with the decision to age all their wines in buried jars. They have twenty-six, but distinguish between tinajas (Spanish jars) for fermentation-maceration and buried "amphorae" for aging. No sulfur is added. For both reds and whites, the terracotta erases astringency and transmutes it into a velvety texture, a fruity and supple material.
Madloba blanc ("thank you" in Georgian) is a blend of 50% Marsanne and 50% Viognier. The vines are planted at an altitude of 350 meters, on a hillside plot with granite and black mica soils. The wine is aged for a year in qvevri, amphorae buried in the cellar in the Georgian style. This wine is reminiscent of its Georgian counterparts aged in terracotta, with its floral and spicy notes, mineral tension, a full texture, and intense flavor. It's an all-rounder when it comes to pairings.

The wines reflect this diversity, with the winemakers striving to best convey the signature of the soil and the grape variety: single-variety wines are common among them, alongside extensive blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that denote the vintage. The wines, fresh, vibrant, lush but always straightforward and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits exclamations of joy. This 100% Bobal is a racy and finely wild red from the Hondos plot, built on a grape variety common in Spain but whose expression is very original here. Dark cherry red color; on the nose, candy, sweet flowers, fresh fruits, violet, thyme. On the palate, a lot of distinction: a straight acidity and morello cherry, ripe plum, black pepper, a small saline touch on the finish. Serve well chilled.

Julien López's I'm Natural, Don't Panic range consists of macerated wines. This 100% Tempranillo red is both powerful and supple; its freshness is the result of a high-altitude climate that subjects the vines to significant temperature variations. A lovely bouquet of red fruits and a beautiful balance of sweetness and minerality. Serve with tapas, grilled meats, or poultry.

Coteau Libre Red 2016
A beautiful macabeu with a strong personality, vinified by Michaël Georget in the Albères region. This grape variety has often been used as a blending ingredient; it deserves to shine on its own. The nose already announces the wine's structure and velvety texture, and the palate appreciates the clarity and tension, which doesn't prevent it from being very delicious.

Domaine Le Temps retrouvé
A blend of Grenache and Carignan for a rosé that doesn't do things by halves, sourced from the clay-limestone plots of Domaine du Temps retrouvé. On the nose, notes of redcurrant and raspberry are echoed on the palate, accompanied by a lovely acidity. Drink as an aperitif, while listening to Laurent Voulzy's Le Cœur Grenadine.

Magnum Régnié La Haute Ronze Red 2017
La Haute Ronze is one of two plots cultivated by Nicolas in the Régnié appellation; it is considered of very high quality, with deep clay soils that produce full-bodied wines. This 100% Gamay is obtained through semi-carbonic maceration and aged for approximately twenty months. It offers notes of leather, earth, and Mediterranean herbs (oregano, rosemary), through its red fruits.
