Livia White 2019
Livia is a dry white wine that reflects the salinity of schist and the freshness of quartz. The iodine aromas of the Muscat are elegant, avoiding the heavy side of the grape variety. It is a long and full-bodied wine, prolonged by a rich finish. Decanting is recommended. The vines, pruned in goblet style, are grown organically and in conversion to permaculture on schist, quartz, and limestone soils not far from the village of Pagondas, in the foothills of Mount Karvounis. Free-run juice obtained by crushing and without pumping over, aeration, or stabilization. Only settling and topping up are carried out. Half vinification in five hundred liter Stockinger barrels and half in five thousand liter stainless steel vats. Wine without additives, unfiltered, bottled by gravity and transferred by peristaltic pump into black bottles ensuring aging.

Beneath the plant lies the mineral: this is the meaning of this concept of natural cuvées created in Greece, on the island of Samos, by a team of friends gathered around winemakers Jason Ligas and Patrick Bouju. The successful venture marks a renaissance of the thousand-year-old vineyard of this island in the North Aegean Sea, which owes its dense and woody vegetation to various nicknames received in Antiquity, from Dryoussa (“covered with oaks”) to Kyparissia (“covered with cypresses”) and Melamphyllos (“With dark foliage”). This natural wealth covers a unique and varied subsoil: volcanic rocks and notably basalts, limestone, quartz, pink granites, schists, iron cast irons… The idea was born from Jason’s meeting with the Samos Wine Cooperative. Patrick Bouju soon joined the project. The five vintages of Sous le Végétal—Livia, Hüpnos, Octave, Palli & Genesia and Auguste—are produced on around sixty plots of Samos Muscat à petits grains (and Avgoustiatis for the red vintage), between 400 and 910 meters above sea level. Each plot is vinified separately. For vinification, four types of containers are used: amphorae, concrete eggs, stainless steel vats and 500-liter barrels. Each locality is vinified in at least two of the four containers and the aging takes place in black bottles sealed with wax. No added sulfur, no filtration: Samos' winemakers are rediscovering wine as it was made in their childhood. This is one of the wonders of natural wine: it allows, through the most innovative projects, to reconnect with forgotten traditions.
Hüpnos White 2018
Hüpnos ("sleep" in Greek) owes its name to the slopes of the dormant volcano on which its vineyard terraces are located, harvested at night. This dry white wine is produced from two remarkably austere vineyards. A macerated wine, it offers great mineral freshness and rich fruit, extended by notes of candied fruit.

The vines
Muscat à petit grain from Samos, grown organically in conversion to permaculture. The vines are pruned in goblet form. Manual harvesting at night, in order to preserve the freshness of the polyphenols and ensure perfect maceration.
Vinification
Free-run juice obtained by maceration in stainless steel vats by diffusion for forty days, whole bunches. Vinification without aeration or stabilization, only settling, pumping over and topping up are carried out. Vinification in 500-liter Stockinger barrels. Wine without additives, unfiltered, bottled by gravity and transferred by peristaltic pump into black bottles ensuring aging. Aged in bottles with organic cork without paraffin, sealed with a mixture of paraffin and black beeswax.
Livia Blanc 2018, Sous le Végétal
Livia, wife of Auguste, naturally finds her place in this series: her muscats are co-planted, quite logically, with the avgoustiatis of the Auguste cuvée: the imperial couple is reunited. This dry white reflects the salinity of the schist and the freshness of the quartz. The iodized aromas of the muscat are elegant, avoiding the heavy side of the grape variety. A long and ample wine, prolonged by a gourmet finish. Decanting is recommended.

Village of Pagondas, on the foothills of Mount Karvounis, not far from the Heraion of Samos. Schist and quartz soils.
The vines
Samos small grain Muscat, grown organically in conversion to permaculture. The vines, pruned in goblet form, are harvested by hand from July 23rd to 28th, in the early morning.
Vinification
Free-run juice obtained by crushing, vinification without pumping over, aeration or stabilization. Only settling and topping up are carried out. Vinification half in 500-liter Stockinger barrels and 5,000-liter stainless steel vats. Wine without additives, unfiltered, bottled by gravity and transferred by peristaltic pump into black bottles ensuring aging. Aged in bottles with organic cork without paraffin, sealed with a mixture of paraffin and black beeswax.
Cuvée 0.72+ (exclusive cuvée) white 2019
De Vini
0.72+ is a dry white wine produced by Christophe Bosque of De Vini, organic and natural, without any added sulfites or chemical additives. It comes directly from the Muscadet region, the Loire estuary. While it doesn't carry the Muscadet appellation (it's a Vin de France), it can be considered a Muscadet and enjoyed as such.
In the vineyard and in the winery
0.72+ Blanc de De Vini is made from 100% Melon de Bourgogne (another name for the Muscadet grape variety) grown in Maisdon-sur-Sèvre (Loire-Atlantique) on gabbro soils characteristic of the region. Gabbro is a granular igneous rock resting on a granite subsoil, and this produces splendid, vibrant, and mineral white wines. Gabbro and granite are Vinilibre's preferred soils and constitute a precious viticultural heritage. The wine was aged for one year in buried cement tanks (traditional in this region), on its lees, without any additives.

Tasting
Let's hear from the winemaker: "It tastes divine!" Three years in the bottle have only served to polish, refine, and enhance it. "The older the gabbro, the better it is," its creator also confides. This wine is excellent to drink now or later, well chilled. An elegant acidity blended with a balancing roundness, a saline and mouthwatering character make 0.72+ an unfailing companion to raw seafood, oysters, sashimi and sushi, fish tartares and carpaccios, or smoked fish. This cuvée is also available in red.

After years working as a wine merchant, importer, and then winemaker, this former cameraman, who holds a vocational diploma in oenology and viticulture, acquired a few plots (two hectares) of Melon de Bourgogne vines in 2017 in Gorges, Loire-Atlantique, near Clisson. The soils there consist of gabbro on a granite subsoil, a pedological configuration specific to the Nantes region and particularly to Clisson. Christophe is full of praise for this type of soil.
Muscadet, but better
Christophe's wines may be made from grapes sourced from the finest French terroirs, particularly in Languedoc, but the winemaker retains a special affection for his own vines, which he tends with passion and a deep respect for the terroir. His labels and appellations reveal a touch of humor and a flair for the pun, but inside the bottle, it's serious business: wines off the beaten path, just the way he likes them.

0.72+ is a dry, organic, natural white wine made without any added sulfites or chemical additives by Christophe Bosque of De Vini. It comes straight from the land of Muscadet, the Loire estuary. Sous le Végétal
Alexandre is the latest addition to the Sous le Végétal series, a (successful) experiment conducted on the island of Samos (an archipelago in the eastern Aegean Sea) by the team of two winemakers, Patrick Bouju and Jason Ligas. This series, distributed exclusively by Culinaries, is organized around the revival of the island's dry-vinified vineyards, thus around the island's endemic Muscat à Petit Grain, as well as Avgoustiatis red grape vines. This Alexandre is a dry white wine that differs slightly from what the project has produced so far, as it is composed 100% of the Asyrtiko grape variety, a magnificent white grape variety indigenous to the Greek islands whose primary origin is the volcanic island of Santorini. It is present in other territories of Greece, island or not, and is particularly happy on volcanic soils where it faithfully transmits the mineral richness. It is thus also found on the island of Samos, where it superbly expresses the nature of the quartz and schist soils. The harvest is directly pressed, the aging is one year in stainless steel vats, concrete eggs and neutrally heated barrels. Alexandre is a joyful and slightly exuberant wine which offers the typical notes of asyrtiko at good maturity - notably bergamot, which is a distinctive mark of the grape variety, and candied lemon - placed on a beautiful mineral framework with a saline finish which is a common trait of the white cuvées of Sous le Végétal. It would be difficult to list the possible taste pairings with this wine, let's say that it corresponds to the adage "everything that is very good goes with everything that is very good". However, we will taste with it the whole assortment of mezedes of the Greco-Levantine tradition.

Munjebel White 2020,
The white version of the Munjebel cuvée combines beautiful concentration, freshness, and oriental aromas: orange blossom, jasmine, and dried apricot. Produced on mid-altitude plots from equal parts Grecanico Dorato and Carricante, in the Calderara, Borriglione, Crasà, and Picciolo plots, this white wine is extremely mature. The vines are over forty years old; the grapes are destemmed, lightly crushed, and macerated for about four days. No fining, no sulfiting, and lightly filtered before bottling. This wine will pair with an almost infinite variety of dishes, meat and fish, oysters and shellfish, and all Asian cuisines.

A great must-have and universally respected figure in natural wine, Frank Cornelissen is a classic. This man of constant questioning lives in human and cosmic resonance with his contrasting terroir: he has demonstrated that the powerful minerality of a great volcanic soil could be highlighted by the naturalness of his wines. The brilliance, the directness and the exquisite fruitiness of his vintages earn him the admiration even of those reluctant to go "natural". They are good initiation wines.
His Sicilian azienda is located in Passopisciaro, in the northern Etna valley. It is, he says, the "Night Coast" of Etna for the great diversity of its wines spread over many locations (contrade) at different altitudes. The climate is continental and harsh, even snowy, in winter, but very warm and sunny from June to September. The altitude gives the wines tension and elegance. The vines coexist with a Mediterranean polyculture: olive trees, almond trees, vegetable gardens... (Frank also produces olive oil). The age of the vines ranges from forty years to over one hundred years. The plots, nineteen in number, on twenty-four hectares in total, are all at altitude, between 600 and 900 meters, on several volcanic flows. They are all vinified separately: Frank decides on the blend based on the quality of the wines from each plot. In general, seven or eight vintages are made in addition to the generic wines (rosé, basic red and white). The soils are made up of different types of basalt, between powder and rock, with perfect drainage that allows for the production of concentrated and fine wines.
Nerello Mascalese dominates the estate's grape varieties. This great traditional red grape variety from the northern valley of Etna is the only grape variety used in the great vintages. Its growing cycle is long, which allows the vine to work the soil and capture its minerality in the fruit. Côtes du Rhône Red 2022
This Côtes-du-Rhône from Domaine des Grandes Serres is what its name implies: an organic and natural red wine from the lower Rhône Valley, in the AOC-AOP Côtes-du-Rhône-Villages. It is part of the estate's "Comics" natural series (see label).
Vinification
The Côtes-du-Rhône from Domaine des Grandes Serres is made from 80% Syrah, with 5% of each of the following grape varieties: Grenache, Mourvèdre, and Cinsault, all grown on limestone and sandstone soils. The harvest is manual, the grapes are destemmed and macerated on the skins for three weeks. After pressing, the wine rests for eight months in stainless steel vats.
Tasting
A good, dense, indulgent, and fruity Côtes-du-Rhône, without the slight bite of sulfites, does that tempt you? This Côtes-du-Rhône is part of the estate's organic and natural "Comics" series and will always be perfect when you want a warm, fruity red wine suitable for all occasions.

Domaine des Grandes Serres, created in 1977 with respect for the environment and the terroir, represents the excellence and vitality, in organic and natural mode, of the prestigious Châteauneuf-du-Pape appellation, where it covers 12 hectares. To make his estate and merchant wines, he harvests, buys grapes, vinifies, and ages them over a wide area, centered around Châteauneuf and the southern Côtes-du-Rhône, extending to areas such as Lirac and the Costières de Nîmes.
An organic commitment without ostentation
A large portion of the Domaine des Grandes Serres vintages are organic and without added sulfites, although the estate does not publicly boast about it. Modestly, Samuel Montgermont, the estate's general manager, explains that the geological and climatic conditions, particularly the mistral wind, promote the health of the vineyard and allow for the elimination of inputs. While the labels don't take themselves seriously, the wines are solid, fresh, and flavorful.
G&M White 2022,
G&M (Grenache-Muscat and many other things) is an organic and natural dry white wine produced in Auvergne by Patrick Bouju, a maceration cuvée without added sulfites, vinified from grapes from Languedoc and Auvergne. It demonstrates all the winemaker's expertise through organic white grape varieties from various sources. Classified as a Vin de France, this is a very complete wine, adaptable to all occasions.
In the vineyard and in the cellar
To obtain G&M, Patrick Bouju blended Grenache Blanc, Grenache Gris, Viognier from Pézenas, Muscat d'Alexandrie from Canet-en-Roussillon, Ugni Blanc and Grenache Gris from Pinet in Languedoc, and finally Chardonnay from Auvergne from his own vineyards. This is a maceration cuvée vinified in vats and terracotta amphorae.
Tasting
G&M offers a superb balance between opulence, perfume, liveliness and acidity. It is a rich and complex orange wine in its blend which is similar to the grand écart in the variety of provenances which in no way compromise the unity of the vintage, harmonized by aging in vats and terracotta. It goes with everything, including White Meats, poultry, fish, hot starters, mature cheeses or flaky pastries.

Eveil Blanc 2023
A dry and vibrant white, combining freshness and conviviality
The Domaine Einhart, a rising star in natural wine in Alsace, offers us here an exclusive cuvée full of character: Éveil 2023. This dry and balanced white, labeled organic, is a tribute to the limestone terroirs and emblematic Alsatian grape varieties. Composed of 35% Riesling, 35% Auxerrois, and 30% Gewurztraminer, this wine expresses all the richness of its loamy, clayey, and limestone soil, grown on plots located on cool, windswept hillsides.
A Tasting Experience in Elegance
With a luminous pale gold color, Éveil 2023 opens with a delicate nose blending subtle aromas of bergamot and white flowers. On the palate, the freshness is pronounced, with a lovely mineral tension and a slight salinity. Its ample texture and slightly spicy aromatic profile make this a white wine that is both lively and generous, supported by beautiful acidity and a lingering finish.
Authentic winemaking
The grapes, hand-harvested in 20kg crates, undergo meticulous treatment in the cellar. After a short 24-hour maceration to initiate fermentation, they are pressed directly. Fermentation is carried out by indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. It is then aged for 8 months in Pinot Noir barrels, on fine lees, to give the wine its balance and depth.
A convivial and versatile wine
Served between 10 and 12°C, this wine is perfect as an aperitif or with plant-based dishes, such as grilled vegetables or fresh salads. Its aging potential of 5 to 10 years will also allow it to evolve into even more complex notes.

Back to Blaye Rouge 2022
Château Frédignac
Back to Blaye, a superb organic and natural red Bordeaux, has everything to seduce you: it once again reflects the excellence of organic wines produced on Bordeaux soils. You'll first admire the beautiful deep carmine color before perceiving the Blaye-Côtes-de-Bordeaux signature on the nose: black fruits, red fruits, exemplary vinosity, a delicious roundness underpinned by tannins that are still a little rustic due to the wine's youth. Bordeaux, as you know, generally requires waiting, and the fact that the wine is organic and natural doesn't change anything. You will therefore be right if you decide to keep this bottle for a few years, it will benefit from it and acquire velvety and melted. The wine needs to patinate a little in the bottle, but you can enjoy it now and accompany it with red meats, roasts, solid dishes. Obtained from a majority of Merlot (90%) and Cabernet Sauvignon as a minority grape variety (10%), Back to Blaye is categorized as a Vin de France but has nothing to envy its congeners more gratified by their appellation. The harvest is destemmed, the maceration in vat is fifteen days. The aging after pressing and blending is six months in concrete vats. Tip: Take advantage of this vintage's youth by buying several bottles that will age with distinction in your cellar.

Château Frédignac, a 100% organic estate (Nature & Progrès), is located in the Blaye-Côtes-de-Bordeaux appellation, very close to the small town of Blaye, practically on the banks of the Gironde. Founded in 1918 by Jean-Marie L’Amouller, a Breton sailor who found happiness on the right bank of the estuary — which is called “the River” here — it became a quality wine estate a few years later by absorbing the vineyard of a property with a centuries-old reputation, Château Saugeron. The appellation is best known for its velvety, deep red wines, in which Château Frédignac excels. But the achievements of this wine estate dedicated to respecting the terroir and virtuous agricultural practices do not end there: an organic white is produced, as well as several natural cuvées of various colors, from pet'nat'rosé to still red. The red grape varieties are typical of the appellation—the two Cabernets, Franc and Sauvignon; Merlot, Carménère and Côt (Malbec)—and the whites (Sauvignon Blanc, Sémillon) are similar. The clay-limestone soils promote both soil drainage and their beneficial freshness for the vines. Combined with methods deeply respectful of the soil, plants, animals and winemaking, these pedological conditions allow the Château Frédignac team to be proud of its wines: as worthy of their local tradition as they are in keeping with the desire to work as closely as possible with nature.
Eveil Blanc 2023
A dry and vibrant white, combining freshness and conviviality
The Domaine Einhart, a rising star in natural wine in Alsace, offers us here an exclusive cuvée full of character: Éveil 2023. This dry and balanced white, labeled organic, is a tribute to the limestone terroirs and emblematic Alsatian grape varieties. Composed of 35% Riesling, 35% Auxerrois, and 30% Gewurztraminer, this wine expresses all the richness of its loamy, clayey, and limestone soil, grown on plots located on cool, windswept hillsides.
A Tasting Experience in Elegance
With a luminous pale gold color, Éveil 2023 opens with a delicate nose blending subtle aromas of bergamot and white flowers. On the palate, the freshness is pronounced, with a lovely mineral tension and a slight salinity. Its ample texture and slightly spicy aromatic profile make this a white wine that is both lively and generous, supported by beautiful acidity and a lingering finish.
Authentic winemaking
The grapes, hand-harvested in 20kg crates, undergo meticulous treatment in the cellar. After a short 24-hour maceration to initiate fermentation, they are pressed directly. Fermentation is carried out by indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. It is then aged for 8 months in Pinot Noir barrels, on fine lees, to give the wine its balance and depth.

Argile White 2020,
Argile is a dry Jurançon, 100% Petit Manseng, produced by direct pressing, fermented and aged in terracotta jars. This wine, with its strong personality, will surprise you with its balance, length, and frank minerality. Fresh, long, and lively, with a continuous line between tension and fruit, enhanced by a unique aromatic palette due to fermentation and aging in terracotta. It's a real companion to oysters and seafood, but it also tastes great on its own. Harvested by hand in mid-September, the grapes are healthy and meticulously sorted. Petit Manseng lends itself to the production of very fine wines, with aromas that faithfully reflect their terroir and region. No chemical additives in the vineyard or cellar, no added sulfites. Keep it in the cellar for two to five years.

Château Lafitte is located in Béarn, on the noble terroir of Jurançon, the origin of superb sweet wines and dry wines that have nothing to envy. Since the 14th century, Monein, the commune where the estate is located, has been nestled in an exceptional natural, rich, and hilly environment. In the 16th century, vines already occupied a significant part of the property, and they have persisted to this day. Philippe and Brigitte Arraou, the current owners, have undertaken to revive viticulture on the site, helped since 2012 by their son Antoine, a winemaker as passionate as his parents. Château Lafitte is now managed biodynamically and with agroforestry: five hectares of marl-limestone soils typical of the appellation, on a hilly terrain that can become very cold in winter. The king grape varieties of Jurançon, Petit Manseng and Gros Manseng, represent the majority of the grape varieties. Also typical of Jurançon and the Pyrénées-Atlantiques in general, viticulture en hautains, that is to say raised and trained very high, is practiced. As it was in many primitive vineyards, some of which are still active (Portugal, Spain, Georgia, etc.). On this beautiful estate, winemaking experiments are legion: aging in terracotta jars for dry wines, solera for sweet wines in untopped barrels, photovoltaic roofs for the cellar, rainwater harvesting, gravity-fed vinification. Muscana White 2022
Muscana is an organic (Ecocert and AB labels) and natural dry white wine from Alsace from Domaine Einhart. Classified as AOC Alsace, this beautifully complex dry white is Domaine Einhart's homage to the Muscat grape variety.
Vinification
Muscana is a 100% Alsace Muscat, hand-harvested when overripe. The vines are approximately twenty-five years old and grow on the splendid oolitic limestone (muschelkalk) terroirs in the Fleckenstein, Westerberg, and Meyen localities. The harvest is destemmed, maceration in vats lasts one week, and fermentation is carried out using indigenous yeasts. The wine is aged in stainless steel vats on fine lees and is not filtered at bottling.
Tasting
Muscana offers a beautiful orange-amber color with superb brightness. The first nose offers rich, slightly smoky aromas typical of overripe Muscat berries. A second, very fine nose brings a hint of citrus fruit that encourages tasting. On the palate, the attack is straightforward and ample, accompanied by a melted acidity expressed through notes of candied quince. The finish is invigorating, with melted tannins linked to the maceration. We recommend decanting Muscana to help it develop its splendid aromas and serving it with choice dishes: fresh or smoked fish, vegetables including asparagus, white meats and foie gras.

In the northern part of the Alsatian vineyard, Domaine Einhart is a ten-hectare family estate whose vines grow on the foothills of the Vosges Mountains. The soil is clay-limestone and rich in fossils (muschelkalk, or shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone).
A family estate
Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is co-founder, Nicolas devotes his winemaking work to protecting the land and biodiversity, making wine without inputs, refusing harmful phytosanitary products, and maintaining ecological refuge areas. His estate has been certified organic (Ecocert and AB) since 2011. The estate produces white wines from maceration or direct pressing and a Pinot Noir red.
The best of Alsatian terroirs
Entirely manual harvests, destemming of the bunches, light punching down, and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees, and the absence of filtration before bottling. The wines are pure grapes, lively, powerful, invigorating, and transcribe the minerality of these very beautiful terroirs in the Vosges foothills.

In the heart of Vaucluse, between Saint-Maurice-sur-Eygues and Visan, the Grandes Serres vineyard thrives on deep clay-limestone soils bordered by garrigue. The Wine Witch 2024, a subtle blend of Clairette, Marsanne, and Vermentino, is a generous white, both powerful and balanced, faithful to its terroir.
A bold and natural vinification
The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.

Les Grandes Serres
Located between Vaison-la-Romaine and Séguret, the Grandes Serres vineyard, certified organic, promotes an innovative agroforestry approach, including the planting of pistachio trees along the edges of the plots. This cuvée, The White Widow 2024, made from a blend of Clairette, Grenache Blanc, and Marsanne, elegantly expresses the richness of the Rhône's sandy soils.
A pure and delicious white
Harvested in the cool of the morning on a fruity day, the grapes are pressed directly, thus preserving their brightness and freshness. Fermentation takes place spontaneously with indigenous yeasts, in a subtle balance between new Stockinger barrels (for Clairette and Marsanne, 50%) and stainless steel vats (for Grenache Blanc, 50%). Careful aging with light stirring gives the wine a full texture, without filtration, allowing natural sedimentation of the lees in the cold.
