History of Viticulture in Burgundy: A Millennial and Prestigious Heritage
Burgundy is much more than a wine region in France: it is a true sanctuary of wine, where each plot, each climate, tells a story more than two thousand years old. The first vines were planted in the Gallo-Roman era, on well-exposed hillsides and mineral-rich limestone soils. From this period, the Burgundy vineyard benefited from an exceptional environment, with a semi-continental climate and diverse terroirs.
In the Middle Ages, Benedictine and Cistercian monks played a central role in the rise of viticulture. Their patient work of delimitation and observation allowed for the definition of Burgundy appellations and climates, now listed as UNESCO World Heritage sites. These monks were the first to understand that each named place – from Meursault to Pommard, from Chablis to Santenay, from Nuits-Saint-Georges to Gevrey-Chambertin – possessed a unique identity, linked to the nature of the soil, exposure, and microclimate.

This beautiful golden yellow color catches the eye; you pour yourself a small glass and suddenly you wake up. It sparkles, it's fresh, it's full of flavor and joie de vivre, and you could consider La Chassornade a festive wine if you didn't have a furious desire to drink it on any occasion, especially without an excuse or a word from your parents. It is, in short, a magnificent expression of the Aligoté grape variety in sparkling mode: floral, citrusy, taut, fresh, and mineral. It's also a natural sparkling wine that demonstrates the creativity of its winemaker. Aligoté was the first white grape variety in Burgundy—well before Chardonnay—and it deserves to regain its former glory. Vinifying it as a natural sparkling wine isn't a bad idea, quite the opposite: the grape's rounded, pleasant, and fruity notes (lemon and white grapefruit) stand out elegantly. Absolutely delicious. The grapes were harvested near Puligny-Montrachet, from vines that are around forty years old. The harvest is directly pressed, and bottling is done in the clear, without disgorging. Fermentation and aging take place in the bottle for around ten months. Native yeasts, no added sulfites, no additives. Remember to keep the bottle chilled in an upright position for twenty-four hours before tasting so that the lees remain at the bottom.

This Puligny-Montrachet Premier Cru comes from Chardonnays grown on the plot that gave its name to the cuvée, between 230 and 250 meters above sea level. The terroir, facing west-southeast, is based on brown marl and clay-limestone soils, sometimes directly on the limestone rock. The soil structure is fine, clay-silt. After direct pressing of the grapes, the wine is aged for about a year in barrels. The wine is typically Puligny: buttery, mineral, complex, and layered.

With UGM Qvevris White 2023, Frédéric Cossard offers a captivating natural white, made from a unique blend of Grenache Blanc, Muscat, and Ugni Blanc. Grown at the foot of Mont Ventoux on clay-limestone soils, these organic grapes are then vinified in Burgundy according to the winemaker's exacting principles.
Vinification in qvevri for a vibrant and expressive white
This wine is made with a no additives approach, with total respect for the fruit and the terroir. After a direct press, it is aged in buried amphorae (qvevris), an ancestral method which promotes gentle oxygenation and preserves a great aromatic purity. This unusual vinification process gives the wine a subtle balance between tension and roundness, with a texture that is both silky and invigorating.
An aromatic and indulgent white
The nose immediately seduces with its expressive notes of ripe white fruits, enhanced by a delicate floral touch. This cuvée is a vibrant encounter between the power of Mourvèdre and the finesse of Burgundian winemaking. Made from organic grapes from Mont Ventoux, the Cuvée Mourvèdre has a deep color and a captivating nose of pink berries and garrigue. On the palate, it offers a balanced structure between ripe and fine tannins, and complex aromas of red fruits, spices and herbaceous notes.
Vinified in pre-fermentation maceration and aged for 1 year in concrete eggs, this cuvée is the perfect accompaniment to charcuterie, roasted or grilled meats. Enjoy it at 16-18°C, without the need for a carafe, and let it mature over 5 to 10 years.

Fresh, wild, and intense, this Mercurey is definitely a pleasure to drink with abandon. Morello cherries, black fruits, cherry, raspberry, and complexity on the nose give way to floral, then mineral and roasted notes. On the palate, there is plenty of fruit, sap, fullness, and density, with silky, melted tannins of great finesse, completely devoid of harshness. A long, fruity, and distinguished finish. Les Vignes Blanches is a Mercurey vineyard where Frédéric Cossard is producing his third vintage. For the occasion, the winemaker vinified and aged it in qvevri (a Georgian-style buried jar), which gives it a patina, rounds it out, and accentuates its velvety texture and depth. This Pinot Noir comes from a plot with a steep, south-southeast-facing terroir located between 280 and 400 meters above sea level in the Saint-Romain appellation. Beautiful structure, well-rounded tannins, and lovely notes of black fruit.

Domaine de Chassorney
The nose is full of stewed and spicy red fruits; raspberry dominates. On the palate, we clearly recognize the typicality of the Pommard terroir, the suppleness and liveliness it gives to the wine. This magnum of Pommard "Les Pézerolles" needs time to reveal itself: this 2017 vintage is worth drinking now or waiting a little longer. Classified as a premier cru, this Pinot Noir, full of candied red fruits and suppleness, comes from the Pézerolles plot, just above the Petits Épenots climat. It was among the first plots established in the AOC Pommard in 1936. Its terroir is located between 250 and 330 meters above sea level on marl, brown calcic and brown calcareous soils. The grapes macerate for three weeks in whole bunches. The wine is aged for about a year in barrels and is neither filtered nor clarified before bottling.

This Pinot Noir comes from a plot whose steep terroir, facing south-southeast, is located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils there are mainly marl, limestone and clay. The grapes macerate in whole bunches. Aging takes place for about a year in barrels. The soils and the work in the vineyard reveal the full potential of the grape variety: a deep, complex, fleshy and silky wine, packaged only in magnum format.

Domaine de Chassorney
From one of the finest climates in Volnay, this premier cru red wine is opulent, balanced, and dense. It offers abundant notes of red and black fruits, including a full, ripe, and flavorful cherry. This is a voluptuous wine to be enjoyed at special occasions. Its velvety structure is fine and delicate, soaring into notes of airy lightness. The Lurets plot, in the Volnay AOC, produced this Pinot Noir. Its steep, west-southeast-facing terroir is located between 230 and 280 meters above sea level. The soils are primarily composed of pink limestone supported by white schist pebbles. The grapes macerate in whole bunches for two weeks in open wooden fermenters. The aging is about a year in old and new oak barrels.

A graceful and delicate pale rosé, a wine with the same qualities: 100% Cinsault, red fruits, citrus notes, flowers, and orange zest. Like Provençal sunshine in a bottle. Marvelously pure, this wine is produced by directly pressing grapes harvested from twenty-year-old vines near Vaison-la-Romaine (Vaucluse), on clay-limestone soils. This is a very rare, dense, and elegant Morey-Saint-Denis, bursting with fresh fruit aromas. It reveals itself to be complex and powerful, with red fruits and violet aromas. This captivating wine promises to improve for a long time (aging potential of around ten years). The small clay-limestone plot of Monts-Luisants is located above the village of Morey-Saint-Denis. The Pinot Noir planted here is of the Pinot Fin variety, a very old and increasingly rare strain. The vines are around seventy years old. The harvest is macerated in whole bunches and aged for one year in barrels.
