Coteau Libre Red 2016
A beautiful macabeu with a strong personality, vinified by Michaël Georget in the Albères region. This grape variety has often been used as a blending ingredient; it deserves to shine on its own. The nose already announces the wine's structure and velvety texture, and the palate appreciates the clarity and tension, which doesn't prevent it from being very delicious.

A blend of Grenache and Carignan for a rosé that doesn't do things by halves, sourced from the clay-limestone plots of Domaine du Temps retrouvé. On the nose, notes of redcurrant and raspberry are echoed on the palate, accompanied by a lovely acidity. Drink as an aperitif, while listening to Laurent Voulzy's Le Cœur Grenadine.

Le Vigne Piu Vecchie White 2010
A great deal of wisdom goes into this 100% Procanico Italian white wine, produced from vines around sixty years old. A precious plot, located on the volcanic soils of the Le Coste estate, to which it owes its name: the vigne più vecchie, literally "the oldest vines." After direct pressing and a short maceration, this cuvée is aged for many months in 500-liter oak barrels before being bottled, where it will wait another thirty-six months. Despite its venerable age, one cannot help but be charmed by the beautiful minerality that it manages to retain in the mouth, and by its formidable balance.

Xarab Vigiriega Doré VGR White 2009,
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created, within the Xarab series, this astonishing sweet white wine made entirely from the native Vigiriega grape variety, raisined on the vine and harvested in December. The color is a beautiful bright gold, the nose fragrant (yellow fruits); the flavor is rich, intense, generous, and aromatic. A perfectly balanced sweet wine.

Susucaru Blanc 2024
Description
Avec Susucaru Bianco 2024, Frank Cornelissen propose un blanc accessible tout en conservant l'identité qui fait la réputation de ses vins. Principalement issu de Catarratto, complété par du Carricante et du Grecanico Dorato, ce vin offre une lecture fraîche et saline de la Sicile. Le nez dévoile des notes d'agrumes, de pomme croquante, de poire et de fleurs blanches, relevées par une fine touche minérale. En bouche, la matière est vive, précise et particulièrement désaltérante, avec une finale tendue qui appelle immédiatement une seconde gorgée.
Vinification
Assemblage de 40 % Catarratto Extra Lucido, 30 % Carricante et 30 % Grecanico Dorato. Éraflage, foulage léger puis fermentation avec un pied de cuve utilisant exclusivement les levures indigènes. Environ 3 heures de macération pelliculaire, suivies d'un élevage de 10 mois en cuves neutres (époxy). Sans collage, filtration légère avant la mise en bouteille.
Perill de Perills (« le danger des dangers ») est un blanc singulier qui met à l'honneur le Xarel·lo. Le nez mêle fruits blancs, citron confit, herbes méditerranéennes et une fine note fumée. La bouche est ample, saline et tendue, offrant une belle profondeur tout en conservant beaucoup de fraîcheur. Un vin de caractère, fidèle à l'identité de Clos Lentiscus.
Vinification
100 % Xarel·lo, fermentation spontanée avec levures indigènes puis élevage en anciens contenants afin de préserver la pureté du fruit et l'expression du terroir. Vin peu interventionniste avec un minimum de soufre.
Les 7 est l'une des cuvées les plus emblématiques de Laherte Frères. Élaborée selon le principe de la solera initiée en 2005, elle assemble les sept cépages historiques de la Champagne pour offrir un champagne d'une profondeur exceptionnelle. Le bouquet mêle agrumes, fruits blancs, fleurs, épices douces, brioche et fruits à noyau, tandis que la bouche impressionne par sa complexité, son équilibre et sa longue finale saline.
Vinification
Assemblage en solera débutée en 2005, réunissant Chardonnay, Pinot Noir, Meunier, Pinot Blanc, Petit Meslier, Arbane et Fromenteau. Fermentation en fûts avec élevage prolongé sur lies. Dosage Extra Brut de 2,5 g/L
Munjebel Blanc 2023
Un Zibibbo volcanique d'une grande précision
Le Munjebel Bianco 2023 révèle toute la singularité du Zibibbo cultivé sur les terroirs basaltiques de l'Etna. Fidèle à la philosophie de Frank Cornelissen, cette cuvée est élaborée avec un minimum d'intervention afin de laisser s'exprimer pleinement le cépage et son environnement volcanique. Vinifié en macération pelliculaire puis élevé six mois en amphores, ce blanc conjugue intensité aromatique, fraîcheur et remarquable énergie.
Une dégustation vibrante
La robe est jaune doré aux reflets lumineux. Le nez dévoile une palette complexe mêlant agrumes, citron confit, fleurs blanches, fruits à chair jaune et fines herbes méditerranéennes, soutenue par une signature minérale typique des sols volcaniques de l'Etna. En bouche, l'attaque est ample puis laisse place à une belle tension, portée par une texture délicatement tannique héritée de la macération. La finale est longue, saline et particulièrement rafraîchissante.

Le Munjebel Bianco accompagne parfaitement poissons grillés, crustacés, coquillages, volailles, légumes méditerranéens ou encore des cuisines épicées. Sa structure lui permet également d'accompagner des fromages affinés ou des plats végétariens élaborés.
Avec un potentiel de garde d'environ 5 à 8 ans, cette cuvée illustre parfaitement le style de Frank Cornelissen : des vins vivants, précis et profondément marqués par l'identité volcanique de l'Etna.
Issu d'une vieille parcelle de Chardonnay plantée sur la craie tendre de Chavot, Les Grandes Crayères est un champagne de terroir à la fois intense et délicat. Le nez révèle des notes de citron confit, de fleurs blanches, de noisette et de craie humide. En bouche, la matière est ample mais tendue, portée par une remarquable salinité et une finale d'une grande longueur.
Vinification
100 % Chardonnay provenant d'une parcelle exposée ouest sur craie campanienne. Fermentation en fûts avec levures indigènes, élevage sur lies puis dosage Extra Brut de 2 g/L, afin de préserver toute la pureté du terroir.

Bulles Blanc est un pétillant naturel vif et rafraîchissant, porté par des notes de pomme fraîche, de citron, de fleurs blanches et une fine touche briochée. La bulle est délicate, la bouche tendue et désaltérante, avec une finale saline qui appelle immédiatement une seconde gorgée.
Vinification
Méthode ancestrale avec prise de mousse naturelle en bouteille, fermentation par levures indigènes et élevage sur lies. Vin non filtré, sans dosage et avec très peu de sulfites ajoutés.

Patrick Bouju
Cailloux is an organic and natural red wine from Patrick Bouju, with no added sulfites and sourced from the Auvergne terroir. Classified as a Vin de France, it is a wine extremely representative of its terroir and a fine example of the winemaker's refined expertise. The magnum format amplifies its natural character and further accentuates its depth.
Vinification
Cailloux comes from Patrick Bouju's old Pinot Noir vines located in Madargue, near Riom, in Limagne. The terroir is basaltic, clay-limestone, marl-limestone, and sandy. The grapes macerate in whole bunches, and during fermentation, 1% of the estate's Chardonnay press juice is added. The wine is aged for a year in sandstone amphorae and barrels.
Tasting
Cailloux lives up to its name: wild, smoky, long, and stony, with great aromatic persistence. Marked by intensely mineral notes: stone, metal. The fruit is present and juicy. The overall impression is dense and concentrated; the wine can be drunk now but will still have a few years to drink. Serving temperature: 14-16 °C. Open twenty minutes before tasting or decant. You can pair it with charcuterie, salted meats, beef and all kinds of local cuisine.

A Burgundy that opens up new horizons
Perspectives is a rare and luminous cuvée, originating from the Bourgogne AOC, but boasting a unique perspective. The plot, located at the southernmost edge of the appellation, borders Beaujolais. From there, the view encompasses a 360-degree panorama of two great wine regions: Burgundy and Beaujolais. It is this expansive vision, this sense of space and balance, that this wine seeks to convey.
Purity of Chardonnay, ancestral aging
Made from Chardonnay grapes grown without synthetic inputs on schist soils, Perspective benefits from natural vinification using direct pressing, followed by six months of aging in amphorae, which gives it a limpid texture and striking mineral tension. No superfluous oenological intervention: here, only indigenous yeasts orchestrate the fermentation, allowing the terroir to express itself freely.
A vibrant white, full of freshness
On tasting, the wine is clear, bright, and a pale yellow with silvery highlights. The nose opens with delicate notes of honeysuckle, fresh lemon, and a touch of salinity reminiscent of sea spray. On the palate, a wave of freshness, taut and tangy, almost crystalline, accompanies a lovely fruity depth. The finish is clean, long, and mouthwatering.
Suitable for large gatherings as well as for aperitifs
This characterful white wine pairs equally well with shellfish, cooked fish, or mushrooms, as with white meats or soft cheeses. Served chilled, it reveals its full gastronomic potential and can be aged for 5 to 10 years without any problem.
