Gin Mist 37.5° - 50cl
This organic gin, which received the gold medal in the Spirits Selection at the 2016 Brussels World Gin Competition, offers clean, fresh notes of distilled juniper berries, accentuated by lemongrass. Hops, coriander, and angelica root are also included in the blend, resulting in a cloudy gin after distillation, hence its name (mist, "fog"). An almost alchemical recipe whose powerful and penetrating aroma makes you want to enjoy it neat, but gin and tonic also goes very well with it—gin, tonic water, a slice of lime, ice cubes, and why not a simplified gin fizz? This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially focused on absinthe, a liqueur that Julien helped to rehabilitate. Bison Grass Botanical Vodka 40° - 70cl
This vodka offers delicate aniseed and peppery notes, supported by the magnificent herbal harmony of freshly cut bison grass: vanilla, tonka bean, hay, and toasted almond. Bison grass vodka is a classic Polish recipe, but what exactly is this herb? Hierochloe odorata is a plant in the grass or poaceae family. Depending on the region, it is also called sweet grass, vanilla grass, or holy grass. It is a Nordic plant that is capable of growing as far as the Arctic Circle: it is also found in Canada, in the northern Rocky Mountains and in certain regions of Northern Europe. Medicinal, curative, aromatic, it plays an important role in shamanic rituals as a sacred plant with magical properties. Its name "bison grass" is specific to northern Poland and Belarus, where it grows in the territory of wild bison. Awen Nature has made this vodka according to the traditional Polish recipe revisited, from fresh bison grass grown organically in the distillery's botanical garden and pure spring water from the Black Mountains of the Armorican massif.

Pastis du Zeppelin 44.8° - 70cl
We first admire the magnificent label, and then we discover the bouquet. The nose of this certified organic pastis is fresh and aniseed, the palate is very fresh and delicately spiced. But pastis in Brittany? Of course. Besides, if you know how to make absinthe, you know how to make pastis, the latter being one of the spirits that replaced absinthe after it was banned in 1915. Pastis, since then, has become a product of Provence and especially Marseille, but nothing prevents the existence of a Breton pastis. This one gets its taste from a combination of thirteen distilled plants, always with a dominance of green anise and complex, spicy and herbaceous notes: fennel, star anise, angelica root, coriander, cinnamon, orange, iris, licorice, nutmeg, clove. The whole thing is very fresh, as befits a pastis. All that remains is to dilute it with fresh water.

White Absinthe 60° - 70cl
Awen Nature Distillery
This certified organic white absinthe is the result of a special recipe that was the subject of many years of research by the founder of the Awen Nature distillery. Entirely organic and natural, it derives its flavor from a combination of seven distilled botanicals, a bouquet that expresses very refreshing notes, always with a dominant anise and complex notes of plants such as wormwood, coriander, hyssop, and lemongrass. This absinthe is created and distilled exactly as this liqueur was before the 1915 ban. To fully appreciate it, we recommend the traditional method: in a glass containing a measure of absinthe, place a sugar cube on an absinthe spoon and pour fresh water drop by drop over the sugar cube. Upon contact with water, white absinthe becomes slightly cloudy to reveal iridescent and brilliant reflections.

Fruit d’un savoir-faire minutieux et profondément ancré dans les plantes, l’Absinthe Verte de la Distillerie Awen Nature, installée en Bretagne, est un spiritueux rare et vibrant, à la croisée des traditions ancestrales et de l’herboristerie contemporaine. Élaborée à partir d’une sélection rigoureuse de plantes biologiques, dont l’absinthe bien sûr, mais aussi chanvre, menthe, citronnelle et hysope, cette cuvée affiche fièrement ses 60 % vol., tout en conservant une finesse étonnante.
Ici, pas de colorants ni d’ajouts artificiels : la magnifique robe verte provient exclusivement d’une macération végétale post-distillation, selon des méthodes respectueuses de la tradition. Les plantes sont distillées séparément, puis assemblées avec précision afin de composer un profil aromatique riche et équilibré.
Au nez, c’est une explosion de notes herbacées et florales : on retrouve la fraîcheur de la menthe, la légèreté citronnée, et la profondeur de l’hysope mêlée à des touches résineuses du chanvre. En bouche, l’attaque est franche mais soyeuse, portée par une belle amertume élégante, sans lourdeur ni excès. La finale est longue, fraîche, presque médicinale, avec une tension naturelle qui en fait une absinthe de dégustation, mais aussi une base de cocktail d’exception.
Certifiée bio (Eurofeuille + AB), cette absinthe respecte autant la plante que le palais. Une distillation engagée, artisanale, locale, qui redonne à l’absinthe ses lettres de noblesse tout en explorant de nouvelles voies botaniques grâce au chanvre.
In another life, Julien Fanny was a blacksmith. A health problem forced him to retrain: he chose plants, his childhood passion. He inherited it from his aunt, who made beverages, cosmetics, remedies, and cleaning products from the herbs she gathered. Julien works with wild and organically grown plants. He began with flavored rums, then moved on to distillation, particularly of absinthe, whose bad reputation he deplores. "It pains me when people say: 'Look, he makes absinthe, the liqueur that drives you crazy!' But you don't go crazy because of absinthe; you're already crazy beforehand... Absinthe is a marvelous plant, celebrated since ancient Egypt."
Julien nevertheless admits that it takes a touch of madness to be an artisan distiller today. His first customers were two little old ladies, very surprised to rediscover the absinthe of their childhood. "My father," said one of them, "used to give it to me on sugar to kill worms." He poured them a small glass: "It's the taste of yesteryear!" Julien's path was set.
