Armagnac by Maurice 2009 Spirits
Take advantage of it, not everyone has access to Armagnac by Maurice: organic (Demeter, AB, and Eurofeuille labels), artisanal, it is made by Maurice de Mandelaëre (Domaine de Saoubis), the only biodynamic Armagnac producer. Hootch is responsible for packaging and distributing this small-producer Armagnac with an alcohol content of 49.3%.
Production
100% Baco grape variety grown biodynamically in the Bas-Armagnac region, Armagnac de Maurice XO (Extra-Old) comes from a single barrel where it has been aged for 14 years. Tasting
The Baco grape variety gives a beautiful complexity to the nose with aromas of vine flowers, bay leaf, spices, and exotic fruits. On the palate, there is great finesse and length with notes of vanilla, flan, tobacco, and flowers. Serve it as a digestif or a light pick-me-up, and you can even eat it with: pastries, desserts, fruits, or charcuterie such as peasant terrines. It will be served alongside beautiful poultry or roasted black Gascon pork.

White Absinthe 60° - 70cl
Awen Nature Distillery
This certified organic white absinthe is the result of a special recipe that was the subject of many years of research by the founder of the Awen Nature distillery. Entirely organic and natural, it derives its flavor from a combination of seven distilled botanicals, a bouquet that expresses very refreshing notes, always with a dominant anise and complex notes of plants such as wormwood, coriander, hyssop, and lemongrass. This absinthe is created and distilled exactly as this liqueur was before the 1915 ban. To fully appreciate it, we recommend the traditional method: in a glass containing a measure of absinthe, place a sugar cube on an absinthe spoon and pour fresh water drop by drop over the sugar cube. Upon contact with water, white absinthe becomes slightly cloudy to reveal iridescent and brilliant reflections.

The Awen Nature distillery is a factory of magic potions: beverages with a strong Celtic content, organic liqueurs with a strong touch of poetry. This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially dedicated itself to absinthe, a liqueur that Julien helped to rehabilitate. It’s not “the liqueur that makes you crazy,” he says: “we were already crazy before.” He strives—successfully—to reproduce the taste of yesteryear, that of the absinthes that were once given to children on a piece of sugar as a dewormer. “You need a touch of madness to be a distiller today,” says Julien. In addition to absinthe, Julien distills a wide range of spirits and liqueurs: gins, vodkas, botanical rums, Swedish elixir, concoctions inspired by role-playing games... All made from plants, respecting the environment, without preservatives or artificial flavors. An ode to plants that the korrigans must sip in secret, at night, on the moors.
Tequila Calle 23 Blanco
Vintage Spirit Garage
This first masterpiece by Sophie Decobecq, a young French woman who has lived in Mexico for about fifteen years to make traditional tequila, is a limited production, bottled after double distillation in traditional stills.
Like mezcal, another Mexican spirit, tequila is a product made from the agave plant, a member of the asparagus family (did you know that?) with long, thick, succulent leaves lined with thorns. The plant is almost entirely edible: its flowers (which appear only once in the agave's life), its sap-rich leaves, its sweet flower stems, and its sap, called aguamiel because of its sweetness, are eaten. Sugar is also extracted from it. Since pre-Columbian times, the sap from the flower stem has been transformed into a sweet wine called pulque. Pulque, produced by fermenting aguamiel, is distilled from the heart of the plant, particularly from the blue agave (called agave tequilana), to make tequila. Mezcal, on the other hand, can be made from around fifteen varieties of agave.
Calle 23 begins with the careful selection of blue agave plants growing on the plateaus of the state of Jalisco, between Tepatitlan and Arandas. After harvesting, the leaves are cut to leave only the core, called a piña because of its resemblance to a large pineapple. The piñas are cooked in large stainless steel autoclaves for about fifteen hours, cooled, and pressed. The resulting aguamiel ferments naturally to become pulque, a step prior to a double distillation in a copper still, until the distillate reaches between 52 and 54 degrees of alcohol. Spring water is then added to bring it down to 40 degrees. Without undergoing any aging, Calle 23 Blanco is ready to bottle.
Crystalline and colorless, it is agave juice in its purest form. On the nose, it evokes agave fresh from the cooking process with its herbaceous notes. On the palate, it attacks with sweetness and mellowness, expressing the characteristic flavor of the plant, complemented on the finish by notes of white fruits (tart apple, pear), almond and fresh walnut. Soft and mellow, devoid of aggressiveness, more velvety than biting, it is a good initiation tequila for those who are still unfamiliar with this beverage. To be enjoyed alone and very cold, or in a cocktail (we no longer present the margarita, see our recipe below), it is incomparable.
How to make a margarita? SOS Culinaries! We will opt for the slush margarita, with crushed ice, because in the end everyone prefers that. You just need a good blender. We advise you to prepare it in large quantities to delight lots of friends. Here we go: for four people, 20 cl of Calle 23 Blanco tequila, 10 cl of Cointreau or Triple Sec, 20 cl of freshly squeezed lime juice, 80 cl of ice cubes, and lime slices for serving. Don't forget 3 tablespoons of fleur de sel for the rim of the glass; it's essential. Start by spreading the salt in a saucer. Rub the rim of the glasses with a lime slice, coat the rim of the glasses with salt, and set aside. In the blender, combine the tequila, Cointreau, lime juice, and ice. Pulsate everything mercilessly until you get a liquid snow of homogeneous texture. Pour into the glasses (without disturbing the salt), garnish with a lime slice, and serve immediately. You can also serve from a pitcher, but the glasses should be salted anyway.

Ergaster Distillery
This single malt with its beautiful amber color is the pride of the Ergaster team. It is first aged in new barrels, then completes its maturation in reused barrels (25% vin jaune, 75% cognac). The nose is subtly fruity (guava, almond, white grape), unfolding into leather, walnuts, and fresh tobacco in the glass. On the palate, the attack is powerful with floral, woody, and vanilla notes, evolving into dried fruits. The finish is long and more herbaceous: green barley, spring onions, and hazelnut. Perfect for those who enjoy whisky with pure accents.
Aquavit
Distillerie du Viaduc
Avec cet Aquavit distillé à Paris, la Distillerie du Viaduc rend hommage aux traditions scandinaves tout en affirmant une identité résolument artisanale et locale. La finale dévoile une agréable douceur d’orange, longue et rafraîchissante, avec un retour herbacé très élégant.
Cet aquavit nouvelle génération se déguste aussi bien sec ou sur glace, en digestif, qu’à l’apéritif, allongé d’un tonic sec ou d’une ginger beer. Il accompagne également parfaitement un poisson fumé, des mets salés nordiques ou une cuisine végétale aux notes caramélisées ou terreuses. À 42 %, il reste accessible, fin et bien équilibré, à l’image du travail précis de la Distillerie du Viaduc.

It has the distinction of being entirely self-sufficient in sugar cane production, which it uses to obtain its magnificent terroir agricultural rums. Agricultural rum, we should point out, is made from pure sugar cane juice, unlike many other Caribbean rums, which are produced from cane molasses. It is a specialty of the French Antilles. The estate is currently in the hands of François Longueteau, a distiller since 1979. Production is, as it was originally, artisanal and traditional, but the sugarcane terroirs are developed using plot-by-plot methods—this is Longueteau's unique feature, the first distillery on the island to adopt this approach. Two varieties of sugarcane, blue cane and red cane, are cultivated, as well as fruits from the Guadeloupe region. Longueteau rums and the resulting preparations (punches, shrubberies, etc.) are fine, aromatic, deep, and fragrant.
Rhum blanc 55° - 70cl
A unique taste, a true tasting white rum. The nose is powerful and extraordinarily fragrant. On the palate, it has great length with notes of white fruits. This white agricultural rum is made from a blend of blue and red cane juice. With little stirring, it retains the vegetal notes of its terroir of origin. A seven-month aging period in barrels gives it its finesse. Perfect for an exceptional ti-punch (lime, a hint of brown sugar, and an ice cube), it nevertheless deserves to be enjoyed on its own and without artifice.

Vervain by Vincent Spiritueux
The Granier liqueur house offers its first Vervain liqueur, the one that launched the house's beginnings. Entirely organic, artisanal, and sourced locally, it is Vincent's Vervain, Vincent Granier's, who lovingly created its recipe.
The Plant
Lemon verbena (Aloysia citriodora) is a favorite in cottage gardens. A member of the Verbenaceae family, it is cultivated for its fragrant leaves, with a slight hint of lemon peel. It is tonic, calming, fever-reducing, antispasmodic, and digestive. The one infused for this liqueur was grown organically and harvested by hand in the Alps.
Production
To the Vervain are added organic lemon zest (from Menton), organic coriander seeds and lemongrass grown biodynamically in Egypt (the closest and most eco-friendly place to find 100% natural lemongrass). The plants and spices are infused in the natural water of the Boubioz spring, near Lake Annecy, and the alcohol is made from 100% organic wheat. The organic sugar is produced in the Palatine Forest.
Tasting
This organic and artisanal Vervain is sweet and caressing, very fresh, and is not heavy in alcohol or sugar. Easy to drink, it can be enjoyed as an aperitif, in a shot, in mixology and as a digestif. We love pairing it with fine charcuterie, for example terrines or hams from the Ferme de Mayrinhac.

Génépi Spirits
Liqueurs Granier
Génépi is "the" Savoyard liqueur; it doesn't get more regional than this. It's entirely organic and artisanal, made by the Granier brothers in the Annecy region and sourced locally.
The Plant
The name "génépi" refers to a family of small alpine wormwoods of the genus Artemisia that are harvested between 2,500 and 3,500 meters above sea level. These highly aromatic and medicinal plants (fighting colds, viral illnesses and digestive disorders) are the main ingredient of the most emblematic liqueur of Haute-Savoie.
Production
Génépi is harvested in the Alps and dried before infusion in 96% organic wheat alcohol, before blending with an organic sugar syrup made by a landowner harvesting in the Palatine Forest. The water comes from the Boubioz spring, near Lake Annecy. No additives are added during production. The liqueur, aged in rum barrels, includes coriander seeds and lemon zest. Unlimited aging potential.
Tasting
Floral, aromatic and of great purity, this liqueur flies the flag of Alpine génépi high. The balsamic note of génépi initially manifests itself with great amplitude and persists in the mouth, supported by light spices (coriander and lemon). A success, to be associated with raw fish or smoked fish of all kinds and of course smoked salmon. The best pairing will be with a raclette.

Folle noire liqueur 2016,
This organic and natural folle noire liqueur from the Gaillac region (Tarn) bears the Eurofeuille and Nature & Progrès labels. It is made from grapes of the typical Gaillac variety called folle noire or Jurançon noir. This grape variety produces large, juicy bunches with a delicate flavor. An original recipe from the Cazottes distillery, without chemical pesticides, colorings, or additives.
Production
To obtain this folle noire liqueur, the grapes are harvested in mid-September and fermented naturally using indigenous yeasts. As soon as the juice reaches 2 to 3 degrees of alcohol, an organic brandy of the same grape variety, distilled on the estate by Laurent Cazottes, is added to stop the fermentation. This is called mutage sur grains (grain fortification). This method allows the best aromas to be preserved and the alcohol content to be moderated (18%).
Tasting
A lovely amber red color, a delicate taste of fresh grapes, round and fruity. The Folle Noire liqueur from the Cazottes estate is reminiscent of the best Cartagenes from Roussillon with its supple and melted tannins, its aromas of fresh grapes and candied plum. This organic and delicate spirit will be a perfect companion for cured meats of beef or pork, mature cheeses or blue-veined cheese, or red fruit desserts.

This Symphonie Batch 10 rum is a blend of very old agricultural rums aged over three years in cognac barrels and new oak barrels. It asserts itself, on the nose and palate, with boldness and complexity. It is a magnificent old rum with notes of caramel and spices, aged and matured to perfection. The symphony is made up of the different tones of the old vintages that compose this fine and intense rum. A meditation rum, made for Havana cigars and great dark chocolates.

Vertige est une création remarquable signée Distillerie Sentema, nichée dans les hauteurs des Alpes-Maritimes, entre ciel, garrigue et mer. Ce spiritueux, proche d’un gin dans l’esprit mais unique par sa base, est élaboré à partir d’une eau-de-vie de vin, et non d’un alcool neutre, ce qui lui confère une profondeur aromatique rare et une vraie personnalité.
Tout est ici pensé en cohérence avec le vivant : certifié en agriculture biologique, Vertige met à l’honneur des botanicals locaux soigneusement sélectionnés : baies de genièvre sauvage, écorces de citron de Menton IGP, verveine odorante, graines de coriandre, et racines d’angélique. Ces plantes sont macérées durant deux semaines avant distillation, pour extraire les huiles essentielles sans altérer l’équilibre des arômes.
Le nez est d’une pureté étonnante, mêlant les notes zestées du citron, la fraîcheur citronnée et végétale de la verveine, et la signature résineuse du genièvre. En bouche, l’attaque est soyeuse et vive, avec une structure douce mais précise, et une finale qui persiste sur les notes d’agrumes et d’herbes sèches, dans une belle tension.
Plus qu’un simple gin, Vertige est une expression raffinée du terroir provençal, entre élégance florale, amertume subtile, et fraîcheur végétale. Il se déguste aussi bien pur sur glace, qu’en cocktail haut de gamme, où il remplacera brillamment un London Dry avec une personnalité solaire et locale.

Distillerie du Viaduc
Avec cette Vodka artisanale, la Distillerie du Viaduc nous propose une relecture audacieuse et végétale du spiritueux le plus neutre en apparence. Élaborée à partir d’un alcool de blé soigneusement sélectionné, cette vodka biologique tire toute sa singularité d’une macération de graines de coriandre, dont une partie est torréfiée maison pour révéler une complexité aromatique rare.
Une fois les graines macérées, l’ensemble est distillé dans un alambic artisanal, puis mis au repos durant un mois pour que les arômes se fondent et que la texture s’arrondisse naturellement. Aucun additif, aucun sucre : la pureté du processus laisse toute la place à l'expression des plantes et à la qualité de l’alcool de base.
Le nez s’ouvre sur une note vive et acidulée de coriandre fraîche, puis évolue vers des arômes herbacés et d’agrumes légers, presque zestés. En bouche, l’attaque est fluide, fraîche, avec une belle rondeur, puis s’installe une trame épicée, chaude mais élégante, qui rappelle la coriandre torréfiée. La finale est longue, réconfortante, portée par une fraîcheur végétale qui équilibre l’ensemble.

Menthe
Distillerie du Viaduc
Avec cette bouteille de Menthe, la Distillerie du Viaduc propose une interprétation inédite et ultra fraîche de la menthe, loin des clichés sucrés des liqueurs classiques. Ici, pas de sirop, pas d’arôme, pas d’artifice : uniquement trois variétés de menthe françaises issues de l’agriculture biologique, menthe poivrée, menthe pamplemousse et menthe douce, longuement macérées, puis distillées à basse température dans un alambic artisanal.
Ce spiritueux affiche 30 % vol., mais reste d’une extrême délicatesse. Le travail de distillation révèle avec finesse toute la palette végétale et mentholée des plantes sans basculer dans l’agressivité ou la saturation. La robe est limpide, cristalline. Au nez, c’est un parfum pur de menthe fraîche, d’herbes coupées et de chlorophylle. En bouche, l’attaque est douce, la texture ronde, mais la fraîcheur est immédiate et intense, équilibrée par une note acidulée qui rappelle un zeste d’agrume vert. La finale est longue, persistante, d’une fraîcheur presque médicinale, mais élégante.
Sans sucre, cette bouteille de Menthe se positionne entre digestif, base de cocktail et ingrédient de cuisine créative.
