Raclette is a bit like Santa Claus: we all know he arrives every year, but we're always amazed when we find it on the table. And that's a good thing! Because there's nothing more comforting than a good melted cheese gratinating under the grill... But be careful, dear friends! Pairing a wine with raclette isn't as simple as you might think. Should you opt for a white or a red? A light or a full-bodied wine? It's always an eternal debate among sommeliers!
Raclette, with a capital R please, is the perfect winter dish, and you know why. It feeds its man, warms the room, and delights us. It's convivial and easy to prepare. A reminder of some sommelier rules:
🧀With cheese: (very) light white or red wine
🤤With melted cheese = heavy dish: something refreshing
📍 The regional pairing game: go for "mountain" wines
No need for AI to solve the equation! To accompany your raclette, we therefore recommend a white wine. Choose a fresh, lively, and vibrant white, ideally from the Alps (hello Jean-Yves Péron).
When it comes to grape varieties, Jacquère with its overflowing minerality or Altesse, which is a bit more indulgent, are safe bets. But other grape varieties such as Chardonnay or Mondeuse Blanche are also grown in the mountains and are perfect. You can, of course, respect these flavors and choose a wine from another region, as long as it's lively and fresh!
The same goes for charcuterie. Since the fat in meat doesn't like the bitterness of the tannins in reds, we once again recommend whites, the best companions throughout the meal.
No! For those who defend Rouge-sur-Raclette (which isn't a town on the banks of a river), stop the powerful and tannic reds, stop the oaky Bordeaux, and stop the 22-degree red wines! Lightness, freshness, and finesse must therefore be essential (you get the idea, yes, yes, and yes, red can go with cheese)!
⚪🔴 White or red wine? Both are possible, as long as they are light and fruity.
🏔 Mountain wines are great! Jacquère, Altesse, Mondeuse Blanche...
These grape varieties are used to pairing well with cheese. Chardonnay is also good, provided it's lively and mineral.
🍇 For reds, opt for light and fruity wines, like a Gamay
or a Pinot Noir.
