Coming straight from Japan, umami (pronounced "oumami") is synonymous with "delicious" and "savory." Imagine an intense, full-bodied flavor that explodes in your mouth and adds a new dimension to wines. That's umami!

It is mainly (if not entirely) the great white wines that offer this flavor, the umami then comes from certain fermentations and the aging of the wine on lees.

Natural white wines with long fermentations and aging on lees increase glutamate and amino acids, responsible for the fifth flavor. It's the same chemistry that occurs when you drink Japanese broth or reheat a stew, like Grandma's beef bourguignon.
