Camille Rouge 2022

With Camille 2022, Jean-Pierre Robinot crafts one of his most profound and elegant cuvées. This natural red wine, made from Pineau d'Aunis grown on flint soils, perfectly embodies the winemaker's touch: a free, inspired, unadorned approach that allows the terroir and grape variety to express themselves without filter. Here, there is no official label, but a rigorous approach: soil work without chemicals, winemaking without exogenous yeasts or enological additives, and a long, patient aging process.
Maceration, which can last from 1 to 8 months depending on the expression of each vintage and each plot, gives this cuvée remarkable aromatic intensity and an extraordinary texture. The 2-year aging in old barrels enhances the whole, bringing patina and depth without ever masking the fruit.

Produced by Fond Cyprès, it results from a very gentle pressing of Carignan and Grenache grapes, organically grown on clay-limestone soils in Languedoc, with a deliberately supple, fruity, and spontaneous style.

Amoroso Rouge has nothing in common with traditional, syrupy industrial vermouths. This audacious creation from Distillerie Sentema, nestled in the Alpes-Maritimes, shatters the codes of red vermouth by offering a dry, complex, and vegetal version, entirely rooted in the Provençal terroir.
The base is a succulent and juicy Syrah from Domaine de Garbelle, cultivated in the Var region. This wine is fortified with a local wine spirit, then infused for two weeks with a bouquet of wild plants from the Var garrigue: Barjols absinthe, savory, rosemary, oregano, agastache, as well as bitter orange zest harvested in the Alpes-Maritimes.
The result? A dry, taut vermouth, with no added sugar, driven by structuring bitters, an intense palate, and a savory finish that evokes green olives and sunshine. On the nose, a deep aromatic profile emerges: rosemary, dried herbs, citrus zest. The Cabernet comes from an alluvial terrace with large pebbles in the Tarn, and the Mourvèdre from clay-limestone soil. The harvest macerates for twenty days in whole bunches and is aged on lees in stoneware jars.

La Haute Ronze is one of two plots cultivated by Nicolas in the Régnié appellation; it is considered to be of very high quality, with deep clay soils that produce full-bodied wines.
